Savannah requested deviled eggs to eat this evening, which I made and she has already consumed. So, I decided to make myself some egg salad for sandwiches. I haven't gotten that far yet, but that is what they will be transformed into very shortly. Every time we get a day off from school, I always wish for one more that never happens. I am looking forward to Easter Break next week, already.

Wallace made a delicious dinner of roasted red pepper soup with cilantro cream. Yum! And I was able to get a respectable amount of schoolwork done. And having someone cook for me is a rare treat!

I'm a snacker. I'd prefer to snack than eat a full meal. Recently, though, I've been getting tired of my usual snacks. I went to Wegman's today in search of something new and settled on an assortment of fruit of the dried and not-dried varieties and also ingredients for this bean dip (sooo good!) and banana bread that I'll make again on Friday.

Yet another cooking adventure. It was deeeeeeelicccciiiious!

3|21|08: I don't cook. I was lucky enough to marry someone who does. When he's too tired, we eat out (hence all the shots of restaurants in my photostream). Today I stayed home sick again, and my husband flew solo to a party that we were both due at this evening. That left me alone all day, and you can only last so long on graham crackers. Lucky for me, he had brought home good hot dogs from Sinbad's Hot Dogs yesterday, so I figured, "I can do that." But confronted by the hot dog I decided to call and ask how to cook it. I knew you can nuke these things, but really, who wants microwaved food. I briefly considered lighting another fire and cooking it on a stick, then I could have a s'more too. I decided that was too much work though. The directions I recieved: Put a little water in the pan, enough so that it won't boil dry [I did that once, ruined the pan, stunk up the house, and set off the smoke alarm] when it boils, put the hot dog in, turn down the stove, put the lid on the pan, and let it cook for a few minutes. Immediately after hanging up I forgot how low to turn down the stove to, and how many minutes to let it cook. This is me trying to decide if I have the proper amount of water.

Today after going to Altoona to run several errands I had to go to Wegmans to pick up the birthday cake I ordered for Savannah. I had a few things on my list already, but as it invariably does the number of items in my cart expanded exponentially prior to checking out. I found a recipe yesterday for quick and easy Garlic Shrimp with Risotto, that I decided to make over this weekend. And while I was at the seafood counter I felt compelled to also get some big beautiful sea scallops, even though I did not have a specific recipe/dish in mind. Of course you can't go wrong with good old seared scallops, but I don't know what to make to go along with those. Suggestions are very welcome!

Astrid hosted a martini pajama party last night and invited Misty, Tonia and myself. I took stuffed tomatoes and stuffed mushrooms, which seemed to be well liked by everyone. Astrid had lots of delicious snacks, too. I am very glad for the happy accidents and circumstances which brought Misty and Astrid into my life! I have occasionally marveled at how the Internet has made the world smaller, but luckily for us, we should have some time where we can spend time face to face, but will be able remain in touch online when it is time for Astrid to go.

we don't have a double boiler to melt the chocolate+butter, so I had to improvise. and by improvise, I mean consult google.

This is our dinner tonight! I have recently renewed my love for making and eating lasagna.

I am still tweaking my recipe, but it smells wonderful!

Thank you to Pioneer Woman and Land O'Lakes, we have a new wonderful and simple and fast dinner recipe! When Wallace and I discussed what we wanted to do for dinner tonight, I told him about this new recipe, that I have seen in commercials, we got to cook together, but it didn't take long, an it was delicious!

Cook's Country Skillet Mac and Beef. Onions, red pepper, garlic, tomato sauce, chicken stock, oregano, macaroni pasta. Not fancy or sophisticated but real food that tastes so very good. Add a sprinkle of cheddar cheese and a dollop of sour cream at the end off the heat. Delicious comfort food yumminess. And lots of tasty leftovers for Wallace while he is away! Today was sucky as I spent a long time trying to wrangle our taxes. Contract work can be good, but having to deal with taxes in 3 different states sucks big time! I am soo tired and my brain hurts!

Dinner tonight is a new recipe after several requests from Savannah and Wallace. Wallace and I are collaborating to make Lasagna Bolognese for dinner tonight, along with Tuscan garlic bread from Wegmans bakery. It should make nice leftover meals for Wallace while he's away.

Tonight we are making a new tomato soup recipe from my new slow-cooker cook book and this is the first time we are using my brand new Cook's Illustrated recommended crock pot. The rest of the day I hope to spend coloring Easter eggs and watching some movies. There will also be three cheese grilled cheese sandwiches to go along with dinner. Sounds like a great way to spend a Saturday!

This is my first time making this, but I suspect it will added to my regular recipe rotation. I am sorry Wallace wasn't here to try it, but it'll be even better the next time I make it.

Wallace suggested I cook dinner tonight since I have been less diligent about cooking this week for myriad inconsequential reasons. I made marinated chicken breasts and homemade home fries. The photo is of the home fries for two reasons, while the chicken was quite delicious it wasn't terribly photogenic and surprisingly enough this was my first foray making home fries.

They were easy and very delicious!

Tonight, I made a favorite soup recipe. Savannah asked for this a few weeks back, and I told her that as soon as it was cool enough outside for soup, I would make it for us. Tonight I was also lucky enough to talk on the phone with an old dear friend that I had lost touch with. I am so ver happy and thankful to have him back in my life once again!

Today was a lovely warm day and I made a new pasta recipe, Penne with zucchini, cherry tomatoes and Boursin cheese.

I've been meaning to try one of these for AGES and I finally did. They were really pretty when they were baking and for the first... minute or so when they came out of the oven.

 

And then they started to deflate -_- I have some practice ahead of me, I can tell. This picture was taken after it started to deflate.

Tonight's dinner is meatballs and spaetzle. It is not exactly visually appealing, but it is definitely comfort food.

Wallace will have some excellent dinners while he is away from home!

There is nothing better than recipes from growing up.

Tomorrow morning I will frost and decorate these cupcakes for Savannah to share with her classmates for their Valentine's Day party.

In my kitchen on the baker's rack live my favorite cookbooks. And to the right of the cookbooks live my massive pile of Cook's Illustrated and Cook's Country magazines.

I did ask Wallace for a pair of rather large cookbooks for Christmas. If he gets them for me, I wonder where I will be able to put them.

I suppose I will have to deal with that if/when the time comes that I need a place to put those.

New recipe tonight. I hope it as good as it looks and smells.

Today was spent making cupcakes for my baby to take to school for her birthday on Friday, when she turns 13, so she is clearly not a baby anymore. She starts junior high next year, and no one sends cupcakes to school for your birthday in junior high. So I will be making cupcakes in the future for friends and family and no longer wowing anyone else's kids with my from-scratch cupcakes and frosting. When my parents used to remark about time going by quickly, I never understood since it seemed like an eternity from one birthday to the next. Time passes faster and faster the older you get!

I made cupcakes for Savannah to share with her classmates during their party this afternoon. Here they are decorated and ready to be delivered to school.

I have to admit I am not a huge Christmas cookie fan. I tend to make them out of obligation and not because I eat them. Or even like most of them.

But this year is scaled back because of family circumstances. I made only one cookie, and it is my first time making them. The recipe comes from a local friend's family and I am actually looking forward to eating them! They are delicious!

Almost everything is made better when I have Wallace by my side. He is my favorite snuggling companion, my favorite driving companion, my favorite game-playing companion, my favorite cooking/kitchen companion. The only thing I do not love 100% is watching television and movies together(he is a commentator and interactive t.v. watcher). Almost everything is more fun when we get to do them together. I am so thankful this is another long weekend with all of us together.

New recipe tonight. New cooking experience for us as this was one of the few times I've made a shrimp dish, despite loving shrimp. And this was the first risotto that I've made and I think it came out very well for a first attempt. And it was delicious!

I have been craving French toast for a while, so I told Wallace that I wanted French Toast and sausage for dinner tonight. Our recipe, inspired by a Cook's Illustrated recipe makes the most fantastic French Toast I have ever eaten.

We had a very quiet and relaxing Saturday, for a change.

I made beef burgundy for dinner tonight. It has been simmering in the slow cooker since earlier this afternoon.

My house smells wonderful an in related news Wallace is home for the weekend!
