First attempt at making a souffle! They are really hard to get right, but i have some ingredients left over from these ones and gona try again tomorrow!

I am slowly clearing down last years images, so that as I get out and about this year I have space for new stuff.
I also accept that most of us are now on Chocolate avoidance measures, to ensure our waistlines recede after the excesses of the festive period.

I hate milk chocolate, don't want clouds
of cream diluting the dark night sky,
don't want pralines or raisins, rubble
in this smooth plateau. I like my coffee
black, my beer from Germany, wine
from Burgundy, the darker, the better.
I like my heroes complicated and brooding,
James Dean in oiled leather, leaning
on a motorcycle. You know the color.
Oh, chocolate! From the spice bazaars
of Africa, hulled in mills, beaten,
pressed in bars. The cold slab of a cave's
interior, when all the stars
have gone to sleep.
Chocolate strolls up to the microphone
and plays jazz at midnight, the low slow
notes of a bass clarinet. Chocolate saunters
down the runway, slouches in quaint
boutiques; its style is je ne sais quoi.
Chocolate stays up late and gambles,
likes roulette. Always bets
on the noir.

I make these for the retirement residence where my parents live.
4 dozen chocolate and 4 dozen vanilla.
The drink had a heavenly aroma and a captivating taste. Great for revitalizing the senses and energizing your mind!

When we were out for lunch last week, Jasmine had a Chocolate Brownie for dessert. This resulted in another ';squared circle' for the collection...............
I make these at Christmas
Truffle Mice
4 oz semisweet chocolate
1/3 cup sour cream
1 cup fine chocolate oreo crumbs
fine crumbs
gold or silver drage'es
slivered almonds
licorice
Melt chocolate
blend in sour cream
stir in 1 cup chocolate crumbs
mix well. cover refrigerate about 1 hour
Roll into balls and shape with pointed end.
roll into crumbs and add eyes, ears and tails.
* I use a tiny coffee spoon for the size. They are about 1 inch.
