Shiitake, Oyster mushroom and Winged Kelp devilled eggs, purple King Tut pea blossoms and fennel from our kitchen garden. I’ve been craving this blast from the past lunch the last few days, and had some oyster mushrooms growing in the backyard that had to be used up. Added Shiitake for a deeper, more substantial mushroom flavour, and the last of the beautiful winged kelp I harvested on Hornby Island last summer. King Tut peas are stunning on the vines in our garden right now, a bright purple and fuschia coloured blossoms, deep purple pea pods unapologetically in stark contrast with the almost lime green sweet, juicy peas inside, these heirloom peas are a favourite in my garden. Wild foraged watercress. March 7th, 2012 - I made deviled eggs for the RESCU rally, but got bored after the first batch & started making them a bit more... interesting.
And out pops the first piece... notice the brown spot. This is where it rested on the bottom of the pot. No corrosponding brown spots on the egg itself.
