This location seemed like a cool idea because it catches all the brilliant light from the skylights and is also visible from the first floor.

Very tasty. It doesn't say in the recipe but you should always season (S&P). I also added chopped scallions & fines herbes at the end of the cooking. Very nice, I will make it again.

1 cup carrots, chopped
1 cup celery, sliced
4- 1/4 cups water
2 cups chicken stock
1/2 cup pearled barley
1/2 lb cooked chicken
Heat oil in a heavy saucepan or Dutch oven over medium heat. Sauté next 3 ingredients 4-5 minutes until onion is tender. Add remaining ingredients, except chicken. Add cooked chicken and continue to simmer 5-10 minutes or until chicken is heated through and barley is tender.

St. Paddy's Day Soup -
Soup broth: a can of Campbell's Homestyle Butternut Squash Bisque Soup, 5-6 cans of water. (The soup is a real plus for this recipe!) Season with 1 1/2 Tbsp. of "Superior Touch" Ham Base bouillon mix, 1 Tbsp. parsley flakes, 1 tsp. garlic, and 1/2 tsp. white pepper.
A half-a-pound center-cut ham cubed, 5 potatoes peeled and cut, baby carrots cut in small pieces,1/2 small head of cabbage shredded, a small onion sliced in small pieces, four green onions sliced. (Optional: add chopped celery, for more green, healthy veggies!)
Bring to a boil and then simmer on the stove! Serve with yeast rolls or cornbread! Leftovers can be stored in a gallon freezer Ziploc bag. This soup may be even better on the second day!

Bits of beancurd left behind while making stuffed beancurds were used up in this dish. The beancurd bits were mashed to combine with extra fish paste and minced meat mixture to fill the ladies' fingers. The leftover were made into beancurd balls as shown here :)
