The sap is running out of the Red Maple. I tasted it, it's quite tasteless. Apparently, it takes 10 Gallons of Maple Sap to make 1 Quart of Maple Syrup.

A boy holds a snake around his neck which is a typical scenery in Tonle Sap Lake. Even some babies have small snakes around their body. Many of them approach visitors to take picture with the snake in exchange of money.

The Tonle Sap in Cambodia is the largest lake in Southeast Asia and one of the richest fishing inland waters of the earth.

It was really impressive.

El Sapic es un queso de leche cruda de cabra de pasta blanda y corteza florida, producido por los hermanos Julien y Benjamín Remond, en su “Fromagerie du Pic” situada en Penne, en las gargantas de Aveyron en el departamento de Tarn.

El Sapic se elabora en versión natural o ceniza con carbón vegetal y en forma de árbol de Navidad. El natural posee una corteza, blanca a marfil mientras que en la versión con ceniza su color es grisáceo, es delgada y plisada. Está cubierta con un ligero plumón blanco y está marcada con las estrías de las rejillas en las que los quesos se afinan.

Es un queso suave y untuoso con sabor caprino fresco y dulce, ligeramente salado y acidulado. Sus sabores se intensifican con el tiempo.

¡Debería decorar sus bandejas de quesos para Navidad!

El nombre del queso SAPIC es un acrónimo de "sapin" (árbol) y Pic (el nombre de la quesería).

Every time we go out to Wheelers Maple Sugar Camp, I am drawn to these old buckets that in the past were used to catch the sap tapped from the maple trees. I really should stop, but I can't seem to help myself.

 

The method is obsolete, and the sap is now collected and distributed via plastic tubing crisscrossing through the bush.

More than one bucket may be hung on a large tree.

It's cold enough though for the sap to "freeze" in mid drip on the tall pine by the front deck.
