On christmas times Affendaddys favourite meal. What an outstanding shirt I wear - oh my. I look like an american countrystar in that shirt!

Kassler or Kasseler in German cuisine is the name given to a salted (cured) and slightly smoked cut of pork. It can be either hot or cold smoked. Pork necks and loins are the most often used cuts although ribs, shoulders and bellies can also be used. It is often served with sauerkraut and mashed potatoes.

 

Something was different about these ones - they weren't the usual pale-pink color that I think comes from them being actually cooked (and hence ready to eat). They contained much less water than the ones I am used to - which is a major advantage when storing them in the freezer.

 

Pan-frying is not the traditional way of finishing them - they usually are just heated (steamed) in the Sauerkraut.

Everyone enjoyed the food native to ASSIST student Kilian Mittermeier ’21 and tried dishes such as schnitzel, kassler rippchen, knackwurst, and potato pancakes.

The German combo plate tends to vary a little bit from place to place. Here at Manor Oktoberfest, it's one big bratwurst, plus one Kassler Rippchen, which is a smoked pork chop. Served with potato and sauerkraut, naturlich.
