Grass Fed Rib Eye Steak cooked using Sous-Vide method.
100 grams of Rib Eye has 11 grams of monounsaturated fat, about the same amount of monounsaturated fat as there is in 1 tablespoon of olive oil. 1 tablespoon of olive oil has 1.4 grams of saturated fat, a little more than in 1 slice of bacon (1.1 grams saturated fat). There is no food that has only one kind of fat. Rib Eye is a fattier cut of meat; a sirloin cut has 4.8 grams of saturated fat, or 3 tablespoons of olive oil’s worth.
We also now know there is no evidence that replacing saturated fat with carbohydrates is better for human health, probably the opposite is the case.
And, as expected, ingestion of the stake resulted in no rise in blood glucose, as tested with a continuous glucose monitor (glycemic index of steak =0 )

I applaud WeWork’s commitment to the environment. Climate Change is a threat to human health.
Unfortunately, becoming meat free for employees is not the most effective or science-based way to support this commitment.
At the same time that meat is not being catered by corporate events, there are copious quantities of insulinogenic and diabetogenic foods served and promoted within the premises. From a science perspective, the carbon emissions from agriculture in the United States are 10% of the total. The carbon emissions from health care in the United States are 10% of the total.
A population struggling to prevent insulin resistance (up by 41% in Washington, DC, 76% Nationally, 1.67 million people in MD/VA/DC have pre-diabetes or undiagnosed diabetes, most don’t know it) will create a most unsustainable environment for all, through increased use of pharmaceuticals and associated health care. It’s estimated that the use of $200/month of pharmaceuticals equals the offset from going completely vegan in 1 year. Same for taking one (1) transcontinental flight.

They have the magical property of not raising blood sugar, because they have no grains (refined or whole) and no industrial vegetable/bean/seed oils.

More experiments, usually unintentional….
Impact on glucose using a continuous glucose monitor after ingestion of low carbohydrate chocolate chip cookies, combined with distilled spirits (no added sugar) and healthy fat meal, in a fat adapted, #LMHR individual. As the chart shows, there is a more profound hygoglycemic excursion, likely due to reduced liver gluconeogenesis competing with alcohol processing. Interstitial glucose excursion is also more pronounced in probably insulin sensitive person on an low-carbohydrate, healthy-fat diet. The hypoglycemia was asymptomatic.
There are no added sugars (with perhaps a small impact from the low-carbohydrate chocolate chips) and no industrial vegetable oils used in the cookies themselves.
Feel free to check my work. Wondering, @RightHandSiobhan @DaveFeldmanKeto, if this situation is similar to a mini-glycogen storage deficit created by alcohol competition for liver resources in #LMHR…

I decided against ingesting a large glucose/fat load on the last day of the CGM sensor I was wearing, and elected to eat this low glycemic index meal instead (glycemic index = 0).
The embedded glucose trend combines 15 evening mealtimes and shows a flat glucose response. Calculated HbA1c over 2 weeks is 4.7%.
I am not interested in telling other people what to eat. However, I realize that I enjoy and can sustain a real food, healthy fat, low carbohydrate eating pattern quite easily, with good results.
While I am not diabetic or pre-diabetic, I'm awed by the ability of the human body to regulate itself and the ability of humans in which regulation is compromised to achieve their life goals.

A study of 10 keto-adapted athletes and 10 high-carbohydrate adapted athletes describes typical cholesterol changes seen in people who go on low carbohydrate, healthy fat (LCHF) diets. Often only one number is looked at (LDL-C) in criticizing this approach, however there are other changes that may be compensatory at the same time. It’s not known exactly why this happens or if it increases CVD risk.
Noting also from the data above that while none of the athletes (high carbohydrate and low carbohydrate) met criteria for insulin resistance, markers of insulin sensitivity (TG/HDL-C ratio and Lipoprotein insulin resistance index) were significantly better in the low carbohydrate group.
“Ketogenic diets in normal-weight and overweight non-athletes result in a moderate increase in total, LDL-C and HDL-C concentrations relative to low-fat diets. The observation that highly trained, ultra-endurance athletes consuming a very low-carbohydrate/high-fat diet exhibited a more dramatic and uniform hypercholesterolaemia is counterintuitive since high-volume exercise tends to lower total and LDL-C levels. The explanation for this paradox may involve high intake of cholesterol and saturated fat combined with high-energy demands for lipid metabolism characteristic of the keto-adapted phenotype. LC athletes who adopt a ketogenic diet may experience an expansion of their endogenous cholesterol pool during the adaptation phase of the diet, after which they maintain greater circulating cholesterol levels.”
