Although ER’s father had never handed down the recipe to him, he tried to make Foochow dumplings anyway. With the packet of yanpi bought from Yue Hwa, he made them here for the first time after moving to Punggol 21.
We bought the ingredients days before New Year’s Eve, but was too busy to make them in advance. Today, Chinese New Year’s Eve, with words from him, I helped to prepared and seasoned the filling. While I was busy with getting lunch ready, he did the wrapping and the dumplings were in all shapes and different sizes :) No complains, we only chuckled at the sight including him! The good thing about yanpi is that the finished dumplings were placed on top of each other without the problem of sticking! Steaming, they were placed in an oil plate and steamed in batches in single layer. We like the tasty dumplings although my father-in-law’s dumplings were second to none!

Porridge is one of the great comfort foods when one is not feeling well. While ER had pork ball porridge, I had plain porridge with Marmite. It’s a great relief to tie over the nausea feeling that came on with migraine.
This evening I craved for fried kway tiao/flat rice noodles. When I mentioned this to ER and he said, “You should not be eating it because cockles are no good for you when your finger is till healing.” But, I insisted like a kid demanding, “Nope, I want to have it today!” May be he didn’t know that I had checked with the doctor that eating seafood generally will not cause further problem in my case. [It is a normal practice that some of us will avoid seafood when there is a wound.]

This is good for breakfast or snacks. They were easy to prepare, just dipped triangular pieces of white bread into seasoned beaten eggs and pan-fried in olive oil. Roughly allow an egg for two slices of bread [4 triangles]. If you so prefer, either lots of chopped spring onions or mixed Italian herbs may be added to the beaten eggs for extra flavour.

The fragrance from pandan leaves has permeated into the birdnests dessert and the taste was good! The taste of egg white in birdnests soup has almost disappeared!
Recipe:
Pure birdnest soup:
Soak some bird nests in hot water for 1 hour or in tap water for 4 hours. Rinse with water twice. Drain well. Double boiled with enough of hot water to cover and pandan leaves for one and a half hours. Add rock sugar to taste.
