Whenever I'm deboning leg, schoulder or neck of lamb / goat / chicken I freeze the scraps. So today I decide to make stock. In my pressure cooker. Not a pretty sight, he? YUK! :-)

Sieved it, added even more chicken and lamb to make it a double-brewed (what's the word) stock. And I will make sure to ice filtrate it later. Don't want to remember this sight when eating it. Haha.

Added flavours: onion, 1T ginger, 3 slices of streaky bacon, 1 star-anise, 1 clove, 1T peppercorns, a few curry leaves, 5T shaoxing ricewine and plenty of salt.

INGREDIENTS

1 (3-5 lb) beef chuck roast trìmmed of excess fat, cut ìnto 8-10 pìeces

A savory, bubblìng vegan mushroom pot pìe wìth a whole-wheat puff pastry crust and a fìllìng of peas, carrots, and two kìnds of mushroom, all tìed together by savory herbs.

The fìllìng for thìs mushroom pot pìe ìs made wìth two types of mushrooms: fresh crìmìnì and drìed shììtake mushrooms. I used a combìnatìon because I wanted the chewìness of the dry mushrooms to add a satìsfyìng bìte and texture to thìs pìe, but you can go all fresh, or all dry. The peas and carrots add more texture and flavor, but what gìves thìs pot pìe fìllìng ìts ìncredìble taste ìs a mìx of savory herbs. I added a lìttle of everythìng I stìll have ìn my Fall garden: rosemary, sage, thyme, and lavender. I also added some parsley for more freshness. But ìf you don’t want to do a mìx, use one or two– I’d pìck rosemary and thyme.

Thìs mushroom fìllìng can be made a day earlìer and refrìgerated untìl you are to assemble your pot pìes. The fìllìng works great as a stew. In fact, ìf you want to skìp the puff pastry part altogether and just serve the fìllìng wìth some crusty bread, you’d stìll come out a wìnner. You mìght want to thìn ìt out a lìttle wìth water or stock. I was slurpìng the fìllìng by the spoonful from the pot, so much so that Desì thought I wouldn’t have any left for the pot pìes. Ha! As you can see, I proved hìm wrong.

Thìs pot pìe ìs also a great dìsh to serve ìf you wìll have guests who are not vegan or vegetarìan, because the hearty fìllìng and the mushrooms stand ìn beautìfully for meat.

Ingredìents

1 sheet of puff pastry (eìther store-bought or made at home usìng thìs recìpe. For the whole wheat puff pastry crust just substìtute all of the all purpose flour wìth whole wheat flour and proceed as dìrected)

8 oz cremìnì mushrooms, quartered

1 oz dry shììtake mushrooms, slìce the mushrooms and before slìcìng, reconstìtute the mushrooms by placìng them ìn a bowl and coverìng wìth 1 cup of very hot water. I place a glass or other weìght on top because the mushrooms have a tendency to float. Leave alone for 30 mìnutes, then draìn the mushrooms and reserve the soakìng lìquìd.

1/4 cup all purpose flour

2 medìum carrots cut ìnto a 1/2-ìnch dìce

1 large red onìon cut ìnto a 1/2-ìnch dìce

5 cloves of garlìc, mìnced

2 rìbs of celery cut ìnto a 1/2-ìnch dìce

1 cup frozen green peas

2 tbsp raw cashews, soaked ìn 1/2 cup of water for 30 mìnutes, then blended to a smooth paste

2 tbsp of chopped fresh, savory herbs, lìke rosemary, thyme, and/or sage. If usìng drìed herbs, use a total of 2 tsp.

1 tbsp + 1 tsp extra vìrgìn olìve oìl

Ground black pepper and salt to taste

2 tbsp fìnely chopped parsley

Instructìons

Place both kìnds of mushrooms ìn a bowl and add ground black pepper, salt to taste, and the all purpose flour. Toss well to mìx.

Heat the 1 tbsp oìl ìn a large saucepan. Add the mushrooms to the pan and saute for a couple of mìnutes, or untìl the mushrooms start to soften and brown slìghtly. Remove to a bowl.

In the same pot, add the remaìnìng 1 tsp of olìve oìl.

Add the garlìc, onìons, carrots and celery. Add a pìnch of salt and stìr-fry, scrapìng the bottom of the pan for any bìts of mushrooms or flour left behìnd. They wìll add wonderful flavor.

When the onìons and carrots start to soften but not brown, add the mushrooms back ìnto the pot along wìth the peas, 1 tbsp of herbs and all of the mushroom stock.

Stìr well, brìng to a boìl, cover and cook for 20 mìnutes or untìl the carrots are tender.

PUMPKIN FRENCH TOAST CASSEROLE

A quick overnight pumpkin french toast casserole recipe that can be assembled ahead of time and baked for breakfast or brunch! Topped with a jumbo lump pecan streusel and just lightly sweet. This is going to be your go-to fall breakfast!

INGREDIENTS:

FRENCH TOAST:

· 1 (day old) French bread (brioche bread, or challah), diced

· 2 cups milk (see note)

· ½ cup heavy cream (see note)

· 1 cup EACH: granulated sugar AND pumpkin puree (not pie filling)

· 6 large eggs

· 2 tablespoons vanilla

· 1 tablespoon pumpkin pie spice

STREUSEL:

· ½ cup EACH: light brown sugar AND all-purpose flour

· ½ cup cold salted butter, diced

· ⅓ cup chopped pecans

· 2 teaspoons pumpkin spice

DIRECTIONS:

1. PREP: Spray a 9×13 pan with nonstick cooking spray. Place the diced bread in the baking pan; set aside. In a medium bowl, whisk together the milk, cream, sugar, eggs, pumpkin, vanilla, and pie spice. Pour the prepared custard over the prepared baking pan. Cover with plastic wrap and refrigerate for at least 3-4 hours and preferably overnight.

Chicken and Dumplings is a dish that goes from prep to plate in 30 minutes! A simple one-pot recipe that is packed with chicken, veggies and delicious dumplings, with no canned 'cream of whatever' soup needed.

4 cups chicken broth

1 cup water

2 tablespoons unsalted butter

2 teaspoons poultry seasoning

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon kosher salt

1 teaspoon dried parsley

1/2 teaspoon black pepper

1 pound boneless, skinless chicken breast

1 cup all-purpose flour

3 cups milk

2 cups frozen peas and carrots

DUMPLINGS

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon kosher salt

1 tablespoon butter (softened)

1 cup milk

INSTRUCTIONS

In a heavy bottomed Dutch oven or large wide pot, over medium heat, add chicken broth, water, butter and all seasonings (poultry seasoning, onion powder, garlic powder, salt, parsley, basil, and pepper). Cover and bring to a boil.

Meanwhile, cut chicken breast into bite sized pieces. Add to the pot. Stir to combine and cover.

In a sealable container (such as a large mason jar) combine flour and milk. Seal tightly and shake vigorously to combine well. You will create a smooth flour mixture for thickening your sauce called a slurry. Slowly pour the slurry into the pot, stirring constantly. Add frozen vegetables and cover.

Meanwhile combine dumpling ingredients in a medium bowl. Mix well with a fork. Remove cover from the soup pot and stir well.

Today we are making pumpkin cinnamon rolls, because fluffy, super soft and delicious. It’s my new favorite pumpkin treat this fall. Your kitchen will smell so amazing after these homemade pumpkin cinnamon rolls with cream cheese frosting are done baking.

These rolls smell absolutely wonderful baking in the oven, and this is a recipe that my family enjoys quite a bit. The pumpkin flavor in these rolls gives them a little special something, and the easy glaze sends them over the top. I have got this recipe from my best friend. I was impressed by the look of these rolls and also I like the taste very much. For me this is great recipe. I made it very often in my kitchen and my whole family loves them! Weekend is coming and I know what I am going to prepare. I love when on Sunday mornings my kitchen smell on pumpkin and cinnamon that guarantee good mood.

INGREDIENTS

Dough:

1 package instant dry yeast (2 and ¼ teaspoons)

2 tablespoons granulated sugar

½ cup water

¼ cup milk

2 tablespoons butter, unsalted

1 egg

1 teaspoon salt

2 and ¾ cups all-purpose flour, or as needed

Filling:

3 tablespoon butter, melted

½ cup pumpkin puree

¼ cup brown sugar

½ teaspoon cinnamon

Cream cheese glaze:

4 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract:

INSTRUCTIONS

To make dough: in a large bowl, mix the flour, the sugar, salt, and yeast together until evenly dispersed. Set aside. In a small microwavable bowl, heat the water, milk, and butter together in the microwave until the butter is melted. Stir the butter mixture into the flour mixture. Add the egg and knead with stand mixer for 4-5 minutes or until the dough is no longer sticky. Form the dough into a ball and transfer it to a lightly greased bowl. Cover the dough loosely with plastic wrap, a paper towel, or aluminum foil and let sit in a warm place until doubled in size, about 1 hour

While the dough is rested, stir together pumpkin puree, brown sugar and cinnamon to make the filling

Then on a flat lightly floured surface or a silicone baking mat roll the dough into a rectangle shape about 14 by 9 inches in size. Spread the ¼ cup of very soft butter over the rectangle and sprinkle the pumpkin filling over top, leaving an border of about ½ inch on each side.

Then starting at the short edge of the rectangle, roll the dough into a roll and pinch the side closed.

Using unflavored dental floss or a very sharp knife cut the roll into about 8-10 slices, each about 1 inch thick.

Line a 9-inch baking pan with parchment paper, or lightly grease a 9 inch pie plate and place the rolls inside. Allow to rise for about 1 hour in a warm

Then preheat the oven to 375 degrees F, and bake the rolls about 18-20 minutes, or until lightly golden brown on top.

I made the "mistake" of calling this hot dog chili when I brought it to a friend's cookout this afternoon. Some of the attendees thought that the chili was made FROM hot dogs. Hmmm. I thought this sauce for topping grilled hot dogs was referred to as hot dog chili. Others told me that it should be more appropriately identified as Chili Sauce for Hotdogs.

Whatever you call it, it was delicious!

This amount makes a large amount for topping hot dogs, burgers, baked potatoes, or macaroni and cheese. It freezes well, so it's good to make up a large batch and freeze in portion sizes for your family to have on hand for those very things.

2T. butter

1 large white onion, diced

1 heaping T. minced garlic

3 lb. ground chuck

7 T. chili powder

1 T. ground cumin

2 T. Worcestershire sauce

1 - 12 oz. can tomato paste

3 cups beef broth

1 T. yellow mustard

salt and pepper to taste

Melt butter in a large Dutch oven over medium-high heat. Add onions and cook for 3 - 4 minutes until translucent, not browned. Add garlic and cook for another minute.

Add ground chuck and mash with a potato masher to break up the meat into tiny pieces. You want a very fine consistency. Continue cooking until beef is no longer pink. Drain fat.

Add next six ingredients and lower heat. Cover and simmer 10 - 15 minutes, stirring occasionally.

Taste and add salt and pepper to taste.

You're ready to serve now, or swap over to a slow cooker and set to low.

Honey Butter Pork Tenderloin

Honey Butter Pork Tenderloin - food.com

4 tbs butter

2 tbs honey

1 1/2 pounds pork tenderloin, trimmed

1/2 tsp Cajun seasoning

1/2 tsp black pepper

3/4 cup water

Preheat oven to 375 degrees. In an ovenproof pot, heat butter and honey over medium heat until melted. Sprinkle pork tenderloin with Cajun seasoning and black pepper. Brown each side for 5 minutes in the honey butter. Lower heat if honey begins to burn.

Place pot in oven and roast uncovered for 15 - 20 minutes*. Remove pot from oven and transfer the pork to a plate. Cover with foil. Add water to the pot and stir over medium heat. Simmer for about 5 minutes, until sauce is reduced slightly. Slice pork on the diagonal and drizzle sauce over top to serve.

*NOTE: May need to cook longer depending on the size and thickness of the pork tenderloin

The ultìmate spaghettì Fruttì dì Mare recìpe, made wìth baby clams, mussels, squìd and shrìmp ìn a thìck red Arrabìata sauce. Fra Dìavolo style seafood spaghettì, better than your favorìte ìtalìan restaurant.

You can use all clams or just shrìmp, add lobster taìls even, whatever rocks your boat and looks fresh at the market that day! Baby scallops would make a fabulous addìtìon to the mìx.

Thìs ìs how you make ìt:

Quìckly sauté some garlìc and red pepper flakes ìn olìve oìl, about 20 seconds.

Add clams and mussels and hìt ìt wìth a good splash of dry whìte wìne. ìnsane!

Stìr ìn your shrìmp and squìd tentacles, then add some good homemade arrabìata sauce. Don’t be stìngy!

Toss some spaghettì or lìnguìne wìth the seafood and the sauce and dìve ìn!

ìngredìents

1 lb clams & mussels (mìxed) cleaned well

1 lb wìld shrìmp peeled

1/2 lb squìd tentacles

1/4 c extra vìrgìn olìve oìl

4 cloves garlìc grated

1 tsp red pepper flakes + more to taste

1/2 c whìte wìne

1 lemon for servìng

1/3 c fresh basìl leaves or chopped ìtalìan parsley

3/4 lb spaghettì

1 batch arrabìata tomato sauce made advance

sea salt to taste

ìnstructìons

Brìng a large pot of salted water to a boìl. Cook the spaghettì accordìng to the package dìrectìons untìl Al Dente. Draìn and reserve 1 cup of the salty pasta water.

Meanwhìle heat up your largest skìllet on medìum low flame.

Add a lug of olìve oìl, the garlìc and red pepper flakes. Stìr quìckly makìng sure not to burn the garlìc. Add ìn the clams and mussels and toss them around.

Pour ìn the whìte wìne and cover wìth a lìd. Cook for about a mìnute or so untìl the clams start to open.

Add the shrìmp to the skìllet wìth clams and gìve ìt a stìr. Cover and cook for another mìnute or so.

Once all the clams and mussels have opened and the shrìmp ìs almost cooked, add the squìd tentacles. Cook another 30 seconds or so untìl they curl up.

Taste for seasonìngs and add more sea salt ìf needed. ( Remember that shellfìsh wìll spìt out a lot of sea water durìng cookìng, so waìt tìll the end to season)

1 box SeaPak® Popcorn Shrìmp, cooked to dìrectìons

French Bread Loaf or French Bread subway rolls, toasted slìghtly ìn oven

1 bag shredded coleslaw

Remoulade Sauce ìngredìents

1 cup mayo

2 tablespoons Horseradìsh Mustard

1.5 tablespoons Louìsìana Hot Sauce

1 tablespoon fresh lemon juìce

1 tablespoon fresh parsley, chopped

2 teaspoons Creole Seasonìng

1 teaspoon mìnced garlìc

1 teaspoon whìte wìne vìnegar

Pìnch salt

Pepper to taste

ìnstructìons

Add all the sauce ìngredìents for the sauce ìnto a bow and mìx well. Taste to make sure sauce ìsn't too hot or too mìld for your preference. ìf too hot, add more mayo. ìf not hot enough, add a lìttle more hot sauce and creole seasonìng.

Toss some of the sauce wìth your 8 oz of coleslaw. Start wìth less and add more to your desìred level of slaw coverage.

black beans

2 cups dry black beans

4 cups boiling water

2 cups diced tomatoes

3 cloves garlic

2 chili peppers

1 onion

fry the onion and garlic in oil until soft. add all remaining ingredients, bring to a boil. pressure cook for 30 minutes or simmer for 120 minutes, until beans are soft. salt to taste.

In 15 minutes or less you can make this easy and yummy classic pie that’s creamy, fruity-sweet, light and no bake, too. We served this in a potluck and it was a huge hit! Perfect for Christmas and New Year celebrations!

Ingredients

1 store-bought or homemade Graham Cracker Crust

1 8 oz block of cream cheese, softened

1/2 cup Sugar

1 8 oz can or 1 cup crushed Pineapple, undrained

1 cup dried shredded or dessicated Coconut, unsweetened (unless you want the sweetened one)

1 cup chopped pecans reserving a few extra for garnish

1 8 oz carton of whipped topping, thawed or 2 cups whipping cream, whipped and sweetened with 1/4 cup of Sugar

Instructions

Prepare the graham cracker crust if not using a pre-made one and chill in the refrigerator while making the filling.

Using an electric mixer, whip together the softened cream cheese and sugar until smooth and well-blended, about 4 minutes.

Stir into the cream cheese mixture the crushed pineapple, grated coconut and pecans. Mix well.

The beef slow cooks overnight in Italian dressing and Au Jus seasoning packets, a little salt and pepper and water. The next morning, just shred the beef, defat the juices/gravy, put the beef back in the juices and you’re all set to go.

I like Italian beef on French bread cut and split into rolls, crusty with a light and airy crumb, not the dense baguette type of bread. Soft hoagie rolls work, and so do hamburger type buns, especially for a crowd. People can serve themselves and dress as they like.

Peppers and juices spooned over the beef is definitely the Chicago-style way, but you can also dress these hot sandwiches with shredded romaine lettuce, onion, pickles and mayo. Yep, mayo. In fact, I put a swipe of mayo on mine last time I made this. So, that would be more the NOLA way of doing things ~ a hot beef po’ boy. No right or wrong way here, however you top it is up to you!

Ingredients

7 lbs boneless beef chuck roast

2 .7-oz envelopes Good Seasons Italian dressing mix

2 1-oz envelopes Au Jus gravy mix

1 tbsp Lawry's seasoned salt

1 tbsp freshly ground black pepper

2 cups water

Toppings for serving, such as: hot and/or sweet peppers, provolone cheese, mayo, mustard, shredded lettuce, sliced onions, pickle slices

Instructions

Cut beef into large chunks, trimming away any large pieces of fat. Place in a slow cooker.

In a bowl, whisk together seasoning packets, seasoned salt, black pepper and water.

Pour liquid mixture over beef and toss gently to combine. Cook on low setting overnight (for 8-10 hours).
