Ribfest was back on Sparks street this week. With the smell of BBQ permeating the downtown core, many were drawn out of their usual lunch routines to dine on pork ribs, pulled port, chicken, beans and cornbread.
The estancia, owned by the same family for over 100 years, is set in a 2,470 acre ranch that produces 12,000 liters of milk daily. It is used by the Uruguayan government when entertaining guests, offering them an authentic glimpse of Uruguayan life. Part of the fun is travelling to the river by choice of a hay truck, an old model T or a horse drawn carriage. A traditional barbeque (asado) is served accompanied by national wines.
World War II veteran Vencil Mares was probably the oldest living pitmaster in Texas. He served as a medic on D-Day, and operated the Taylor Cafe for seventy-one years (starting in 1948). Mares passed away on November 24.

For those back in Britain, don't be thinking rain, burnt burgers and bangers (aka sausages for those offshore from the UK). This is TX pit bbq, with pitmasters nowadays using a modern 'oil drum' type smokers rather than an actual pit in the ground. The meat is cooked and smoked very slowly and usually features brisket and ribs, the latter just sneaking in on the right of above advert. Other meats such as chicken are always available. Apart from lashings of bbq sauce, sides are items such as pinto beans shown here, potato salad, corn casserole, pickles, onions and bread.

Franklin Barbecue debuted in December 2009 by husband and wife team, Aaron and Stacy Franklin out of a truck in an East Austin parking lot off Interstate 35. The then 30-year old Aaron, whose parents had owned a barbecue stand in his native Bryan, bought a pit from his former employer, John Mueller, a descendant of the legendary Mueller barbecue clan of Taylor and started smoking his own meat. By spring the press had caught on and the lines would snake around the block forcing the operation to a brick and mortar location, located at 900 East 11th Street, in March 2011. Lines form outside the door hours before the 11am opening, and the "sold out" sign usually goes up around 1pm.
In 2010, Bon Appetit hailed Franklin BBQ as the best in America. In 2011, Franklin's was named the best brisket at the Texas Monthly BBQ Festival. Franklin Barbecue has been featured on the Travel Channel television show, Anthony Bourdain's No Reservations. And Aaron Franklin has been a judge on the television reality competition, BBQ Pitmasters.

This past weekend people gathered to celebrate the life and personality of Carl Ruiz, a chef who was hysterical in person, he left you completely entertained and usually well fed or tipsy after a few drinks and good times. He unfortunately passed recently so his friends + family gathered at Pig Beach in Brooklyn to enjoy his favorite foods and pay respect to a true original American character. Great pitmasters from around the country gathered including Pat Martin of Nashville and Sam Jones from North Carolina, Billy Durney from Brooklyn, and Chaps PIt Beef in Maryland to make some of Carl's personal favorite foods for everyone. These are a little bit labor intensive but worth it. I don’t make them enough, but they are so good! The recipe is based on Myron Mixon’s Competition Chicken. Myron is a multi world champion bbq competitor and owns Myron Mixon’s BBQ Pitmaster Restaurant in Georgia.
The Brenham barbecue favorite just opened this weekend.
It’s the brainchild of pitmaster Leonard Botello IV, who first opened his Hill Country smokehouse in 2015. Since then he’s earned heaps of accolades in Brenham, including a top-ten spot on Texas Monthly’s list of the state’s best barbecue joints.
