"Leather britches" is an Appalachian name given to dried green beans. A farm wife would string the beans and hang them to dry. As they dried they became leathery and tended to hang on the string in a fashion that resembled a pair of pants...so...leather britches. This was an effective way of preserving beans. You could rehydrate them and eat them in the winter.

Back from a short visit home to rehydrate (I live less than a mile away) I found that I'd timed things just right, the BNSF had cleared the local work zone and a ton of traffic was headed my way. This pair of commuters were first up, an inbound all stops on M3 and a westbound express barreling by on M1. Too bad the inbound train stopped under the trees, but you can't have everything!

I found this poor fellow about 3 a.m., in the WalMart parking lot (after my shift driving taxi!), listless under one of the big parking lot lights. He's kinda creepy looking, but I feared his survival depended on my rescue, so I scooped him up and put him in a container and brought him home with me. OK, I admit I also had an ulterior motive -- photo ops!!!

 

I let him rest overnight in some grass and leaves added to his temporary home, and photographed him a few hours ago. He was looking rather dehydrated, so I've since added water to his container and he submerged himself and remains there, rehydrating and hiding! I'll let him go later.

 

[UPDATE, next day: I left the container outside overnight, on the deck railing, and looked in the morning to find he'd gone on his way... flying away into the night by moonlight, is what I like to imagine.]

Jap Chae (Korean Glass Noodles)

recipe from Steamy Kitchen

 

Serves 4-6 as part of multicourse meal

 

1/2 pound dried Korean sweet potato noodles

2 1/2 teaspoons sesame oil, divided

1 tablespoon cooking oil

3/4 cup thinly sliced onions

2 carrots, cut into matchsticks

2 cloves garlic, finely minced

3 stalks green onions, cut into 1″ lengths

1/2 cup mushrooms, thinly sliced (shitake, wood ear)

1/2 lb spinach, washed well and drained

2 tablespoons soy sauce

2 teaspoons sugar

1 tablespoon sesame seeds

 

Fill a large pot with water and boil. When water is boiling, add the noodles and cook for 5 minutes. Immediately drain and rinse with cold water. Drain again and toss with only 1 tsp of the sesame oil. Use kitchen shears to cut noodles into shorter pieces, about 8 inches in length. Set aside.

 

In bowl, mix soy sauce & sugar together. Add the cooking oil in a wok or large saute pan on high heat and swirl to coat. When the cooking oil is hot but not smoking, fry onions and carrots, until just softened, about 1 minute. Add the garlic, green onions and mushrooms, fry 30 seconds. Then add the spinach, soy sauce, sugar and the noodles. Fry 2-3 minutes until the noodles are cooked through. Turn off heat, toss with sesame seeds and the remaining 1 1/2 tsp of sesame oil.

Apple Cider Seaweed, Horseradish, Fresh & Preserved Apple

 

To this date, probably one of the best plates from the kitchen. The flavours present were both refreshing and complimentary. Essentially scallop ceviche on an apple and celeriac remoulade with apple cider rehydrated seaweed and apple cider foam. An overall stunning combination of elements and an excellent palate whetter.

 

What I learnt from this plate was the fact that November (early winter) is the best time to have scallops. Reason? The temperature drops in the ocean and the scallops absorb and store as much nutrients as they can to get them through the winter. The result? Plump, sweet bivalves, proven here in silky and supple specimens that burst with sea fresh brininess. So very good and best highlighted as a ceviche.

 

Another lesson: 80% of Canadian seaweed goes to Japan. Also, seaweed and apples have similar flavour profiles - that harmony was celebrated here in the apple cider rehydrated seaweed. And the fact that scallops go well with apples.

It wasn't our initial plan to summit this stunning mountain. In fact, we only learned of it the day before we ventured out to it after finding out that the area around our first choice had been closed. What a lucky break for us! It was quite the adventure, with 12 km's of rough Forestry Service Road driven on our poor little vehicle, then 16.7 km's return distance walking and 1472 m's of total elevation gain. It was a very hot day, and it took 10 hours to complete, due to some steep scrambling, the time used to cross many snow patches, some precariously positioned, and the many stops to rehydrate.

Use and purpose of alkaline water:

 

Alkaline water, also known as “gan sui” in Cantonese and “air abu” in Malay, is a clear solution of the salts sodium carbonate and potassium carbonate, and sometimes sodium phosphate.

 

Because it is often called “lye” water, it is frequently confused with lye or caustic soda, which is sodium hydroxide, a much harsher chemical that has limited culinary applications in the West.

 

In the Asian kitchen, alkaline water has few and specific uses. The characteristic springiness of Hong Kong style “mee” noodle is due to “gan sui”, which is added to noodle dough to firm up its texture, and give it a yellow tint.

 

It does the same for glutinous rice in “kee chang” (yellow alkaline glutinous rice dumplings) and in their Malay cousin, “kuih lopes”.

 

Steamed rice-flour dough, for example, in Nyonya “kuih kosui” and “ang koo kuih” skin, can also be given a firmer consistency by carefully measured amounts of alkaline water.

 

Dried cuttlefish or squid are sometimes briefly soaked in “gan sui” for the opposite effect - it makes them more tender when rehydrated.

As Asians do not fancy the slightly sour, acidic flavour of slowly fermented bread dough so beloved in the West, dim sum chefs add alkaline water to buns “pau” dough to neutralise any yeasty, sour overtones.

 

Alkaline water is sometimes used as a rising agent in the same way that baking soda is. For instance, it is stirred into “ma lai kou” batter, where it reacts with acids in the brown sugar to produce bubbles that yield a light, fluffy steamed cake.

Resurrection Fern - Pleopeltis polypodioides

Pleopeltis polypodioides (resurrection fern; syn. Polypodium polypodioides) is a species of creeping, coarse-textured fern native to the Americas and Africa.

 

This fern is an epiphyte, or air plant, which means it attaches itself to other plants and gets its nutrients from the air and from water and nutrients that collect on the outer surface of bark. The resurrection fern lives on the branches of large trees such as cypresses and can often be seen carpeting the shady areas on limbs of large oak trees. However, it is known to grow on the surfaces of rocks and dead logs as well. It is often found in the company of other epiphytic plants such as Spanish moss.

 

The P. polypodioides resides in the hardwood forests of southeastern United States in areas including Delaware, Illinois, Texas, and Florida. This fern can also be found in areas such as subtropical America and parts of southern Africa.

 

The resurrection fern gets its name because it can survive long periods of drought by curling up its fronds and appearing desiccated, grey-brown and dead. However, when just a little water is present, the fern will uncurl and reopen, appearing to "resurrect" and restoring itself to a vivid green color within about 24 hours.

 

When the fronds "dry", they curl with their bottom sides upwards. In this way, they can rehydrate the quickest when rain comes, as most of the water is absorbed on the underside of the leaf blades.

 

At least one study has shown association between P. polypodioides and moss,indicating that this fern may rely on moss for some of its water needs.

 

The Resurrection fern has spores on the bottom of the leaves, as all ferns do. At certain parts of the year, when the fern is dry, the spores fall from the plant and grow into new plants.

 

.The resurrection fern is also known by the common names of little gray polypod, scaly polypody and miracle fern.

 

This plant has been taken on a space shuttle mission to watch its resurrection in zero gravity.

Nuntala (2200m) - Jubing (1680m) - Chyokha (1826m) - Kharikhola (2069m) - Bupsa (2350m)

 

Another hot and sticky day of valley-side trekking and donkey train dodging.

 

Dropping down from Nuntala we crossed the Dudh Kosi at Chhirdi, the started up, up, up - to banana-growing metropolis Juving / Jubing for rehydrating tea, then Chyokha for cat snaps, and on Kharikhola where we popped into the Pema Namding Monastery on the western edge of the straggly village, to be treated to cool orange squash from the cheeky, cheerful young monks.

 

Lunch in Kharikhola at the Namaste Lodge - next door to the Solukhumbu Lodge where Hazel and I had stayed in 2011 - with its cheerful sunshade umbrellas and with a great view down the main street - perfect for people watching - and with Jack already in situ.

 

Veg noodle soup, with home made chilli sauce, followed by salty chips, with more chilli sauce was fast becoming our regular lunch of choice.

 

After an hour or so’s rest, it was off again - through Kharikhola Bazaar and then the final slog up to Bupsa.

 

We arrived, hot and sweaty, at the Hotel Yellow Top around 2.30pm, and had a chilled afternoon taking the opportunity to wash hair, self and clothes. Tents pitched in the garden below. Lubko and Mykola materialised, kisses all round. Tea and Ukrainian chocolate in the dining room; sunset photos of and at Bupsa’s small gompa - where our porters were hanging out, updating Facebook.

 

Dinner (veg noodles, local finger bananas) was preceded by dice (10,000) and a group photo - with Steffi and Chhiring demonstrating excellent “side planking” pilates skills. Struggled to stay awake until 8pm.

 

To bed under a big, red, moon. An evening of music, dogs barking, nocturnal loo trips checking for killer caterpillars, and busy busy dreams - having a lot on this trip.

Three pieces of my korean beef jerkey, a couple palmfulls of frozen veggies, a tbs of onion flakes, a shake of garlic powder, and half a tsp of better than bullion beef in a couple cups of water. bring to a boil and let the jerkey rehydrate and soften for a couple minutes. Add two bricks of rice ramen noodles and simmer for around 3 minutes. Dump in a bowl and taste/season with Japanese barbecue sauce. The frozen veggies will be perfect. the beef slivers tasty and tender, and the noodles will be cooked through.

Another way is to use cheater instant ramen as the base. Not bad, but my technique lets you set the salt and flavor better than that little packet of dehydrated spices and beef flavored chemicals. Nice thing about this is I only chopped the jerkey in slivers, everything else was already prepped. All I had to do was boil water, and total time from concept to eating was about 9 minutes

One (1) cup of wood ear mushrooms. These are dried ones that have been rehydrated.

On Tuesday August 24th San Jose Fire Department responded to an outside fire on Moorpark Rd. The fire had started in the rear yard of a house burning a power pole, transformer and some trees, and then spread to the eaves and into the attic. With several homes in the area shingled with wood shakes, firefighters not only had the fire to contend with, but also initiated embers patrols throughout the neighborhood. Due to the conditions, a second alarm was called for relief fire crews and a special call was made for Fire Associates assistance. Firefighters were primarily in need of rest and rehydration.

 

With several other fire and hazmat incidents in progress throughout San Jose at the time SJFD called on Santa Clara County Fire Department to provide apparatus for the second alarm, while the first alarm consisted of San Jose Units, together with a second B/C from Santa Clara City.

 

Firefighting is hot, physical work. It is critically important that firefighters have a place to rest and cool down, as well as plenty of cold water and gatorade to rehydrate themselves. An important part of the rehab process involves medics being on hand to check the vital signs of all the fire fighters - their blood pressure, core temperature, CO2 levels and pulse rates must fall within defined gudielines before they can be released to return to the fire fight or leave the scene.

This said it was a single serve, but despite it being genuinely quite tasty, I barely managed half of it before having to give up.

Thankfully, one of the others was super hungry and finished my meal off for me.

Rehydrated after two days of rain. Now soft and rubbery again but now with thin edges. Fasciatus is an Australian species that is very similar to this one. The slightly hairy trumpets are a deep purple shade when young and they dry out to become hard and tough. They rehydrate in rain and last for several weeks, unlike the more common white to orange Lentinus species found locally.

There really is a man in there!! I just love this! The first full day of the Inca Trail,and somewhat sleep deprived after the campsite firecrackers and celebrations of the previous evening.

 

Wayllabamba is a tiny little community high up in the Andes, but already they are cottoning on to what earnest trekkers might want. Not withstanding the shopping, there were little wooden seats set out under the dappled shade of the trees to rest our weary legs and take a moment to enjoy some breathtaking views and rehydrate!

San Jose Fire Department crews battled a fire in the creek behind Kelley Park in San Jose in July, 2012. The night time fire was escalated to a Tier 3 Fire, the wildland equivalent of a 3 alarm fire.

 

There were multiple fires burning in different areas of the creek causing problems for fire fighters. The blaze was under control about 3 hours after it started.

 

Fire Associates of Santa Clara Valley were on scene to establish a Rehab sector where hard working firefighters get a chance to rehydrate and take a break.

The protocol was as follows. Specimens fixed in FAA (formaldehyde, acetic acid, ethanol) 48 hr. Dehydrated in 35, 50, 75, 85, 95, 99 % IPA in water, 6 hours each min. Infiltrated in xylene saturated with Paraplast for 2 days, followed by 2 changes of melted Praplast for 2 hours each. Embedded in Paraplast. Sectioned on a Spencer 820 microtome at 11 micron. Cleared in Xylene 2X, 10 min each. Rehydrated 99 (10 min), 95, 85, 70 % IPA, 2 min. each. Stained Gill's Hematoxylin 10 sec. Washed 3 min running water. Blued 0.05 % lithium carbonate 3 s. Water rinse 1 min. Stained 1 % aq. Erythrosin-B 2 min. Dehydrated 99 % IPA 2 min. Cleared 2X xyene 5 min each. Mounted with DEPEX.

So an update with the vinyl/rubber stuff on nylon hair, it HAS made a huge difference in texture to the nylon. Before, even after multiple hair conditionings, the nylon felt sort of dry and brittle but after coating it in the car interior liquid, the hair feels much more elastic and glossy.

 

As with the flat ironing, it did managed to straighten a few more millimetres of hair but the last 5mm seems to be impossible to really hydrate or straighten.

 

So, if you got a lot of dolls with nylon hair like the Disney Store dolls or MGAE dolls, I definitely recommend using car interior spray meant to help aging vinyl and plastic to rehydrate dried out nylon hair.

Roasted peach cupcake with finely diced habanero and chopped, dried and rehydrated peaches folded into the batter. Filled with a Peach-Habanero curd. Topped with a 'cooling' Honey-Peach Cream cheese frosting, candied habanero rings/bows, and the syrup from candying the Habanero rings cooked to the hard crack stage and drizzled to make different shapes of 'hard candy' to add another 'hot' but tasty element, like a tongue tingling lollipop.

Crews were called to a 3 alarm blaze in south east Edmonton. This is the fire fighter rehab area where the crews take a break, rehydrate and have their vitals checked by the medics before returning for another round at the fire.

On looking camera ready year round

 

When I think about my feelings in relation to my day-to-day appearance and having to be photo shoot ready at a moment’s notice, I don’t feel anxious or stressed as you might expect. Clean eating and being active is a lifestyle for me. When I receive a request to participate in a photo shoot, my immediate response is excitement and happiness. I love being in front of the camera, working with photographers, and the opportunity to discuss some of the topics closest to my heart such as fitness and nutrition.

 

On morning rituals

 

Step 1. Hydrate I love to start my mornings with a tall glass of water and occasionally a fresh coconut. This helps rehydrate the body after eight hours without liquid, flush the body of toxins, and boost your metabolism. Dehydrated skin can appear dull, dry and is more prone to breakouts.

 

Step 2. Cleanse I cleanse my skin every morning, rinse my face with lukewarm water and then gently pat my face dry with a facecloth. This always makes me feel refreshed and helps remove any excess oils, make up residue, dead skin cells and toxins the body has eliminated overnight.

 

Step 3. Hydration serum To help hydrate, nourish and brighten my skin.

 

Step 4. Moisturize and protect I use a sun cream with a SPF 50, which moisturises and gives my skin a gentle glow. On evening rituals

 

Step 1. Cleanse I cleanse my skin, rinse my face with lukewarm water and then gently pat my face dry with a facecloth. To remove any make up and clean skin.

 

Step 2. Night cream To help hydrate and nourish

 

Step 3. Eye cream This is important as the skin around the eyes is delicate and often ages faster than other areas of the face.

 

On daytime make-up

 

As I live an active lifestyle and am always on the go, my day-to-day look is very natural. I like to keep it simple only emphasising my eyes with some bold black mascara.

 

On favourite trends

 

Balayage hair. It is a low maintenance hair option that highlights the ends of your hair and creates a natural-looking gradient from dark to light.

 

On beauty mistakes

 

Instead of applying one coat of mascara, I would apply multiple layers without letting it dry in between each coat. As a result I ended up with clumpy spider-leg mascara. I also regret getting too excited with my bronzer. I would cover my entire face with bronzer, which made my face look darker than the rest of my body, instead of giving me a beautiful sun-kissed look. Oops!

 

On beauty epiphanies

 

Use a concealer one or two shades lighter than your skin tone under your eyes. This will draw attention to your eyes and help cover any dark bags. For bronzer, apply to parts of the face that would naturally get sun to make the bronzer look more natural. Apply bronzer on cheekbones, jawline, and upper forehead as if you were drawing the number three on each side of your face. Apply blush before your concealer to make it look as if the colour is naturally coming from beneath the skin.

After a long parade, this little girl rehydrates.

This is one of the 6 carpels making up the Gynoecium of Asarum canadense, or wild ginger. In the centre are cross sections of the ovule tissue.

 

The protocol was as follows. Specimens fixed in FAA (formaldehyde, acetic acid, ethanol) 48 hr. Dehydrated in 35, 50, 75, 85, 95, 99 % IPA in water, 6 hours each min. Infiltrated in xylene saturated with Paraplast for 2 days, followed by 2 changes of melted Praplast for 2 hours each. Embedded in Paraplast. Sectioned on a Spencer 820 microtome at 11 micron. Cleared in Xylene 2X, 10 min each. Rehydrated 99 (10 min), 95, 85, 70 % IPA, 2 min. each. Stained Gill's Hematoxylin 20 sec. Washed 3 min running water. Blued 0.05 % lithium carbonate 30 s. Water rinse 1 min. Stained 1 % aq. Eosin-Y 1 min. Dehydrated 99 % IPA 2 min. Cleared 2X xyene 5 min each. Mounted with DEPEX.

The saddle between the Middle (on the left) and the Grand Teton at 12:23 AM. I was in my bivvy sack by 9pm, but couldn't sleep. I lay there and tossed and turned. I was feeling the elevation heavy. At times I felt I couldn't catch my breath. Others as I breathed through my mouth my tongue would go dry and I felt like I needed a gallon of water to rehydrate my mouth. Finally I gave up sleeping and started reading my book. Around midnight the moon came up and I took this 20 second exposure by holding the camera on top of my pack as the clouds started blowing in. I finally fell asleep at 1:15. Around 2am the rain started to fall. After consultation on the weather with Seth at 3:30 we opted to check back in around 5am. Around 4:30 the rain fell in earnest and we both just huddled in our sacks and waited for things to stop and dry out. See the set for more details

Cameras are deemed a security risk at Villawood (as are mobile phones, SIM cards and political literature), so I was not allowed to bring a camera inside when visiting people in detention.

Villawood Immigration Detention Centre (IDC) is an Australian immigration detention facility located in the suburb of Villawood in Sydney, Australia. The purpose of the facility, according to The Department of Immigration and Multicultural Affairs, is to "mainly accommodate over-stayers, people in breach of their visa conditions, or people refused entry at Australia's international airports”. It has been the focus of much controversy, with accusations of human rights abuses.

 

Villawood IDC was opened in 1976.

In 2001 it was the subject of controversy when 40 asylum seekers escaped. A month later, a Four Corners documentary, The Inside Story, revealed the plight of 6 year old Iranian refugee Shayan Bedraie, who had been refusing to speak or eat. Shayan and his family had been detailed at Woomera IRPC for 11 months and Villawood IDC for at least 6 months, and had witnessed a number of riots and self-harm incidents. He was periodically taken to hospital to be drip-fed and rehydrated, and then returned to detention.

 

As at 20 October 2004, the centre accommodated 551 people. This number comprised 405 adult men, 105 adult women and 41 children.

Controversy

 

The facilities have been a source of much controversy during their time of operation. There have been a number of riots and escapes, as well as accusations of human rights abuses from groups as diverse as refugee advocates, Amnesty International, the Australian Human Rights and Equal Opportunity Commission, Human Rights Watch, and the United Nations.

In March 2002, the Secretary General of Amnesty International, Irene Khan, said:

 

It is obvious that the prolonged periods of detention, characterised by frustration and insecurity, are doing further damage to individuals who have fled grave human rights abuses. The detention policy has failed as a deterrent and succeeded only as punishment. How much longer will children and their families be punished for seeking safety from persecution?

 

Throughout the controversy, Prime Minister John Howard and successive immigration ministers maintained that their actions were justified in the interests of protecting Australia's borders and ensuring that immigration law was enforced. A 2004 Liberal Party election policy document stated:

The Coalition Government's tough stance on people smuggling stems from the core belief that Australia has the right to decide who comes to this country and the circumstances in which they come. Deterrence has been achieved through excision, boat returns, offshore processing and mandatory detention.
