Mexican Chicken Soft Tacos prepared using a Pressure Cooker.

INGREDIENTS

2 small or 1 large lemon

1/3 cup olive oil

6 cloves garlic

1/4 tsp salt

Freshly cracked pepper

2 lbs split chicken breasts*

INSTRUCTIONS

Preheat the oven to 275ºF. Squeeze about 3 Tbsp lemon juice from the lemon(s) and slice the remainder. Mince two cloves of the garlic, and peel the remaining 4. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.

Pat the chicken breasts dry with a paper towel. Place them in a glass or ceramic casserole dish. Pour the prepared lemon marinade over the chicken, using a spoon to redistribute the marinade and make sure the surface of the chicken is fully covered. Add the remaining cloves of peeled garlic and sliced lemon around the chicken. If you're sensitive to bitter flavors, add the additional lemon slices after baking. Cover the dish tightly with foil.

Roast the chicken in the preheated oven for 90 minutes. After 90 minutes, turn the oven up to 425ºF, remove the foil, and baste the chicken with the juices from the bottom of the dish. Return the chicken to the oven and roast for an additional 20 minutes without foil at 425ºF, or until the skin is golden brown and crispy.

Let the chicken rest for 5-10 minutes before slicing. Serve warm with the pan drippings spooned over top.

corn: canned frozen, or fresh

bell peppers: sliced thin or chopped small

red onions: sliced thin

green onions: sliced thin

PROTEIN OPTIONS:

ground beef or ground turkey: cooked and seasoned generously with Mexican spices or taco seasoning

taco meat with black beans and corn

pulled pork or carnitas: shredded and chopped bite-size

cooked or roasted chicken: shredded or diced

ham: diced

hard boiled eggs: chopped

canned tuna fish: drained well

cooked shrimp or fish

beans: black kidney, or pinto beans

TOPPING OPTIONS:

cheese: shredded diced, or crumbled

avocado: sliced or diced

fruits: diced apples or pears orange slices, fresh berries

plenty of crunch: croutons tortilla chips, or my personal favorite Fritos

fresh lime

salt and pepper

salad dressing of your choice: Italian Poppyseed, White Balsamic Vinaigrette, and the absolute BEST Homemade Ranch Dressing are a few of our favorites.

Instructions

Prep the vegetables and place in serving size containers. (I use these containers and these containers to store prepped salads. Add a paper towel to each box to help the produce last longer. Place in the refrigerator until ready to eat.

WHEN READY TO EAT:

Warm the protein of your choice and chop bite-size, if needed. Add the protein to the pre-made salad greens and vegetables. Add the toppings of your choice. Squeeze lime generously over the salad, sprinkle with salt and pepper. Or toss with your favorite salad dressing. Enjoy!

1 ½ lbs. boneless skinless chicken

⅓ cup brown sugar

¼ cup ketchup

⅓ cup soy sauce

¼ cup apple juice

2 T. apple cider vinegar

½ cup bourbon (or broth if you don't want to use bourbon)

2 tsp. cornstarch

¼ tsp. minced garlic

¼ tsp. ginger

½ tsp. black pepper

INSTRUCTIONS

Freezer Prep:

Label gallon freezer bag with contents, date, and cooking directions.

Cut chicken into small bite sized pieces.

In freezer bag whisk together brown sugar, ketchup, soy sauce, cornstarch, apple juice, apple cider, bourbon, garlic, ginger, and black pepper.

Add chicken, shake bag to coat.

Press flat, seal bag securely.

Cooking:

Thaw bag contents.

Pour chicken and sauce into a slow cooker that has been coated in nonstick cooking spray or lined with a slow cooker bag for easy clean up.

Cook on low for 6-7 hours, stirring occasionally.

Serve over rice, add fresh steamed broccoli or another favorite veggie for a complete meal.

Today's lunch was courtesy of Radosta's, 249 Aris Avenue, Metairie, LA 70005. They've been serving the New Orleans area since 1952. They are located in a cozy neighborhood with limited parking so choose your parking spot carefully.

As you walk through the door, you realize you're in a neighborhood deli/general store market/liquor store. Walk to the back of the shop and order at the counter. Drinks are in refrigerated coolers with soft drinks and a large selection of domestic and foreign beer. Iced tea is also available. You choose your drink and pay for everything as you leave.

The menu covers almost every po'boy combination you can imagine available in either 10" or 7" size. Selections include their specialty roast beef, along with ham, veal, pork chops, chicken meatball, Italian sausage, chicken or tuna salad, turkey, liver cheese (!), salami, olive loaf, soft shell crab, fried shrimp, catfish, oyster, fried shrimp parmesan, BLT, grilled cheese, club sandwich, and fried eggplant parmesan. See? Something for everyone!! Prices range from $5.95 for the smaller size to $14.95 for the larger option.

Muffalettas are offered in 1/2 size ($8.95) or whole ($18.00)

Daily specials include everything from red beans and rice, spaghetti and meatballs, hamburger steak, and fried catfish. There are burgers, onion rings, seafood platters, southwest egg rolls, and so much more.

Sweet Harold finally decided on the fried shrimp po'boy dressed which means you'll get lettuce and tomato added to the sandwich. Lightly breaded and not overly salted (yay!) this one was a winner.

I definitely knew I had to try their famous roast beef po'boy. The roast beef was tender and so was the bread. I don't like soggy bread, so I appreciated that there wasn't a lot of gravy to soggy down the bread.

The order of fries are HUGE, so I'd recommend sharing an order.

The owners are friendly and welcoming. The atmosphere is busy, noisy, and entertaining. I really wish I had the time and opportunity to eat my way through the extensive menu.

Rediscovering my pressure cooker, which I love. It's a great underutilized cooking method. Last year I discovered the cookbooks of Lorna Sass, who loves the PC! If you've got one gathering dust, give it a try! Conserving of energy and so much quicker/easier/tastier for many foods.

This one has sufficient iron in the metal to work on my induction burner which I'll never give up!

My mother still has her Prestige pressure cooker from this era.

An advert in Everybody's Weekly magazine from December 1957, featuring their 'Everhot' tea set, which came in blue, red, gold or green and with matching tray...Oooh!

Fagor Pressure Cooker

Using the pressure cooker method from hippressurecooker.com.

I use the pressure cooker to make corned beef brisket. It makes it very tender and it doesn't dry it out as much as boiling does. And it is faster...

I trimmed some of the fat off (it was really excessive) but not all as the fat melts into the meat while cooking. (Or at least I pretend that it does...)

I rubbed the included spice packet, fresh cracked black pepper, finely chopped garlic, red pepper flakes and chopped onions into the fat.

I used a couple cups of beef broth, some apple cider vinegar and enough water to go about half way up the side of the brisket. (I use a canning pressure cooker, so it is BIG...)

The vinegar was a bit too much, but it is nice to have SOME to cut the richness of all that fat...

After it came up to pressure (15 psi), I cooked it for an hour then let it cool down until the pressure was down to zero.

I used a bit of the liquid to make some onion/parsley gravy, along with an equal part of milk.

After resting it, I sliced it. Once I took this picture, I took off most of the fat and spice mix. But it looks prettier to keep it in the picture...

I served it with some white cheddar/garlic/carmelized onion mashed potatoes and some veggies.

Lots of leftovers since it was just three of us...

meant to do a pot au feu again, but the pressure cooker did a surprisingly comprehensive job breaking down the turkey drumsticks, beef shanks, and pork necks. I guess i could have just pulled the meat and tossed it with a little vinegar but instead i mushed it down with some eggs, onion, bread cubes, garlic, half a red chili pepper, and some parsley and formed a bunch of boulettes. while the meatballs baked, i made a quick stew with an onion, a couple carrots, a couple potatoes, a couple stalks of celery, a fennel bulb, the other half of the red chili pepper, and some of the (awesome) stock i got from pressure cooking the meat.

Sure- nachos taste delicious, but they probably don’t rank high on the list of nutritious, wholesome recipes, especially when you’re trying to eat healthy! However, you can satisfy your cravings for this classic Tex-Mex snack without worrying about your waistline by subbing in bell peppers for ordinary tortilla chips. This recipe for Bell Pepper Nacho Boats calls for delicious ingredients, like lean ground meat, savory spices, juicy salsa, and melted cheddar cheese.

Ingredients

1 pound lean ground turkey

1 teaspoons chili powder

1 teaspoon cumin

1/2 teaspoon black pepper

1/4 teaspoon kosher or sea salt

3/4 cup salsa, no sugar added

1 cup grated cheddar cheese, reduced-fat

3 bell peppers

Instructions

Remove seeds, core, and membrane from bell peppers then slice each one into 6 verticle pieces where they dip down. Set sliced bell peppers aside.

Cook ground turkey over medium-high heat, breaking up as it cooks. Cook until the turkey loses it's pink color and is cooked through. Drain off any fat.

Preheat oven to 375 degrees.

Combine cooked turkey with spices and salsa. Evenly distribute mixture into the bell pepper boats, top with cheese.

C & J's Crab Shack and Bar recently opened in Historic Downtown Gadsden, Alabama. The decor is rustic and charming, with seating options at the bar, cozy two-tops all the way to large communal dining tables. The owners have been successful food truck operators for awhile around Gadsden. Now that they are established in a brick and mortar, I can only see their clientele growing by leaps and bounds.

The appetizer options include mozzarella sticks, whole fried okra, steamed shrimp, shrimp cocktail, crab dip (unfortunately they were out when we visited), and fried pickle spears. These were served PIPING HOT and were different than the fried pickle slices usually offered as appetizers. As you can see a very generous portion. $6.95

Sweet Harold finds it difficult to turn down fried shrimp. So the fried shrimp basket was ordered for us to share. It's served with Cajun fries and garlic toast. $10.99 Everything was well seasoned and served hot.

Now to the main event! C & J's offer a variety of "steampot" options. We chose the Shrimp Platter (19.99) to share. It includes 8 jumbo shrimp, two ears of corn, a link of sausage, two boiled eggs, and four Cajun potatoes. Lots of great flavor in this pot! And a HUGE thank you to whoever deveined those shrimp. They were perfect!

Also on the menu are the Classic Steampot which includes crab legs and the Lobster Daddy which includes crab legs and a lobster tail.

If you're not in the mood for steamed seafood, there's also gumbo, shrimp and grits, shrimp alfredo, chicken alfredo, Philly cheese steak, and salads.

I hope we can enjoy eating our way through the menu!

The Instant Pot is a seven-in-one multi-cooker that is supposed to work as an electric pressure cooker, slow cooker, rice cooker, yogurt maker, steamer, warmer, and sauté pan all in one.

We have a stovetop pressure cooker and it's great, but our rice cooker might be dying (after 16 years!) so we thought we'd try an electric pressure cooker since we can cook rice in it as well as many other things and it seems like it could be even more convenient than our stovetop pressure cooker.

I purchased a new, stainless steel pressure cooker.

The black-eyed peas which I made for the New Year's Day meal were cooked in this wonderful new contraption.

It only took three minutes.

By the way... the "jiggler" with which many of us may be familiar - the disc-shaped metal pressure regulator which sat atop a conical pressure evacuation nozzle - has gone the way of the incandescent light bulb (aka "dinosaur"), and has been replaced with a more efficient and safe pressure indicator, and rotary pressure regulator - and a safety mechanism that prevents the lid from being undone while the pan is under pressure.

FIRECRACKER CHICKEN MEATBALLS

This is my favorite way to eat chicken meatballs. They’re spiced up with a sweet, savory, and spicy firecracker sauce. They’re tender, filled with flavor, and require minimum work!

Firecracker Chicken Meatballs

INGREDIENTS:

MEATBALLS:

· 1 ¾ – 2 pounds ground chicken (or turkey)

· 4 teaspoons minced garlic

· 1 ½ teaspoon salt

· 1 teaspoon pepper

· 2 large eggs

· 1 cup Panko breadcrumbs*

· ½ teaspoon paprika

· 1 teaspoon onion powder

FIRECRACKER SAUCE:

· ½ cup hot sauce (I recommend Franks)

· 1 cup light brown sugar

· 2 tablespoons apple cider vinegar

· ¼ teaspoon salt

· ¼-½ teaspoon red pepper flakes (depending on spice preference)

DIRECTIONS:

1. Position 2 racks near the center of the oven and preheat the oven to 475ºF. Line 2 baking sheets with parchment paper, set aside.

2. In a saucepan, combine the ingredients of the firecracker sauce over medium high heat, allow to come to a boil, reduce the heat so it simmers. Let simmer for 8-10 minutes. Remove from heat and allow the sauce to cool. The sauce will thicken as it cools so don’t worry if it looks thin.

3. In a large bowl, combine the ground chicken, garlic, salt pepper, eggs, panko, paprika, and onion powder. Use your hands to mix all the ingredients together. It’s easier to tell when he ingredients are combined when using hands. DO NOT OVERMIX, it will result in drier meatballs.

I finally made it to Hector's Kitchen in Attalla, Alabama a few days ago. This neat, cozy Latin American Restaurant is conveniently located near I-59.

Hector Contreras is a native of Columbia, South America and came to America as a young adult. He lived in Asheville, NC for 30 years before moving to Alabama.

We were warmly greeted by our server, Kim, who was extremely knowledgeable in answering our questions about the menu selections. We both chose to order from the "specials menu."

Sweet Harold chose the spring mix salad with housemade ranch dressing. Other dressing choices were 1,000 Island and Balsamic Vinaigrette. The salad was fresh with diced pineapple and soft croutons.

I chose the soup: Piccadillo Beef Sancocho. The broth was flavorful with ground beef and tender vegetables. I really dislike it when I order soup and it's lukewarm. No problem with that here. This bowl was served nice and hot, and I know if I were feeling under the weather, this would be my choice of comfort food soup.

Harold ordered the Pork Colombian Special with roasted pork, all house sides of rice, black beans, plantains, yucca, and topped with his choice of a sunny side up fried egg. It's difficult for me to begin to describe the goodness which is on this plate. The pork was flavorful and tender. Both the black beans and rice were well seasoned and perfectly cooked. Two different condiments are provided including fresh house chopped salsa. You could literally taste the freshness of the tomatoes and herbs. Hector's habanero sauce should be tried carefully at first, but if you love some heat with your meals, this is the one to try. The plantains (pictured below that look like banana slices) were soft and tasty. Now to the yucca (about 9 o'clock on the plate). From the few bites I swiped off his plate, I LOVED them. These were lightly fried and reminded me of a delicious thick cut french fry. You can order the egg fried however you choose or scrambled. Everything on this plate was delicious!

Now to my selection. I chose the Mofongo. Once again, a wide variety of new foods to try. I loved them all. Usually, when I order unfamiliar items, there may be one that doesn't appeal to me as much as the others. Not this time! Let's review everything on my plate!

Slow roasted pork served over yellow rice with green plantain chips with a side of black beans topped with an over medium egg. See that item that looks like an egg roll in the bottom right? More on that in a bit.

As y'all know, I know my pork. I love it cooked in any way possible. But slow roasted pork is the ultimate. Hector knows how to cook pork! Where the plantains on Harold's plate were softer, these were more chip like and crunchy.

Now let's talk about that potato croquette! Imagine pureed potatoes wrapped around that delicious pork and sofrito (a sauce made from peppers, tomatoes, garlic, onions, cilantro), then lightly battered and fried. Sounds perfect, doesn't it? Now add a delicious chimichurri mayo to dip it in, and you've got an ideal bit of deliciousness.

I could make a meal from these and the yucca! And I plan to go back and do precisely that.

And yes, we were stuffed, but we decided we couldn't leave without trying the flan for dessert. Creamy, rich, and delicious. PLEASE save room to try this dessert. You can come back here and thank me later

Hector stopped by our table, and we had a pleasant chat. You can tell by talking with him and by tasting his food that he takes great pride in the food he cooks for his customers. We are incredibly fortunate to have Hector's delicious meals in our area.

The menu includes Cuban sandwiches, carne asada, coconut wraps, chicken and pork bowls. There's also a children's menu and a nice selection of cocktails from which to choose.

Thìs Banana Oat Breakfast Smoothìe ìs guaranteed to keep you satìsfìed all mornìng wìth 20 grams of whole food proteìn and a good balance of healthy carbs and fats!

Ìngredìents :

· 1/2 cup (115 g) yogurt or non-daìry yogurt of choìce

· 1 medìum-sìze (100 g) rìpe banana, frozen

· 1/4 cup (60 ml) unsweetened almond mìlk

· 1/3 cup (30 g) rolled oats*

· 1 Tbsp (7g) chìa seeds**

· ½ tsp vanìlla extract

· pìnch of salt (optìonal but recommended)

· 1-2 tsp maple syrup or honey (optìonal, to taste)

Dìrectìons :

1. Add all the ìngredìents to a hìgh-speed blender ìn the order lìsted, and blend on hìgh untìl a smooth and creamy consìstency ìs reached. You want to make sure to keep blendìng untìl the chìa seeds have broken down to achìeve the smoothest and creamìest texture.
