ODT - Something Fishy
Cod Drying in the sun. I don't think this is something you will see any more, The photo ws scanned from a 35 mm slide that I took back about 50 years ago on the Gaspe peninsula in the Province of Quebec, Canada.
The fish would be cleaned and opened like a butterfly and then laid out on the racks to air dry. The racks were made of spruce/pine trees that formed the frame and had chicken wire stretched across them. Quite an evvective way to dry the fish, but required a lot of labour to turn them regularly and fend off the sea gulls and other hungry birds.
I don't recall how the fish was stored once dried. If anyone can elaborate on that I would appreciat your comments.
Succulent, rich, buttery and amazingly delicious! Black Cod contains more healthy Omega 3's oils than almost any other fish that swims in the sea.

COD Architecture students put their skills to the test this summer, designing, building and installing a gathering pavilion for the Community Education Fuel Garden and the Russell R. Kirt Prairie.
We try to be pretty good about cooking fish once a week for dinner. This pan-seared cod with preserved lemon aioli is one of our favorite go-to recipes for an easy fish dinner. We paired it this time with a green kale salad with walnuts, sweet potatoes and Cabot clothbound cheddar, adapted from Northern Spy Food Co, one of our current local favorites.
A tasty and fairly healthy meal!

In a huge, ginormous even, tank at the Sea Life Centre aquarium on the outskirts of Oban. Each of these Cod were about a foot long and there were quite a few in the tank.
I'll never look at Cod and Chips in quite the same way again!
(from my Scotland archive) Not a great shot as you can imagine the thickness of glass required to keep the aquarium whole!
From the WWF site:- Cod are currently at risk from overfishing in the UK, Canada and most other Atlantic countries. As fisheries have become more efficient at catching cod, populations have declined.
