I can’t believe I haven’t made lasagna since I went #vegan ten years ago now. I made the sauce for this one using fried onion, garlic, finely chopped carrots and celery, tomato paste, crushed whole canned tomatoes, 1 crushed dried chilli pepper (seeds removed), green peas, oregano, fresh basil, a squirt of Bragg's all-purpose liquid soy seasoning (aka Bragg's Aminos), a teaspoon of vegan worcestershire sauce and a tablespoon of coconut nectar (any vegan sweetener would do)..
After simmering for 90 minutes or so, I layered sauce, cooked lasagna noodles, crumbled firm tofu, chopped spinach, a little Tofurky veggie ground (or cooked brown lentils), Daiya vegan mozzarella shreds and Galaxy vegan parmesan till the roast pan was full.
Baked covered at 400ºF (200ºC) for 35 minutes and uncovered for another 10 minutes with a little more parmesan.
I cut and served it after sitting out for another 10 minutes.

Everyone knows pizza… but the pizza that made delicately with same old way as in Naples, Italy are still not sold or well-known in Bangkok… yet.
Scoozi is one of the restaurant or I should say Pizzeria (including delivery service) that is able to serve pizza with the same old style in thin pizza bread … you are able to see the big high heat oven including a tent card on the table or even plate mat mentioning about their way of cooking pizza in oven made from lava rock !!!
Pizza at Scoozi has a lot of variety from traditional, special, hot & spicy, and chef’s special recommended. The most famous and must try is the Rucola pizza topped with real rocket salad and fresh small tomato … who could imagine that real fresh salad on top of a hot plate pizza tastes that good.
My favourite is Tarfuro pizza which has types of cheeses together (Mozzella, Fontina, Gorgonzolla, Pamesan) with champignon and truffle oil … so tasty with cheese and the strong truffle oil aroma!!! Scoozi also has Salsiccia which is topped with home-made Italian sausages – if it’s not enough, there is also a dish that consists of Italian sausages alone.
Ordering pizza at Scoozi don’t worry that you need different type of pizza but think that you cannot finish one – Scoozi solve this problem by allowing us to order 2 different types in one pan … That’s what I like about it …
Scoozi also has pasta, antipasta, salad, sandwiches, or even desserts (Italian) and ice-cream available. Don’t forget to order the great pizza bread – it goes well with olive oil available.
I always order PESTO SAUCE pasta since the pesto sauce is so thick and dense in flavor especially when it was topped with fresh cherry tomato. Pomodoro pasta is also great since it helps one not to feel queasy much after lots of pizza and cheese … since it was made from fresh tomato sauce and put into just the right amount on pasta itself.
