Soft shelled mudcrab which have recently molted their old exoskeleton and are still entirely soft found by Fijian boys from Mali Island from their nearby mangrove forest.

Tasting like crab served in spiced "Kani Miso"....this was an umami bomb with the mixture of crab roe and cured egg yolk.
Crab has always been popular with these menus but this was certainly a memorable one with the complexities of tastes and textures.
Sweetness was not just from the crab itself but also from cubes of crunchy celtuce floating in the rich crab roe and cured egg yolk sauce.
Rich, creamy, sweet but still refreshingly tasty, this was a dish that left myself pining for more.....
