Chocolate fondant with cherry ice-cream

Ingredients (Serves 20)

I came across this recipe just after Christmas. It is a bit tricky to get it looking as good as this picture, but it's worth it - tastes yummy and looks like a work of art.

For the chocolate fondant

500g Valrhona Tropilia (54%)

500g butter

250g sugar

500g whole egg

200g yolk

100g flour

For the chocolate tuile

80g water

150g butter

90g glucose

270g sugar

4g pectin

15g cocoa powder

80g Valrhona Guanaja (70%)

200ml milk

20ml yogurt

50ml cherry purée

25g griottes

20g white chocolate

Method

For the fondant, mix the Tropilia chocolate into the butter, then melt together. Add the sugar, whole eggs and egg yolks slowly, then fold in the flour. Pipe the mix into 20 greased rings and leave to rest for one hour in the fridge. Cook for 10-12 minutes at 180ºC and serve straight away.

For the tuile, boil the water, butter and glucose. Add in sugar, pectin and cocoa powder and stir thoroughly. Cook for one minute. Dissolve the Guanaja chocolate in the hot syrup, then rest for two hours before using. Spread tuile mix on to Silpat and cook at 180¡C for nine to 10 minutes. This will make about 40 tuiles.

For the ice-cream, mix milk, yogurt and cherry purée together and boil for one minute. Remove from the boil, then mix white chocolate and griottes. Freeze mixture to -18ºC, then pass through Pacojet to obtain a smooth consistency.

Bevor das Jahr in die gänzlich ungemütliche Winterzeit über und zu Ende geht, öffnet MUNDO MIX noch einmal seine Pforten. DJ Grace Kelly (radio multikulti) bleibt mit ihrer monatlichen Party Mundo Mix mobil und zieht auf der �Club-Tour Kreuzberg� im Dezember in den Festsaal Kreuzberg ein.

Zu Gast, erstmals in Kreuzberg, ist dann der angesagteste Liveact aus dem Prenzlauer Berg: RotFront.

Mit ihrer einzigartigen Mischung aus sowjetischem Easy Listening, ungarischem Rock'n'Roll, Zigeunermusik, Reggae, Ska, Klezmer, Cumbia, Punk und HipHop gelten sie als eine der stimmungsvollsten Kapellen Berlins. Sie selbst bezeichnen ihren Mix als Emmigranski Raggamuffin, doch wie man das Kind auch nennen mag, eines steht fest: RotFront gehen über die Gehörgänge direkt in die in die Beine, streuen Glückshormone aus und versprechen beste Partystimmung bis in den Morgen.

Mal wird auf Ungarisch, mal auf Russisch gesungen, auf Englisch gerappt oder auch auf Deutsch getextet. So international wie die Bandmitglieder, die u.a. aus der Ukraine, Russland, Ungarn und Deutschland kommen, sind auch ihre Sounds: Zwischen Berliner Metropole und einem Hauch osteuropäischer Seele, zwischen groovenden Beats und entspannter Coolness, mit Augenzwinkern und Humor, sich selbst spiegelnd und auf die Schippe nehmend.

Gegründete wurde die Band im Dezember 2001 von Russendisko-DJ Yuriy Gurzhy und dem ungarischen Musiker Simon Wahorn (ex-Balaton, Batu Karmen). Kennen gelernt haben sich die beiden Sänger, die bis heute in unterschiedlichen Sprachen auf der Bühne agieren, einst in der Russendisko.

Im Anschluss an das Konzert legt Grace Kelly (Brasilien) unterstützt von Don Rispetto (Radio Kanaka International) aka Don Rispetto (StreetUniverCity) die richtigen Sounds für eine lange Partynacht auf die Plattenteller. Ihr extrem tanzbarer Stil-Mix aus neuer brasilianischer, orientalischer und afrikanischer Musik, gewürzt mit Latinelektrik, modernem Pop und Rock bis zu Reggae erfreut sich ebenfalls bereits seit sechs Jahren großer Beleibtheit in Berlin. Ihr Musikmix ist modern, mit einer Abneigung gegen kommerziellen Mainstream. Von Brasil und Latin ausgehend, sorgt auch die Musik anderer Kulturen dafür, dass Mundo Mix beste Dancemusic und maximalen Groove auf der Tanzfläche verspricht ohne Klischees zu strapazieren. Kollege Don Rispetto würzt diese Grooves mit Reggae, Dancehall, HipHop, Socca und schrägen mediterranen Klängen aus seiner neapolitanischen Heimat.

Student groups competed to determine who could create the best -- by popular vote -- non-alcoholic beverage.

I decided to try something a little different, so I decided to get a mixing bowl, some peaches and a lemon slice and fill the bowl with water. I was intending to get a shot of the lemon splashing under water, but most of the time, the lemon slice went out of the frame, so this was my favourite shot.

These are two models of the Elgin Durabalance watch from the late 1950s, the high (and final) water mark for American made wrist watches.

A while back I got a working model 730 movement (at top), but needed a case to fit it. A couple of days ago I found a nonworking model 750 (basically the same animal with a sweep second hand instead of the small inset dial) in its original, 14k gold filled Elgin case. Swapping the case from one to the other was as easy as opening the fridge and grabbing a Coke.
