Ingredients: banana, milk, eggs, flour, baking powder, baking soda, brown sugar, melted butter and pecans. You can also add plain yogurt to make the muffins moist.

While it now looks like a bowl of mushy oatmeal (hence why I put it in the oatmeal-coloured Homestead bowl), it will probably look a whole lot worse 24 hours from now. About 16 hours after that, it SHOULD look a whole lot better... like three glorious old-fashioned potato bread loaves. We shall see!

 

Postscript... my math skills are 'off'... I think the finished product will be ready by late in the day Friday... or I may retard it in the fridge overnight Friday to have fresh-baked bread for Saturday morning. 24 + 12 + 8 + 8 = a whole lotta time... this better be worth it!

this year, for our tradtional,

made-from-scratch, christmas cheesecake,

we tried to swirl in strawberry preserves.

 

oh man it was sooo goood!

then again, it's hard to mess up good cheesecake.

Cedar & Spice w/Orange peel

Finished the last of this year's sap, producing a rich, deep maple syrup sweet, intense and yet still delicate. Highest yield yet! However this year, it comes with a crazy amount of sediment. Since we are doing small quantity, hobbiest, maple syrup production, we don't have a pressure filter. Which this year seems to have been almost a requirement. We haven't had much issue with particulate or sediment when sugaring in the past, and making sure we drip filter (using coffee filters), has been enough to keep most jars clear of naturally occurring particulate. But not this year. I'll be doing some more research to find out if this is because of the late season, and thus more nutrients in the sap or something else. Chocolate Cake:

3/4 cup butter, softened

3 eggs

2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 teaspoon baking soda

3/4 teaspoon baking powder

1/2 teaspoon salt

2 cups sugar

2 teaspoons vanilla

1-1/2 cups milk

 

1. Lightly greese bottoms of two or three 8-inch round cake pans.

2. Preheat oven to 350 Degrees F.

3. Beat softened butter, eggs and sugar.

4. Add cocoa powder, baking soda, baking powder, salt, vanilla and milk.

5. Slowly add flour then scrape sides of bowl.

6. Mix on medium speed for two minutes.

7. Pour in pans and bake for 30 to 40 minutes.

8. Let stand ten minutes then use knife to loosen around edge of pans. Place on cooling rake until cool.

 

(I think I will add a package of chocolate or vanilla pudding next time for a moister cake - although this is not too bad.)

 

Frosting:

4 Squares of unsweetened baking chocolate

1 package (16 oz) powdered sugar (about 4 cups)

1/2 cup butter

2 tsp vanilla (extra teaspoon for good flavor)

1/3 cup milk

 

1. Heat butter and unsweetened baking chocolate in microwave about 2 minutes (until melted), mix with electric mixer

2. Add powdered sugar and vanilla

3. Add milk gradually while mixing on medium speed until desired thickness.

4. Frost

 

Hot crossed buns 2019. I love hot crossed buns, and I've been working to perfect my recipe for 5-10 years. I missed last year (long story) but the year before I made a batch that was very similar to a commercial bun. A bit change from my history of small dense spice buns. I'd prefer a hybrid and this is pretty close. I got some brass shims from a hardware store--that and the electrical tape were the only things I had to buy. The shims are super thin pieces of brass that I could easily poke a hole in with a sewing pin, and cut with scissors to have it fit inside the box.

Those of you who have Windows 10 can purchase a little preset that will make these tiny planets for $1.50 .. I have done that but I wanted to see just what the difference was in the homemade one and the preset one .... This is what I see... The one I made manually needs to be blended down at the bottom and I haven't learned just what to do about that line but I do know it can be done... The formula to make your own is available if you would like to have it... Just a fun thing to play with...
