Thomas' Graduation Cake. This is a huge cake done from scratch (4 individual 2 layer 1/2 sheet cakes put together and decorated as 1 "double sheet" cake). The bottom layer is chocolate cake and the top layer is 'fluffy banana" cake. There are 18 bananas in the top layer. Decorated with buttercream icing. Special thanks to my wife Saffron for helping a color blind mf (me) make the icing the right colors for the U of M, Evans Scholar, and Lansing Catholic HS logos.
Note, this took nearly an entire week of evenings after work to bake, assemble and decorate. I'll never attempt a single cake this big again. I'm glad I did it though because everyone loved it.
