This is one of my standards, because 1) it's super easy, and 2) you can put lots of healthy stuff in it! Ok, yeah, most everything I make is like that.
For this turkey meatloaf, I mixed the ground meat with grated carrot, diced onion + celery, rolled oats, Worcestershire sauce and an egg. I usually also add zucchini or finely pulsed spinach / kale / beet greens, but I didn't have it today. While it baked at 350, I slid some potatoes (with olive oil, garlic powder and parsley flakes) on the side at the same time. In the blue container is homemade sauce (tomato + maple syrup). I made a bear onigiri with yellow pear tomato hat because it's been so long since MisterMan had a bento with a face.
Peapods and purple carrots skewer. Dark red pluot ( the best!), blackberry, lychee, orange sunsugar tomatoes, blueberries, and a plum called mango plum, which looks just like a big apricot but tastes much sweeter and juicier!
First day of 1st grade went well ~ whew! He was happy to see his pals and they went easy on the schoolwork.... :)
We tried our hand at meatloaf this evening. I found a recipe online I thought would work. It had a few too many onions in my opinion but was very flavorful and quite delicious.
recipe-
1 pound ground beef
1/2 medium onion finely diced
1 clove garlic minced
1 egg beaten
1/2 cup italian bread crumbs
1/3 cup catsup
1 tbs. brown sugar
1 tsp. salt
1 tsp. pepper
2 tbs. olive oil
Preheat oven to 350
Saute the onion, garlic and olive oil on medium until soft, and translucent (about 6 minutes) and pour into a mixing bowl. Add everything but the catsup and sugar. Mix thoroughly with hands and form into a loaf. Place on a shallow walled baking pan and cook for 50 minutes. Mix catsup and sugar and pour over loaf. Cook for an additional 10 minutes. Allow 5 to 10 minutes to cool.
As I was "scaring" up dinner, I found an open box of lasagna noodles in the pantry, so we dressed up tonight's mealoaf. Boo! Recipe is here:

The traditional way, this time! There would be a veggie, but right about this time our microwave decided to impress us with an internal fireworks display..

this is basically just what I used to do for regular meatloaf..but I substituted some vegetarian "meat" crumbles, which are in the frozen section here, and this stuff called "gimme lean" vegetarian "ground beef" (it's in a tube...found in the produce section). I use one whole package of each of these things, then add to it:
2 eggs
1/2 cup bread crumbs
about 1/2 cup ketchup
about 1/4 cup mustard
1diced green pepper and 1 diced yellow(or white or whichever is available to you) onion, sauteed together in about 2 Tbsp olive oil with 1 Tbsp of ground cumin added towards the end of the saute.
about 1/4 cup milk
Salt and pepper
-Mix all together well (I just use my hands) and press into a 9x5" loaf pan.
Spread a mixture of ketchup, mustard and brown sugar over the top for a glaze, and bake at 350f for about one hour. Serve with mashed taters and some veggies and you are good to go!

Well, meatloaf is not an easy thing to photograph!!(you can't make it all purdy) lol Especially, when the kitchen is dark & there's no sun streaming in to help....
We had whipped cauliflower to accompany the meatloaf. Yum.
The boys loved it!!! Gene immediately said BAM! ... Caleb said it was his favorite one now & compared it to eating ribs, especially the caramelized topping.
Recipe, for those interested. I hope I remembered all the ingredients I threw together....
Barbecue Ranch Meatloaf
2 lb. ground beef
3 eggs
3/4 c. plain or panko bread crumbs
1/2 c. favorite BBQ sauce (I had Jack Daniels honey smokehouse)
1/2 packet ranch dressing mix
1 1/2 t. salt
1/2 t. pepper
2 T Worcestershire sauce
1T. garlic powder
1/2 an onion, minced
Topping:
1/2 c. BBQ sauce
1 T. ranch dressing mix
Mix all ingredients, except ground beef, together in large bowl. Add ground beef and lightly mix. Place in a bread lined (bottom only) large loaf pan. Cook at 375* for one hour or so…. the last 10 or so minutes add topping.
If you want to add a bit of caramelization to the topping place oven to broil for a minute or so when meatloaf is done.
my oldest cat, meatloaf, passed away the first week of december. i found this funny picture i made of her using photobooth on my mac this morning. seeing her looking so healthy and alive here brings back a lot of bitterweet feelings.

I love to make meatloaf and this is my Mother's recipe with a twist, ground turkey! Dijon mustard and worcestershire sauce add that little something extra.
1 pound turkey
3/4 cup italian bread crumbs
1/2 medium onion
1 clove garlic
2 medium eggs
1 tsp. salt
1/2 tsp. pepper
1 tsp. dijon mustard
1 tsp. worcesttershire sauce
1/4 tsp. tobasco sauce
1/3 cup catsup
1 tbsp. brown sugar
2 tbsp. olive oil
Sautee Onion finely chopped with garlic and oil on medium for about six minutes. Add everthing but the catsup and sugar to a bowl and mix well. Form into a loaf and bake at 350 for a half an hour. Combine catsup and sugar, glaze and bake for another half hour. Enjoy!
