I toted the trash can over to Mama Rose's house and we got the black gold in there, mixed it up with the dirt already in there, and now we are so ready for our vegetable garden.

The pulp from the coffee cherries is composted. This pulp can then be used for other purposes in the fields.

We were visiting Shaxi after the corn harvest, and here you see the stalks and husks drying on top of what will be next year's raised beds. Agriculture is still conducted on a small-scale and largely by hand, with the exception of ox- and water buffalo-led plows. A compost bin scored for $60 on Craigslist. I'm hoping the box will help keep the pile from freezing too deeply in winter. We still have the worm bin in the kitchen but some scraps still need to go outside and our long winters mean the pile breaks down more slowly than I'd like.

The pile of the far left (to the left of the black cover) is the "freshest" pile of refuse. Amiad begins constructing the piles from the far end of the plot to the forefront. The piles consist of organic refuse (food leftovers, agricultural crops that can't be marketed) and covered with garden clippings and chopped wood. The pile he's digging in, at the forefront is about a month old. Piles to the right (covered in black) are 3 to 4 months old.
