This is a composit of three images manually focus stacked in GIMP. It was illuminated by one Nikon SB900 speedlight in Manual mode, fired at 1⁄2 power through a Neewer 24" x 24" gridded soft box camera right, 2-feet away and aimed down at 45-degrees.
The SB900 was triggered by two PocketWizard PlusX's.

i only had 1kg of onion, the recipe asks for 1kg 500gr
i reduced the sugar accordingly but the chutney wouldn't thicken
late in the cooking i added more sugar, that did the job :)
i didn't have any mustard or muscovado sugar so used replacements - plenty of mustard seeds and a dark brown sugar
i decided to use the handblender at the end of the cooking
as the chutney didn't look very pleasing to the eye
glad i did, suddenly looked like what it should be, onion chutney

throughout the cooking the lamb rests on top of a trivet of vegetables, each vegetable is cut very small. these vegetable pieces soak up any meat juices. they were added to the stock with oxo and blended using the handblender

bramley cooking apples and seventeen small pears, all flavoured with cinnamon and cloves, cooked on a low setting in the slow cooker for 24 hours. after a few hours removed lid and stirred with the handblender, replaced lid, when cooked spooned into the sterilised jars and placed in the fridge
it was an experiment. i tried to make pear butter but after a few hours i tasted the mixture. it was inedible. too sweet. i had added too much sugar! luckily rather than bin it i had some unsweetened bramley cooking apple cooking on the stove and poured some of the unsweetened bramley cooking apple into the slow cooker, mixing with the pears until i was happy with the taste. the consistency is thick but not as thick as the plum butter. it'll do

using a meat thermometer to test whether the beef is cooked, much easier, saves multiple prodding, losing the juices and drying out the meat - kept viewing chefs recommending the meat thermometer and decided to buy one, glad i did! simple to use

homemade mixed bean soup and mint blended with spinach and seasoned with coarse black pepper
mixed dried beans soaked in a pan of water overnight
(chickpeas, white beans, kidney beans, lentils, moong beans, haricot beans a cupful of each type)
next day mixed beans blanched and boxed for the freezer for as and when
today a boxed portion of blanched mixed beans was slowly cooked on simmer in a saucepan until mixed beans soft
added to the saucepan of cooking mixed beans was
water, extra virgin olive oil, concentrated tomato paste, two small pots of cauliflower stock and mixed bean stock, oxo cube, plenty of dried mint
at the end of the cooking the mixture was blended using a handblender
fresh spinach added
mixed bean soup seasoned with coarse black pepper
i've reduced my salt intake. for me there's enough salt in the stock cube and plenty of flavour in the bowl. i was getting trouble with my eyes because of far too much salt in my diet and not enough omega3 confirmed by my optician. increased my water intake, no more added salt just what's in a stock cube or any processed food that maybe on the plate or mixed in the ingredients eg concentrated tomato paste. omega3 added to the diet. all ok :)

I had some escarole left over from a potato mash a couple nights back, and vaguely remembering a recipe from Martha Stewart, I made soup.
It was surprisingly good. Usually, my experimental recipes never turn out so well.
For those who are interested:
The ingredients you'll need are:
half and onion, roughly chopped (let's keep it rustic)
1 clove garlic finely crushed
1 tomato diced
1 carrot diced
quarter red bell pepper diced
handful lentils
quarter head escarole chopped
1 vegetable stock cube
salt and pepper to taste
What you need to do:
- Sweat off the garlic and onions until translucent
- Chuck in the tomatoes, pepper, and carrots and saute for a few minutes
- Then add the lentils, and here's where I season with salt and pepper
- Add water to cover and throw in the stock cube (Martha wouldn't approve of this, but hey, I'm a busy girl, and this is what you do when you don't have homemade stock at hand - but hey, if you do, more power to ya)
- Let this all simmer on a gentle bubble for about 45 minutes, or until the lentils are really nice and soft
- 5 minutes before the soup is finished, add in the escarole.
Ta Da! Good with some crusty bread
Footnotes: This is one of the soups which you can make to your liking. Think mushrooms, diced potatoes, or even a handful of rice to add some body. You can also blitz this with a handblender if you want a more smoother texture. But I liked the rustic, peasant feel to this, so I left it chunky.

I made some hummus.
I followed Google's first response for 'humous recipe' at vegbox-recipes.co.uk/recipes/chickpea-recipe-1.php. It was startlingly easy.
Ever since I helped in the Okasional Café kitchen a decade ago, building salads day after day, and witnessed Strapping Lee make tonnes of perfect hummus in a blender I was determined to make my own. Back then you couldn't get away from home made hummus, all the vegan girls made it.
Along came ebay and I bought a blender but the particular one I got didn't cut the mustard and my determination for home made hummus dwindled away and these days I buy it every week for a fair bit of money for tiny tubs of it. It's a shame these intentions whither and decades pass whilst I dither.
Rachel's away but she left this hand blender that I'd not looked at yet. I wanted to make something of the day and of myself so I grabbed the blender. It says on it "FROM NOW ON, IT WILL BE MUCH MORE FUN TO BE IN THE KITCHEN". Wow.
Within minutes, hummus. Incredible. There it is, the real thing, a decade of prevaricating washed away in a couple of minutes. Can there be no turning back?
The recipe included salt but the instructions declined to use it; and it didn't include lemon juice but the comments on the page put you straight about that.
What a great way to get garlic down you! I added twice the recommended bulbs cos it's supposed to be so good for me for so many reasons including boosting your immune system that I try to cram as much down me as I can when I remember to eat it.
It's useful having the laptop in the kitchen for this. Tho my 'X server' broke, which is inconvenient in the mission-critical environment of the kitchen, mid-recipe. I had to carry it back out to the living room after a restart so as to put Firefox back in touch with chickpea-recipe-1.php. Maybe I need Internet access in the kitchen. Maybe the recipe would have been in the disk cache anyway.

I bought some peaches and strawberries at the Boulder Farmer's Market today and decided to try and make some panna cotta with these ingredients. Here's what I did:
Ingredients
4 small ripe peaches
1 pint fresh strawberries
1 pint heavy cream
1 1/2 cups sugar
1/2 cup white chocolate chipes
1 tsp. vanilla
2 small packets - gelatin
1. peel and unpit peaches. Chop into chunks.
2. Pour pint of heavy cream into a saucepan over medium-high heat.
3. Use masher or handblender to turn bowl of peach chunks into pulp. Incorporate 1/2 cup sugar into peaches.
4. Stir vanilla and peaches into cream. Bring to a soft boil.
5. Adjust heat to a simmer. Stir in gelatin.
6. Cook for 3 more minutes.
7. Pour hot mixture into deep ramekins or coffee mugs.
8. Place in refrigerator for 3-4 hours until set.
Strawberry Sauce:
1. Bring one cup sugar and 1/2 cup water to boil. Let cook for 6 minutes.
2. Mash strawberries in a bowl until pulpy then add to simple syrup.
3. Let cook for 4 more minutes.
4. Empty hot mixture into small syrup pitcher.
To serve:
1. Cut around edges of ramekin or mug to loosen the panna cotta.
2. Shake out mold onto a plate.
3. Cover with cold strawberry sauce.
I bought this during Macy's big Fourth of July sale on Thursday night, and have made three smoothies with it so far. I love this thing. I was a little disappointed it doesn't handle ice, but that's my fault for not reading the box well-enough in the store. I still love it. It's easy to clean, doesn't make much noise, and I can blend in the cup I'm going to drink out of -- which makes it even quicker and easier! I really enjoyed this product so far. It came with a whisk and food processor attachment which I haven't tried yet.

Friday's bento - the soup was never going to be successful after the hand blender burnt out mid-blend. I was resentful of it even before tasting. The remainder of the components were good - it just wasn't a lunch I looked forward to.
Captured this image of kitchen and homemaking items in the Bodie ghost town State Park Museum and gift shop in eastern California. Some of the identifiable objects are rolling pin, Wood lemon squeezer juicer, Wood smasher, Hand blender, Wood stove lid lifter, Asbestos 72-B SAD iron, several other irons, plus other items in the display case. SAD irons were solid that had a asbestos cover with handle that fit over the iron to keep the iron hot while shielding the user from heat. Though a one large room museum, there were sections for different types of exhibits.
March 25, 2010 (Thursday) - When in Walmart, I remembered that our old standard blender had bitten the dust. I wondered if this type will be more useful.
Since the fall of 2003, the daily focus of my eJournal and images blog has been on text. Later in July 2005, because of Flickr, I've been able create something which emphasizes a daily image or video clip. I'll shoot and add one each day. Doing so will remind me to constantly carry a camera and it'll be a more direct record of current, personal experiences.
