Pour in about 3/4 to 1 inch of your milk (depending on the shape of your glass). Having both the glass and the milk ice cold will help here. My favorite deli in New York used to keep their milk in a special fridge set to hover around the freezing point, thereby creating small crystals of ice that would be incorporated into the final mix.
