Matthew Mariola delved into the topic of eating with integrity, choosing to focus on how to make food production work better for farmers, who usually only get pennies on the dollar for their products. He showed an alternative model, the Local Roots Market and Cafe, which is based in Wooster, Ohio. Local roots combines aspects of a farmers co-op, a grocery store farm stand, and a farmers market. The result has been wildly successful, with the farmers keeping 85 cents of the retail price for their produce. A huge improvement for them, and a win for fresh, delicious, locally produced food. And it keeps more money in the local community. I would love to see Local Roots start selling their expertise to other farmers who would like to emulate them.
