One of the oldest methods of food preservation is drying food. Drying or preserving dried fish in the sun is a method of keeping fish in the sun to remove water. Because of the water, various micro-organisms survive and help the fish to rot. At present the son and daughters of many fisher families of Bangladesh have taken this job as their profession.
