The machine will pound the mochi and add water to the dough itself for good texture. It takes about 10 minutes or so for pouding process (and the machine will beep), but if you'd like to have chewy-er mochi you can leave the dough in the machine to be pounded a bit longer. When you decide to stop the pounding, just push the purple button.
