For these nachos you don’t have to fire up the oven, but you will need to use your stove top and your microwave.
Links for the products used are provided at the end of the recipe in case you’re not familiar with any of the ingredients. (Some folks ain’t never heard of Ro*Tel.)
You will need a bag of Tostito’s restaurant style tortilla chips
1 pound of Velveeta
10-ounce can of Ro*Tel original
16-ounce can of Old El Paso traditional flavor refried beans
1 jar of Shotgun Willie’s sliced jalapeno peppers
1 large yellow onion
1 bottle of Crisco vegetable oil
A cookie sheet with sides
Parchment paper
A microwaveable bowl large enough to make the Ro*tel/Velveeta queso in
A medium sized skillet
Tear off enough parchment paper to line the cookie sheet, and place it on the cookie sheet. This will make this part of the clean-up so easy you will thank me later!
In a single layer place enough Tostito’s tortilla chips to nearly cover the cookie sheet.
In the bowl cube the Velveeta cheese and add the entire can of Ro*Tel, juice and all. Mix together the ingredients, cover loosely with plastic wrap, and place in your microwave.
Open the can of refried beans and place them into your skillet. Heat over a medium-low heat. Add enough Crisco vegetable oil, stirring well, to make the beans loose enough that you can spoon them onto the tortilla chips easily. Stir frequently…when the beans begin to bubble reduce heat to simmer and stir frequently.
Set the microwave timer for 2 minutes 30 seconds and fire that sucker up, on high.
While all of this is going on chop about half the onion into a coarse chop. Set aside.
When the microwave ends VERY CAREFULLY, using oven mitts, remove the bowl from the microwave, set it on a trivet, CAREFULLY remove the plastic wrap to avoid steam burns (got one today!), and stir the ingredients well.
Cover loosely with fresh plastic wrap and return to the microwave on high for an additional 2 minutes and 30 seconds.
Stir beans, remove from heat, and dollop a small amount of beans onto each tortilla chip until all chips are thoroughly covered in beans.
When the microwave ends, carefully (as before) remove the bowl, carefully remove the plastic wrap and thoroughly stir the ingredients together. Using a large spoon or ladle spoon a large amount of this queso onto each chip until all of the chips are thoroughly covered in queso. (See how messy this is? Told you you’d love that parchment paper!)
Sprinkle the chopped onions over the whole mess, and top each chip with a jalapeno slice.
Dive in and enjoy!
It dawns on me that some mashed-up avocados spread over the top of this before you top everything with jalapeno slices would be good!
Might even want to make up my guacamole and spread it over the mixture instead of just plain avocados:

Week 49, Assignment 1 for Take A Class With Dave and Dave.
Holiday Humor - It just wouldn't seem right not to include a holiday-related assignment this week. For this one, make us laugh!
It is the Friday before Christmas. That means no work for 4 days! Woo Hoo! I get to sleep in and relax for 4 days and at the end of it I get presents and I get to watch my daughter ooohhh and ahhhhh over her gifts. Talk about a great few days.
It also means that the stitch hat comes out again! That alone makes it all worth it, but the other stuff is great too.
This is a better pic of my new colored hairdo. I admit I have a minute obsession with purple lip gloss/lipstick. Deal with it!

W.o.w never thought the time would come. . I have been uninspired for the past three months, couldn't look or touch the camera - I mean it was serious stuff. Today I came back from Dubai, was on a winter break =o) like no other, as usual. A great time back home always gives me a vibe to start something new and race with motivation, great to be back.
I am sure everyone had a fabulous time for Happy New 2009!

The British Wrestling Talent Pathway.
The pathway will still consist of two tiers for those in secondary education with Regional squads leading to selection for the GB Talent Squad. The changes come in the change of focus to time spent on the mat working on technical and tactical skills and learning what it takes to be an elite athlete.
The Regional Squads consist of U13, U15 and Cadets with training on a monthly basis between September and April. Numbers will be limited to ensure that every athlete on the squad receives focused coaching to develop and improve. Club coaches are invited to attend along with their athletes to work alongside regional and national coaches.
The GB Talent Squad, for U15 and Cadets, will meet less frequently but with a focus on more time spent on the mat at three camps across the season in October, February, and April plus a summer camp. Numbers will be limited to approximately 18 in order that National coaches can work closely with the athlete, their club and regional coaches to develop and improve.
I really enjoy travelling on the Havnebus (Harbour Bus) run by Arriva Danmark’s fleet of electric ferryboats from Teglholmen to Refshaleøen. It offers views of all the major sights of Copenhagen and costs a fraction of the price of the tourist boats, although there is no commentary. This photograph was taken in the afternoon on the day of the Euro2020 semi-final match between Denmark and England. Lots of patriotic Danes flying flags and wearing the national colours that day!
