As we walked back to our hotel, we passed by some seafood stalls on Tianjin Jie. I should have known that they were touristy gimmicky places, but nevertheless we were too tempted by the cuteness of these mini-lobsters.
They were each about 4 inches (10 cm) in length, but they looked exactly like miniaturized lobsters, claws and all!
Not very much meat in there. A little tough.
Heather explained to us later that they were river prawn.

Lemon Mini-Cupcakes
I baked these mini-cupcakes for Mother’s Day dinner. I modified a Rachael Ray Magazine recipe, which I have used before. (I’m not going to link to the recipe since it’s inaccurate.)
Ingredients for cake:
* 1/2 cup plus 2 tablespoons all-purpose flour
* 1/2 teaspoon baking powder
* 1 pinch salt
* Zest from 1/2 lemon
* 1/2 cup plus 2 tablespoons granulated sugar
* 7 tablespoons unsalted butter, at room temperature
* 2 (large) eggs plus 1 (large) egg yolk
* 3 tablespoons buttermilk
* 1 teaspoon vanilla extract
Ingredients for glaze/toppings:
* 1 1/2 cups powdered sugar
* 1 tablespoon (or 1 squeeze) fresh lemon juice
* 1 tablespoon water
* Sprinkles
Also:
* A little extra butter for greasing the pan or cupcake liners
Preheat the oven to 350°F. Grease a mini-cupcake pan or put a liner in each cup.
In a small mixing bowl, mix the flour, baking powder, salt, and lemon zest. In a mid-sized mixing bowl, beat the sugar and butter together. Beat in the eggs. Mix the dry ingredients into the wet ingredients. Mix in the buttermilk and vanilla extract.
Put about one tablespoon of batter into each cupcake pan cup. I use a tablespoon spoon to do this, and I get exactly 24 cupcakes every time.
Bake the mini-cupcakes until a toothpick inserted in them comes out clean. This takes me about 13-14 minutes. I cool my cupcake pan on a wire rack until it is cool enough to touch, then I remove the cupcakes to further cool on the wire rack. If re-using the pan, let it cool completely (10 minutes or so) before filling with more batter.
For the glaze, mix together the powdered sugar, lemon juice, and one tablespoon of water. This makes more than enough glaze for 24 mini-cupcakes. Lightly spread a little glaze on the top center of each cupcake. Note: the glaze will drip down the cupcake if there is too much. While the glaze is still wet, top with sprinkles.
