Low Carbohydrate Chocolate Chip Cookies - No added sugar, no added vegetable oils, healthy fats only

Grass Fed Rib Eye Steak cooked using Sous-Vide method.

 

100 grams of Rib Eye has 11 grams of monounsaturated fat, about the same amount of monounsaturated fat as there is in 1 tablespoon of olive oil. 1 tablespoon of olive oil has 1.4 grams of saturated fat, a little more than in 1 slice of bacon (1.1 grams saturated fat). There is no food that has only one kind of fat. Rib Eye is a fattier cut of meat; a sirloin cut has 4.8 grams of saturated fat, or 3 tablespoons of olive oil’s worth.

 

We also now know there is no evidence that replacing saturated fat with carbohydrates is better for human health, probably the opposite is the case.

 

And, as expected, ingestion of the stake resulted in no rise in blood glucose, as tested with a continuous glucose monitor (glycemic index of steak =0 )

These are delicious low carbohydrate, healthy fat pretzels which I made as an alternative to the tasty ones served at our favorite local beer garden in Washington, DC.

 

They have the magical property of not raising blood sugar, because they have no grains (refined or whole) and no industrial vegetable/bean/seed oils.

 

Actually, no magic involved, it’s the science we learned in medical school, we are just now applying it :). Enjoy in good metabolic health.

Carbon footprint is more about cars and carbohydrates than cows. Climate change is a threat to human and planetary health. Metabolic disease is a threat to human and planetary health. Both statements are true.

 

This is my 2021 estimated carbon footprint. Compared to 2021, there’s a significant decrease related to removal of air travel, which along with not owning a car, elevates the relative % of carbon from diet, even though it’s still a small absolute number compare to other sources.

 

Diet is not the best way to mitigate carbon footprint. People who eat meat in pursuit of metabolic health are as capable and responsible mitigating their carbon footprint.

 

It’s very difficult, if not impossible, to accurately calculate one’s secondary source carbon footprint, because of the different assumptions made about lifestyle in each model.

Assumptions about diet don’t incorporate modern (or ancestral) approaches, which don’t include frequent snacking, refined grains, and other artificial foods, and do not incorporate impacts of greater health care use from these things.

The much greater impact is on managing energy use

Verified carbon offsets can be purchased to mitigate all of these sources.

The much greater impact overall is in large organizations doing this at scale - reducing fossil fuel use and investing in renewable energy and regenerative agriculture projects.

I’ve purchased offsets through the United Nations so I’m using their calculator as a baseline. A more comprehensive calculator with good documentation developed at UC Berkeley is also available (see sources).

 

A meat vs a vegan diet may increase emissions by 0.8 - 2 metric tons of carbon emissions/person/year. The UN model adds 1.21 tons for a meat-inclusive diet, I’m agreeing with that number for my estimate.

 

#MetabolicHealth adaptations such as real food, low carbohydrate, healthy fat approaches may lessen emissions because they include more nutrient dense foods, and less (or no) grains, snacks, or artificial foods.

 

Not owning a car reduces emissions by 2.51 metric tons / year. Not having diabetes reduces emissions by 1.99 metric tons per year in medications alone.

 

The UN calculator does not incorporate emissions from goods and services, including health care.

 

The greatest carbon emissions come from energy use :

Plants are a great vehicle for saturated fat, even better when transformed by monogastrics and ruminants into zero glycemic index, nutrient dense edibles.

Studies citing the alleged harms of saturated fat failed to take into account the way they are consumed in the standard American diet (SAD), which is why current science does not support limiting saturated fat intake to less than 10 % of calories.

Health and sustainability are inextricably linked. Sick humans on a healthy planet are not more sustainable than healthy humans on a sick planet.

 

I applaud WeWork’s commitment to the environment. Climate Change is a threat to human health.

 

Unfortunately, becoming meat free for employees is not the most effective or science-based way to support this commitment.

 

At the same time that meat is not being catered by corporate events, there are copious quantities of insulinogenic and diabetogenic foods served and promoted within the premises. From a science perspective, the carbon emissions from agriculture in the United States are 10% of the total. The carbon emissions from health care in the United States are 10% of the total.

 

A population struggling to prevent insulin resistance (up by 41% in Washington, DC, 76% Nationally, 1.67 million people in MD/VA/DC have pre-diabetes or undiagnosed diabetes, most don’t know it) will create a most unsustainable environment for all, through increased use of pharmaceuticals and associated health care. It’s estimated that the use of $200/month of pharmaceuticals equals the offset from going completely vegan in 1 year. Same for taking one (1) transcontinental flight.

 

A better, more science-based approach, is to implement a sustainable food policy that incorporates health and the environment together.

In this century we now know "you are what you do with what you eat.” As predicted, no increase in blood glucose from these meals.
