Ingridients (for 2 - 6 servings):

- 6 big heads of button mushrooms

- ca. 20 g ramson

- 2 tbs. crème fraîche

- 2 tbs. yoghurt

- 100 g grated cheese

- Salt

- freshly ground pepper

- optional: 6 tomato slices

- fat for the casserole dish

 

If necessary clean the mushrooms with a kitchen tissue. Break out the stems carefully and put aside.

 

Butter the casserole dish and set the mushroom head with the holes up into it.

Preheat the oven to 180 °C convection (200 °C top and bottom heat).

 

Dice mushroom stems very finely, chop ramson as well. Stir both with the crème fraîche and yoghurt and fold in half of the cheese. Flavour generously with salt and pepper.

 

Fill the mushroom heads with the mixture. If you like set the tomato slices on top like a lid. Sprinkle with the rest of the cheese.

 

Bake in the oven for about 20 minutes until the cheese is molten and golden brown.

 

Britta's Tip: If you serve two of the button mushrooms with some rice and a side salad they will make three servings.

For two servings take three mushrooms and serve them with toast triangles - buttered if you wish.

For six guests you'll have a nice starter in a menu when you combine one mushroom with a bit of salad and/or a toast triangle.

The "poached egg" tartine is a substantial tribute to brunch-time favourites where sautéed button and shiitake mushrooms mingle with sweet tangy oven-roasted tomatoes over a blanket of velvety smooth Kristapsons’ smoked salmon. The sourdough toast of the town is a hearty grilled foundation: its dense flavourful mie and wood ash-finished crust is butter-kissed and then drizzled with fruity olive oil. Crowned with a tumble of delicate mâche, it’s the golden semi-molten cores from a trio of exquisitely poached eggs that are the true highlights of this dish.

The fresh basil was notably missing from my tartine, but it was no matter because the other components were superstars in themselves.

Mushrooms sauteed in a bit of oil with some salt/vetsin/sugar mixture. Then added a splash of Shaoxing ricewine and when that vaporized added a lump of butter and some chopped garlic. When garlic isn't raw anymore, add a splash of soy sauce, fresh thyme and spring onion.

This one is really nagging me. The stalk is unusually narrow and twisted for a bolete.

my favourite chicken stew - lots of carrots, potatoes and mushrooms slow-cooked with sauteed cut pieces of chicken in a broth containing star anise and cinnamon stick! A whole pot (one-time cooking) can feed me and hubby from morning to night!

It's around 6:30am and it's done. I put some in a tupperware container for Chong to take to work. And tonight when I got up I asked her how it was. She said it was too watery! Damn, I was hoping she wouldn't notice. Anyway, I accepted that as a compliment cause that's as close to one as I'll get.

I meant to take a nice pic of a bowl of chili with my heavily buttered slices of Jewish Rye bread while I watched a move. But forgot when the time came. I used my giant TV in the living room and watched Mel Gibson killing British Red Coats during the American Revolution in the movie, The Patriot!

 

That's it for chili. As I write this I'm boiling the leftovers in the pot as it's been sitting out all day and evening.

I could be wrong about this one but there are not many green mushrooms. I'd have to put some water on it to see if it turns "tacky". as the name implies.

Habitat: on small unidentified birch (sparse branches, grey bark)

Size: 2 inch - 4 inch wide

Pores: Pores when young, toothed when mature

Smell: stale/ gristly

Spore Print: white, but this specimen produced none

Time to cut the mushrooms for the pilaf while the onions are cooking. Then steam the brussel sprouts and ... busy busy busy.

Chicken stir-fried with lots of garlic, a few “chilli padi” and slices of young ginger in oyster sauce flavoured to taste with pepper, sugar, light soy sauce, dark soy sauce and ajinomoto. When the chicken was almost done, a can of button mushrooms was added in and braised for a while.
