Measure the distance from a corner to the center of teh paper. Then, mark 2/3 from the paper to the center.
My corner-center distance was 4.25", so I marked 2.75" from the corner.

Use a spatula of some kind. (this one came from a dollar store pack of three. It's been sharpened with a home-knife-sharpening-tool.)
Grab a glop of solder paste onto it, this is way more than you'll need for even 25 boards, but about the right amount to use.
This is PM202 non-RoHS paste that was bought after it's date code (for pennies on the dollar) and that's been sitting on the desk for a few months. It works fine. I like to warm the paste up until it spreads like peanut butter -- you can do this by continually scraping it back and forth between two scrapers, like toxic playdough.

So: smear a dollop of pesto over the chicken whilst it's in the pan. Then, carefully place the gorgonzola on top.
Now: take a fish slice, flip it so the cheese is face down in the pan.
That's right. Good, innit?
Now flip it back after about five seconds - you're just melting the cheese very quickly. You should be able to scrape it all back off the pan.
