Steak has more unsaturated fat than saturated fat (30% of fat is saturated, compared to 24% saturated fat for salmon) & saturated fat is no longer linked to cardiovascular disease.

Low-carbohydrate, healthy fat chocolate chip cookies - no refined grains, no added sugar, no industrial vegetable oils

This paper, read in isolation, paints a grim picture of diabetes remission in the context of current care standards, even in the highest performing health systems in the United States - a greater percentage of patients die than go into remission in a typical year.

 

However, speaking to one of the authors gives a much different picture, one of hope (make sure you swipe to see all 3 slides together).

 

This is a great example of the era of social scientists, who go beyond the peer review process (in person communication, social media) to convey their findings and motivations in the interest of population health. Health and sustainability are inextricably linked. Sick humans on a healthy planet are not more sustainable than healthy humans on a sick planet.

 

I applaud WeWork’s commitment to the environment. Climate Change is a threat to human health.

 

Unfortunately, becoming meat free for employees is not the most effective or science-based way to support this commitment.

 

At the same time that meat is not being catered by corporate events, there are copious quantities of insulinogenic and diabetogenic foods served and promoted within the premises. From a science perspective, the carbon emissions from agriculture in the United States are 10% of the total. The carbon emissions from health care in the United States are 10% of the total.

 

A population struggling to prevent insulin resistance (up by 41% in Washington, DC, 76% Nationally, 1.67 million people in MD/VA/DC have pre-diabetes or undiagnosed diabetes, most don’t know it) will create a most unsustainable environment for all, through increased use of pharmaceuticals and associated health care. It’s estimated that the use of $200/month of pharmaceuticals equals the offset from going completely vegan in 1 year. Same for taking one (1) transcontinental flight.

 

A better, more science-based approach, is to implement a sustainable food policy that incorporates health and the environment together.

Grass Fed Rib Eye Steak cooked using Sous-Vide method.

 

100 grams of Rib Eye has 11 grams of monounsaturated fat, about the same amount of monounsaturated fat as there is in 1 tablespoon of olive oil. 1 tablespoon of olive oil has 1.4 grams of saturated fat, a little more than in 1 slice of bacon (1.1 grams saturated fat). There is no food that has only one kind of fat. Rib Eye is a fattier cut of meat; a sirloin cut has 4.8 grams of saturated fat, or 3 tablespoons of olive oil’s worth.

 

We also now know there is no evidence that replacing saturated fat with carbohydrates is better for human health, probably the opposite is the case.

 

And, as expected, ingestion of the stake resulted in no rise in blood glucose, as tested with a continuous glucose monitor (glycemic index of steak =0 )

Low Carbohydrate Peanut Butter and Jelly Cookies - Vegetarian (1 egg in recipe), no added sugar.

 

Because life is too short and too amazing to suffer from metabolic syndrome.

The American Diabetes Association has published its Standards of Medical Care in Diabetes - 2020, and includes statements on the effectiveness of managing carbohydrate intake for people with diabetes and those at risk for diabetes. The standard advises replacing sugar-sweetened beverages, including fruit juices, with water. The American Heart Association continues to certify 100% fruit juice as heart-healthy in its latest list of heart healthy foods.

 

“People with diabetes and those at risk are advised to replace sugar-sweetened beverages (including fruit juices) with water as much as possible in order to control glycemia and weight and reduce their risk for cardiovascular disease and fatty liver B and should minimize the consumption of foods with added sugar that have the capacity to displace healthier, more nutrient-dense food choices.”

The American Heart Association operates a food certification program “Heart-Check”

 

I completed the check with two different situations, a normoglycemic individual and a person with hyperglycemia. Both individuals are advised not to skip dessert, with a key word substitution - “ Your sweet tooth won't miss the added sugars.” for the person with hyperglycemia, “Your sweet tooth won't miss the saturated fats” for the person without. The banana advice is taken away for the person with hyperglycemia.

 

The assessment does not ask about validated measures of heart health, including triglycerides or HDL.

 

The assessment does not include or ask about consumption of 100% fruit juice as a sugar sweetened beverage. American Heart Association certifies 100% fruit juices in practice.

 

In September, the AHA came under fire for posting a breakfast recipe on Twitter that suggested adding maple syrup honey and orange juice to an already high-carbohydrate mixture for heart health.
