There is something comforting about cozying up on the couch with a bowl of soup after a long day. Interestingly, the word, ‘restaurant,’ (derived from the French word restaurer meaning “to restore”) was first used in France during the 16th century to describe a highly concentrated soup sold by street vendors and advertised as an antidote to physical exhaustion.

 

A few years ago while living in Los Angeles, I discovered the joys of Mexican soups and stews. A couple of notable favorites include Birria and Caldo de Res, but by far my favorite Mexican soup is Albóndigas, which literally translates to "meatball" in Spanish. Luckily, I was able to jot down a family recipe from a friend, whose mother makes an amazing version.

 

What’s great about Albóndigas is that it's super-simple with little precision required. It's a hearty and rustic soup that makes for a quick one-pot meal, perfect for those nights when you're in need of a little TLC.

chicken braised in filipino cane vinegar. a sort of über-refined adobo

1/2 onion, sliced thinly

3 cloves of garlic, chopped

1 14 oz can of falgeolets or other bean

1 tsp thyme, dried or 1 TBSP of fresh thyme

1/2 tsp celery seeds

salt and pepper to taste

2-3 jumbo sausage links

1 small zucchini, cut in medallions

3 tomatoes, chopped

 

Preheat oven to 450F. Spray inside of Dutch oven with olive oil.

place onion and garlic in base of pot. Drain beans and pour into pot in a smooth layer. Sprinkle with thyme and celery seeds. Season with salt and pepper. Arrange sausage links atop of beans.

Toss in zucchini and top with tomatoes. Season again with salt and pepper. Cover and bake for 35 mins.

 

** I used kidney beans instead of flageolets, and used a can of 14oz diced tomatoes. I didnt have any celery seeds, but used celery salt instead. Plus everything was tossed into a 3 quart dutch oven.

Baking brinjals does lovely things to them, and they don't get a chance to become oily edible sponges (which pan-frying will do to them every time). A tonne of tomatoes, slow-cooked to melting tenderness, is essential to this recipe, as are the sweet onions and the oomph of garlic. Lunch to swoon over -- even as cold leftovers!

Ming Tsai - One Pot Meals Demonstration

Visitors shopped for holiday gifts and met the Native American artists who make made them at our Winter Moon event on Nov. 30, 2013. At 2 pm, visitors also watched a fashion show featuring wearable art and accessories made by from the market’s artists. Toni Weeden, who has a reputation for making delicious one-pot meals, gave visitors the opportunity to sample traditional Native food cooked over an open fire on the 17th c. Pequot Farmstead.
