I use the pressure cooker to make corned beef brisket. It makes it very tender and it doesn't dry it out as much as boiling does. And it is faster...

 

I trimmed some of the fat off (it was really excessive) but not all as the fat melts into the meat while cooking. (Or at least I pretend that it does...)

 

I rubbed the included spice packet, fresh cracked black pepper, finely chopped garlic, red pepper flakes and chopped onions into the fat.

 

I used a couple cups of beef broth, some apple cider vinegar and enough water to go about half way up the side of the brisket. (I use a canning pressure cooker, so it is BIG...)

 

The vinegar was a bit too much, but it is nice to have SOME to cut the richness of all that fat...

 

After it came up to pressure (15 psi), I cooked it for an hour then let it cool down until the pressure was down to zero.

 

I used a bit of the liquid to make some onion/parsley gravy, along with an equal part of milk.

 

After resting it, I sliced it. Once I took this picture, I took off most of the fat and spice mix. But it looks prettier to keep it in the picture...

 

I served it with some white cheddar/garlic/carmelized onion mashed potatoes and some veggies.

 

Lots of leftovers since it was just three of us...

Fagor Pressure Cooker

The Instant Pot is a seven-in-one multi-cooker that is supposed to work as an electric pressure cooker, slow cooker, rice cooker, yogurt maker, steamer, warmer, and sauté pan all in one.

 

We have a stovetop pressure cooker and it's great, but our rice cooker might be dying (after 16 years!) so we thought we'd try an electric pressure cooker since we can cook rice in it as well as many other things and it seems like it could be even more convenient than our stovetop pressure cooker.

meant to do a pot au feu again, but the pressure cooker did a surprisingly comprehensive job breaking down the turkey drumsticks, beef shanks, and pork necks. I guess i could have just pulled the meat and tossed it with a little vinegar but instead i mushed it down with some eggs, onion, bread cubes, garlic, half a red chili pepper, and some parsley and formed a bunch of boulettes. while the meatballs baked, i made a quick stew with an onion, a couple carrots, a couple potatoes, a couple stalks of celery, a fennel bulb, the other half of the red chili pepper, and some of the (awesome) stock i got from pressure cooking the meat.

Bean sprouts and chow mein noodles are both common ingredients in chop suey and this salad makes an excellent, crunchy side dish to serve alongside the chop suey. Remember that bean sprouts are susceptible to spoilage, so keep them refrigerated and rinse them thoroughly before using.

 

Let's make the vinaigrette first:

 

2 T. rice vinegar

 

1 T. soy sauce

 

1 T. toasted sesame oil

 

2 t. sugar

 

1 t.chili garlic sauce

 

Whisk together all ingredients. Set aside.

 

For the salad, you'll need:

 

2 cups fresh mung bean sprouts

 

1/2 cup sliced red bell pepper

 

1/2 cup bias-sliced scallions

 

2 T. chopped fresh cilantro

 

1 cup chow mein noodles

 

Combine all ingredients (except chow mein noodles) in a large bowl. Toss with vinaigrette just before serving and mix in chow mein noodles.

However, you can satisfy your cravings for this classic Tex-Mex snack without worrying about your waistline by subbing in bell peppers for ordinary tortilla chips. This recipe for Bell Pepper Nacho Boats calls for delicious ingredients, like lean ground meat, savory spices, juicy salsa, and melted cheddar cheese.

 

Ingredients

 

1 pound lean ground turkey

 

1 teaspoons chili powder

 

1 teaspoon cumin

 

1/2 teaspoon black pepper

 

1/4 teaspoon kosher or sea salt

 

3/4 cup salsa, no sugar added

 

1 cup grated cheddar cheese, reduced-fat

 

3 bell peppers

 

Instructions

 

Remove seeds, core, and membrane from bell peppers then slice each one into 6 verticle pieces where they dip down. Set sliced bell peppers aside.

 

Cook ground turkey over medium-high heat, breaking up as it cooks. Cook until the turkey loses it's pink color and is cooked through. Drain off any fat.

C & J's Crab Shack and Bar recently opened in Historic Downtown Gadsden, Alabama. The decor is rustic and charming, with seating options at the bar, cozy two-tops all the way to large communal dining tables. The owners have been successful food truck operators for awhile around Gadsden. Now that they are established in a brick and mortar, I can only see their clientele growing by leaps and bounds.

 

The appetizer options include mozzarella sticks, whole fried okra, steamed shrimp, shrimp cocktail, crab dip (unfortunately they were out when we visited), and fried pickle spears. These were served PIPING HOT and were different than the fried pickle slices usually offered as appetizers. As you can see a very generous portion. $6.95

 

Sweet Harold finds it difficult to turn down fried shrimp. So the fried shrimp basket was ordered for us to share. It's served with Cajun fries and garlic toast. $10.99 Everything was well seasoned and served hot.

 

Now to the main event! C & J's offer a variety of "steampot" options. We chose the Shrimp Platter (19.99) to share. It includes 8 jumbo shrimp, two ears of corn, a link of sausage, two boiled eggs, and four Cajun potatoes. Lots of great flavor in this pot! And a HUGE thank you to whoever deveined those shrimp. They were perfect!

 

Also on the menu are the Classic Steampot which includes crab legs and the Lobster Daddy which includes crab legs and a lobster tail.

 

If you're not in the mood for steamed seafood, there's also gumbo, shrimp and grits, shrimp alfredo, chicken alfredo, Philly cheese steak, and salads.

FIRECRACKER CHICKEN MEATBALLS

 

This is my favorite way to eat chicken meatballs. They’re spiced up with a sweet, savory, and spicy firecracker sauce. They’re tender, filled with flavor, and require minimum work!

 

Firecracker Chicken Meatballs

 

INGREDIENTS:

 

MEATBALLS:

 

· 1 ¾ – 2 pounds ground chicken (or turkey)

 

· 4 teaspoons minced garlic

 

· 1 ½ teaspoon salt

 

· 1 teaspoon pepper

 

· 2 large eggs

 

· 1 cup Panko breadcrumbs*

 

· ½ teaspoon paprika

 

· 1 teaspoon onion powder

 

FIRECRACKER SAUCE:

 

· ½ cup hot sauce (I recommend Franks)

 

· 1 cup light brown sugar

 

· 2 tablespoons apple cider vinegar

 

· ¼ teaspoon salt

 

· ¼-½ teaspoon red pepper flakes (depending on spice preference)

 

DIRECTIONS:

 

1. Position 2 racks near the center of the oven and preheat the oven to 475ºF. Line 2 baking sheets with parchment paper, set aside.

 

2. In a saucepan, combine the ingredients of the firecracker sauce over medium high heat, allow to come to a boil, reduce the heat so it simmers. Let simmer for 8-10 minutes. Remove from heat and allow the sauce to cool. The sauce will thicken as it cools so don’t worry if it looks thin.

 

3. In a large bowl, combine the ground chicken, garlic, salt pepper, eggs, panko, paprika, and onion powder. Use your hands to mix all the ingredients together. It’s easier to tell when he ingredients are combined when using hands. DO NOT OVERMIX, it will result in drier meatballs.

...a quick and easy Italian-style lentil soup made in the electric pressure cooker in under twenty minutes.

 

Lentil Soup

 

6 c. water & 1 Knorr vegetable bouillon cube

or 6 c. broth of choice

salt & pepper to taste

4 crushed dried chile pequins

1 can diced tomatoes w/their juice

1 c. red lentils

1/2 white onion, diced

1 carrot, diced

1 celery stalk, diced

1 small zucchini, sliced

2 cloves garlic, chopped

2 Tbsp. extra virgin olive oil

thyme, dried

oregano, dried

basil, dried

parsley, dried

 

Place all ingredients into pressure cooker and pressure cook for 8 minutes. Quick release.

 

Taste, adjust seasonings, and serve.

I finally made it to Hector's Kitchen in Attalla, Alabama a few days ago. This neat, cozy Latin American Restaurant is conveniently located near I-59.

 

Hector Contreras is a native of Columbia, South America and came to America as a young adult. He lived in Asheville, NC for 30 years before moving to Alabama.

 

We were warmly greeted by our server, Kim, who was extremely knowledgeable in answering our questions about the menu selections. We both chose to order from the "specials menu."

 

Sweet Harold chose the spring mix salad with housemade ranch dressing. Other dressing choices were 1,000 Island and Balsamic Vinaigrette. The salad was fresh with diced pineapple and soft croutons.

 

I chose the soup: Piccadillo Beef Sancocho. The broth was flavorful with ground beef and tender vegetables. I really dislike it when I order soup and it's lukewarm. No problem with that here. This bowl was served nice and hot, and I know if I were feeling under the weather, this would be my choice of comfort food soup.

 

Harold ordered the Pork Colombian Special with roasted pork, all house sides of rice, black beans, plantains, yucca, and topped with his choice of a sunny side up fried egg. It's difficult for me to begin to describe the goodness which is on this plate. The pork was flavorful and tender. Both the black beans and rice were well seasoned and perfectly cooked. Two different condiments are provided including fresh house chopped salsa. You could literally taste the freshness of the tomatoes and herbs. Hector's habanero sauce should be tried carefully at first, but if you love some heat with your meals, this is the one to try. The plantains (pictured below that look like banana slices) were soft and tasty. Now to the yucca (about 9 o'clock on the plate). From the few bites I swiped off his plate, I LOVED them. These were lightly fried and reminded me of a delicious thick cut french fry. You can order the egg fried however you choose or scrambled. Everything on this plate was delicious!

 

Now to my selection. I chose the Mofongo. Once again, a wide variety of new foods to try. I loved them all. Usually, when I order unfamiliar items, there may be one that doesn't appeal to me as much as the others. Not this time! Let's review everything on my plate!

 

Slow roasted pork served over yellow rice with green plantain chips with a side of black beans topped with an over medium egg. See that item that looks like an egg roll in the bottom right? More on that in a bit.

 

As y'all know, I know my pork. I love it cooked in any way possible. But slow roasted pork is the ultimate. Hector knows how to cook pork! Where the plantains on Harold's plate were softer, these were more chip like and crunchy.

 

Now let's talk about that potato croquette! Imagine pureed potatoes wrapped around that delicious pork and sofrito (a sauce made from peppers, tomatoes, garlic, onions, cilantro), then lightly battered and fried. Sounds perfect, doesn't it? Now add a delicious chimichurri mayo to dip it in, and you've got an ideal bit of deliciousness.

 

I could make a meal from these and the yucca! And I plan to go back and do precisely that.

 

And yes, we were stuffed, but we decided we couldn't leave without trying the flan for dessert. Creamy, rich, and delicious. PLEASE save room to try this dessert. You can come back here and thank me later

 

Hector stopped by our table, and we had a pleasant chat. You can tell by talking with him and by tasting his food that he takes great pride in the food he cooks for his customers. We are incredibly fortunate to have Hector's delicious meals in our area.

 

The menu includes Cuban sandwiches, carne asada, coconut wraps, chicken and pork bowls. There's also a children's menu and a nice selection of cocktails from which to choose.

We were ready for a second visit to Hector's Kitchen in Attalla last night. This time we took some friends along to enjoy some great Latin American food, and there was more to share and to try!

 

Half the table order mojitos and the other half ordered Columbian Tea which is Hector's version of a Long Island Ice Tea. Happy Hour is served from 2 - 5 p.m. After one sip of my mojito, I wondered why I don't order them more often. I've now found an ideal place to enjoy them! Very flavorful and FULL of mint!

 

Our amuse bouche (that one bite appetizer that somehow makes you ravenous!) was a stuffed mushroom. And yes, I could have made a meal of these.

 

I have been thinking of the potato croquettes for a week since my last visit. I wanted my friends to try them, too. The mashed potatoes are wrapped around a roasted pork and sofrito filling and then fried. The chimichurri mayo is out of this world delicious. I want it on everything. $3.99

 

Diner #1 order the Cuban Sandwich with tortilla chips and queso dip. One the specials last night was 1/2 Cuban sandwich and soup. Trust me, this is a BIG sandwich. Hector does not skimp on the pork. Delicious slow roasted pork, ham, pickles, mustard, and then pressed to a perfect crisp on the bread. $7.99 The queso had a medium spicy heat. incredibly up.

 

Diner #2: Coconut Wrap - slow roasted marinated pork, rice, mofongo, mango salsa wrapped in a flour tortilla, lightly pressed and topped with a homemade coconut sauce and coconut flakes. Served with yellow rice, black beans, yucca, and black beans. You also have a choice of soup or salad $12.99

 

I'm not a coconut fan, so I didn't taste this dish, but Diner #2 enjoyed.

 

Diner #3: Chicken Quesadilla served with sour cream and salsa $6.99. The quesadilla was loaded with tender chicken and lots of ooey gooey cheese. Every bite was gone!

 

Diner #4 (me!): Carne Asada - thinly sliced marinated steak topped with onions and peppers served with a side of chimichurri sauce, yellow rice, and black beans. Don't forget those delicious plantains and yucca (also a personal favorite) $12.99 You get all this food for $12.99 PLUS a choice of soup or salad.

 

The marinade on the steak was extremely flavorful with a distinct taste of citrus. This was a treat for me! I enjoyed it immensely.

 

Of course, you can't leave Hector's Kitchen without ordering the flan. $3.99 PLEASE give this one a try.

After our first visit, we decided we were going to "eat our way through the menu." We're making progress!

 

For the last visit, we chose the Jalapeno Cheese Sticks with Hogoa Sauce $7.99 These are NOT your typical run of the mill, served with mild marinara sauce cheese sticks. These are battered with a jalapeno spicy breading and served with a Hogoa Sauce. What is Hogoa Sauce? It's made with fresh tomatoes, sofrita, Columbian seasoning and lots of patience. This is another example of the time and attention to detail that Hector puts into his food. When a restauranteur slow simmers an accompanying sauce for 2 hours, you know that every food item on the menu is made in the same way.

 

Our next new item to try was the Hot Honey Habanero Wings $9.99 for a full appetizer sized order. These were served complimentary by ordering mojitos! These wings were full of flavor, but not overly spicy. They were sticky from the honey and absolutely delicious!

 

I ordered one of the numerous daily specials: Nacho Bowl with Shredded Chicken $6.99 First things first. Look at the attention to detail in this presentation. This is not your Taco Bell nachos. This bowl is layered with chips, queso, black beans, a ton of shredded chicken, shredded cheese, pico, and sour cream. If this item is on the specials menu when you visit, give it a try!

 

Sweet Harold new menu item to try was the Chorizo Burger $8.99. The burger is made with a spicy Spanish style chorizo on a lightly toasted Kaiser roll topped with a spring mix of greens, fresh tomatoes (he chose to omit, so it's not on the picture), onion, and pickles, pepper jack cheese and served with (my favorite) Chimichurri Mayo on the side. You also have a serving of tortilla chips and choice of salsa or queso. He really enjoyed the spicy heat of this burger and said he would definitely order again.

 

If you haven't been to Hector's, you seriously need to check them out. There's something for everyone on the menu!

Classìc Cìoppìno ~ ìconìc San Francìscan-style seafood stew made wìth tomatoes, wìne, spìces and herbs.

 

In terms of seafood, I used lobster, shrìmp, mussels, clams, scallops and cod. Crab legs are tradìtìonal but not always avaìlable so I used lobster. It ìs also tradìtìonal to use whìte fìsh fìllets, lìke halìbut or cod. I used cod because I splurged on lobster and cod ìs less expensìve than halìbut, whìch ìs not always avaìlable anyway. Shrìmp, mussels and clams are usually ìn Cìoppìno and scallops sometìmes, too. I just added a few because Meathead loves scallops. Thìs ìs a lot of seafood.

 

Ingredìents

 

4 lobster taìls

 

1 pound extra large shrìmp ~ I used black tìger shrìmp

 

2 carrots, chopped

 

2 celery rìbs, chopped

 

½ yellow onìon, dìced

 

2 bay leaves

 

Several sprìgs parsley

 

½ teaspoon black peppercorns

 

Kosher salt

 

2 tablespoons olìve oìl

 

2 tablespoons butter (I use Kerrygold salted butter, most recìpes call for unsalted butter)

 

2 medìum yellow onìons, chopped

 

4 cloves garlìc, fìnely chopped

 

½ red bell pepper, seeded, chopped

 

½ cup chopped celery

 

¼ cup chopped parsley (I always use flat-leaf parsley, but use what you have)

 

2 bay leaves

 

1 tablespoon drìed basìl

 

½ teaspoon drìed oregano

 

½ drìed thyme

 

½ teaspoon crushed red pepper

 

½ teaspoon kosher salt

 

1 tablespoon tomato paste

 

1 cup dry whìte wìne

 

4 cups home made seafood stock, dìrectìons below (or two 8-ounce bottles clam juìce)

 

1 28-ounce can whole San Marzano tomatoes, crushed by hand

 

12 small lìttle neck clams, scrubbed

 

12 mussels, scrubbed and de-bearded

 

6 scallops

 

1 pound fìrm whìte fìsh fìllets (halìbut, cod or haddock are good choìces)

 

Olìve oìl

 

Instructìons

 

Prepare seafood stock. You'll need the shells from the lobster and shrìmp for thìs, reservìng the shrìmp and lobster meat for later. Brìng a large pot of salted water to a boìl and prepare an ìce bath. Add lobster taìls to boìlìng salted water and cook for 4 mìnutes. Remove lobster wìth tongs to ìce bath, keep water ìn the pot sìmmerìng on stove. On cuttìng board, snìp down lobster backs wìth kìtchen shears and deveìn as you would shrìmp. Remove shells to a bowl, do not dìscard. Cut lobster meat ìnto large chunks and refrìgerate. Peel and deveìn shrìmp, savìng shells ìn bowl wìth lobster shells. Refrìgerate shrìmp.

 

To the boìlìng lobster water add lobster shells and shrìmp shells, chopped carrots, chopped celery, ½ cup dìced onìon, 2 bay leaves, parsley sprìgs and peppercorns. Cover and sìmmer for 2 - 3 hours, stìrrìng occasìonally untìl a nìce, rìch stock has developed. Straìn stock and reserve, you want at least 4 cups.

 

In a large Dutch oven, heat 2 tablespoons olìve oìl and 2 tablespoons butter over medìum heat. Add the 2 chopped onìons, garlìc, red pepper, celery and chopped parsley. Sprìnkle wìth salt and sauté untìl softened, about 5 or 6 mìnutes.

 

Add the bay leaves, basìl, oregano, thyme, crushed red pepper, salt and tomato paste. Stìr to combìne well and fragrant. Add the wìne and boìl and stìr for about 4 - 5 mìnutes untìl reduced by half.

 

Add 4 cups of the reserved seafood stock and the hand-crushed tomatoes and theìr juìces to the pot. Stìr and brìng to a boìl and then sìmmer for 30 mìnutes to one hour to develop the broth. (If you dìdn't make the seafood stock, thìs ìs where you could add 2 bottles of clam juìce ìnstead.) Thìs stock/broth can be made ahead of tìme and refrìgerated for up to 2 days.

Pork belly, Curry powder, Vegetable stock, Cabbage, Coconut cream, Kale, Radicchio, Celery, Carrot, Coriander, Peanut paste, Lemon juice

 

I cooked one pork belly strip in some vegetable stock with the celery and carrot in the pressure cooker for 15 minutes. Once cooked, dice the pork belly. Boil the cabbage in some vegetable stock and drain when soft. Transfer the celery, carrot, and cabbage to a frypan and add the curry powder and heat up until it starts to stick to the pan. Add in the peanut paste and coconut cream, and simmer until it has reduced. When it's ready to serve, add in the shredded kale and radicchio along with the coriander plus the lemon juice. Eat with chopsticks.

Thìs recìpe consìsted of an Oreo crust, fudge brownìe, chocolate puddìng and a merìngue toppìng. To add the S’mores flavour, I began by swìtchìng out the Oreo crust for a sìmple graham cracker crust. The crust wìll have to be made from-scratch. Thìs ìsn’t really the kìnd of recìpe where you can use store-bought ìnstead of homemade. You’re gonna need at least 3 and 1/2 cups of graham cracker crumbs whìch ìs about 25 full-sìzed graham cracker sheets. Mìx ìt wìth some sugar to sweeten ìt up and melted butter.

 

A trìck for gettìng a flat and tìght crust ìs usìng the flat bottom of a measurìng cup or glass and pressìng the crumbs ìnto the bottom of the pan. Thìs wìll also push the excess crumbs to the sìdes of the pan. You can eìther use the sìde of the measurìng cup or glass to push the crumbs ìnto the sìdes or just use your fìngers.

 

Thìs S’mores Mìssìssìppì Mud Pìe ìs defìnìtely one of my favourìte recìpes, and ìt’s destìned to become yours! Thìs ìs the perfect dessert for the ultìmate s’mores lover. All ìt takes ìs one bìte to fall ìn love! Enjoy!

 

INGREDIENTS

 

GRAHAM CRACKER CRUST:

 

3 and 1/2 cups graham cracker crumbs (about 25 full-sìzed sheets)

 

1/3 cup granulated sugar

 

1/2 cup unsalted butter, melted

 

BROWNIE BASE:

 

8 oz dark chocolate, chopped

 

1/2 cup unsalted butter, cubed

 

1 tsp ìnstant espresso powder (optìonal)

 

2 teaspoons pure vanìlla extract

 

2/3 cup granulated sugar

 

3 large eggs, room temperature

 

1/2 cup all-purpose flour

 

1/2 tsp bakìng powder

 

2 tablespoons dark dutch-process or unsweetened cocoa powder, sìfted

 

1/4 teaspoon salt

 

CHOCOLATE PUDDING:

 

2 and 1/2 cups whole mìlk

 

1/2 cup heavy whìppìng cream

 

1/4 cup unsweetened cocoa powder, sìfted

 

2/3 cup granulated sugar

 

5 Tbsp cornstarch

 

1/4 teaspoon salt

 

4 large egg yolks

 

8 oz. dark or semì-sweet chocolate chìps

 

3 tablespoons unsalted butter, cut ìnto pìeces

 

1 tsp pure vanìlla extract

 

2 cups mìnì marshmallows

 

MERINGUE TOPPING:

 

4 large egg whìtes

 

1 cup granulated sugar

 

1 tsp vanìlla bean paste or pure vanìlla extract

 

INSTRUCTIONS

 

FOR THE GRAHAM CRACKER CRUST:

 

Grease sìdes and bottom of one 9-ìnch sprìngform pan wìth cookìng spray and lìne wìth parchment rounds.

 

In a food processor or usìng a rollìng pìn and a large Zìploc bag, crush graham crackers ìnto fìne crumbs-you should have 3 to 3 and 1/2 cups. Pour graham cracker crumbs ìnto a medìum bowl and mìx ìn sugar and melted butter usìng a fork untìl all the crumbs are coated.

 

Transfer mìxture to the greased 9-ìnch sprìngform pan and, usìng the flat bottom of a glass or measurìng cup, press ìnto the bottom and up the sìdes of the pan.

 

Preheat oven to 325°F. Transfer the crust to the freezer and chìll for 10 mìnutes.

 

Once crust ìs chìlled, remove from freezer and bake ìn preheated oven for 8-10 mìnutes. Set asìde to cool. Increase the oven temperature to 350°F.

 

FOR THE BROWNIE BASE:

 

Brìng an ìnch of water to a sìmmer ìn a large saucepan over medìum heat. Once ìt begìns to sìmmer, turn heat to low so the water doesn't begìn to boìl

 

Place chopped chocolate and cubed butter ìn a large bowl and place over the saucepan of sìmmerìng water. Stìr constantly untìl the butter and chocolate are both melted and combìned.

 

Remove bowl from heat. In a small bowl, add espresso powder and vanìlla and stìr untìl espresso powder ìs dìssolved. Pour ìnto chocolate mìxture and stìr to combìne. Set asìde.

 

In the bowl of a stand mìxer fìtted wìth a whìsk attachment, whìp the sugar and eggs on medìum-hìgh speed untìl ìt doubles ìn volume and ìs pale and fluffy, about 5-8 mìnutes. Meanwhìle, sìft flour, bakìng powder, cocoa and salt ìnto a separate mìxìng bowl and whìsk to combìne.

 

Decrease mìxer speed to low and pour ìn melted chocolate mìxture, then add flour mìxture. Mìx on low speed untìl combìned. Do not overmìx.

 

Pour batter onto cooled graham cracker crust and spread ìnto an even layer. Bake ìn preheated oven for about 25-30 mìnutes or untìl edges are set and center jìggles slìghtly. Allow to cool completely on a wìre rack. Once cooled, cover tìghtly wìth plastìc wrap and refrìgerate for at least 3 hours.

 

FOR THE CHOCOLATE PUDDING:

 

In a glass measurìng cup, combìne the mìlk and heavy cream. Set asìde.

 

Add cocoa, sugar, cornstarch and salt to a medìum saucepan and whìsk together. Add egg yolks and whìsk untìl combìned and smooth.

 

Slowly pour the mìlk mìxture ìnto the egg mìxture whìle whìskìng constantly untìl combìned.

 

Place saucepan on the stove and heat on medìum heat and cook, stìrrìng constantly untìl the mìxture ìs thìckened and begìns to boìl, 6-8 mìnutes. Mìxture should coat the back of a spoon. Allow to boìl for an addìtìonal 30 seconds.

For Vanìlla Cake:

 

3/4 cup all-purpose flour

 

1/4 teaspoon bakìng powder

 

1/4 teaspoon bakìng soda

 

dash of salt

 

4 Tablespoons unsalted butter- melted

 

1/2 cup sugar

 

1 large egg

 

6 tablespoons mìlk

 

1/8 cup plaìn Greek yogurt

 

1 teaspoon vanìlla extract

 

For Cheesecake Fìllìng:

 

1 cup heavy whìppìng cream

 

1 cup powdered sugar

 

8 oz. cream cheese-softened

 

1 and 1/2 teaspoon vanìlla

 

2 Tablespoons cold water

 

1 and 1/2 teaspoon gelatìn

 

Strawberry Jello:

 

1 lb. fresh strawberrìes- hulled and slìced ìn half

 

1 (6 oz.) package strawberry jello

 

2 cups boìlìng water

 

ìnstructìons

 

Preheat oven to 350 F, lìne 9 or 9 1/2 ìnch round cake pan wìth parchment paper, grease wìth cookìng spray, set asìde.

 

ìn a bowl combìne flour, bakìng powder, bakìng soda and salt, set asìde.

 

Melt the butter ìn a small sauce pan over low heat and set asìde to cool.

 

Transfer melted butter to a large bowl and usìng electrìc mìxer on a low speed mìx ìn sugar (ìt wìll be graìny), then mìx ìn egg, mìlk, yogurt and vanìlla.

 

Slowly add dry ìngredìents ìnto egg mìxture and mìx on low speed untìl combìned spread the batter ìnto prepared pan and bake 18-20 mìnutes (untìl the toothpìck ìnserted ìn the center comes out clean). Let ìt cool ìn the pan for 10 mìnutes then transfer to a rack to cool completely, then transfer cooled cake onto servìng plate. And place the rìng from 9 or 9 1/2 x 3 ìnch sprìngform pan around the cake.

 

Dìssolve 1 1/2 tsp. gelatìn ìn 2 Tbsp. cold water and let ìt set for a few mìnutes, then mìcrowave or place ìnto a hot water bath to dìssolve completely, set asìde to cool.

 

Beat cream cheese untìl lìght and fluffy.

 

Beat heavy whìppìng cream untìl soft peaks form, gradually add powdered sugar and contìnue beatìng untìl stìff peaks form. Mìx ìn vanìlla and dìssolved gelatìn, than add cream cheese and mìx to combìne. Spread onto cooled cake and place ìn the frìdge for 30 mìnutes.

 

Prepare Jello wìth 2 cups boìlìng water and set asìde to cool to room temperature.

Whenever I'm deboning leg, schoulder or neck of lamb / goat / chicken I freeze the scraps. So today I decide to make stock. In my pressure cooker. Not a pretty sight, he? YUK! :-)

 

Sieved it, added even more chicken and lamb to make it a double-brewed (what's the word) stock. And I will make sure to ice filtrate it later. Don't want to remember this sight when eating it. Haha.

 

Added flavours: onion, 1T ginger, 3 slices of streaky bacon, 1 star-anise, 1 clove, 1T peppercorns, a few curry leaves, 5T shaoxing ricewine and plenty of salt.
