રીત : પ્રેશર કૂકરમાં ઘી ગરમ કરો. તેમાં ગાજર નાખીને ૫ મિનિટ સુધી હલાવો. ત્યારબાદ તેમાં દૂધ નાખીને સીટી બોલાવો. ત્યારબાદ ગાજરને નીકાળી એક નોનસ્ટિક પેનમાં નાખો અને ખાંડ મિક્સ કરો. તેને તીવ્ર આંચ પર ૫ થી ૭ મિનિટ સુધી હલાવો. હવે તેમાં માવો નાખીને ૨ મિનિટ સુધી સતત હલાવો. ત્યારબાદ તેમાં કિસમિસ, બદામ અને એલચી પાવડર નાખીને ૧ મિનિટ સુધી રાંધો. ત્યારબાદ તેને ગરમાગરમ સર્વ કરો.

એક વાસણમાં કાબુલી ચણા પાણીમાં ૬ થી ૮ કલાક માટે પલાળી દો. કૂકરમાં પલાળેલા છોલે નાખીને તેમાં ચાની પત્તીઓ કપડામાં બાંધીને તેની પોટલી નાખીને બાફવા માટે મૂકી દો. છોલે બાફી ગયા પછી તેમાંથી ચાની પોટલી નીકાળી દો. હવે, લવિંગ, તજ, મરી, ૨ લીલા મરચાં અને આદુને બારીક ક્રશ કરી લો અને આ પેસ્ટને બાફેલા છોલેમાં મિક્સ કરી દો. એક કઢાઈમાં સૂકા મસાલા, ગરમ મસાલો, ટામેટાની પેસ્ટ, આમચૂર પાવડર, મારી પાવડર નાખીને તેમાં છોલેનું પાણી પણ ઉમેરી તેને ઘટ્ટ થવા સુધી હલાવો. ત્યારબાદ બાફેલા છોલે તેમાં મિક્સ કરીને સારી રીતે સાંતળો. એક ફ્રાય પેનમાં ઘી ગરમ કરીને તેમાં ઝીણી સમારેલી ડુંગળી નાખો જયારે ડુંગળી બ્રાઉન થઈ જાય ત્યારે તેમાં છોલે નાખો અને ૧૫ મિનિટ સુધી તેને ઢાંકીને રાખો. ગરમાગરમ છોલે બારીક સમારેલી કોથમીર, ડુંગળી અને ટામેટાથી ગાર્નીસ કરી સર્વ કરો. આગળની સ્લાઈડરમાં જુઓ ભટુરા બનાવવાની રીત
