the top mushroom is growing right out the top of the bottom one.

aka the "poached egg" tartine is a substantial tribute to brunch-time favourites where sautéed button and shiitake mushrooms mingle with sweet tangy oven-roasted tomatoes over a blanket of velvety smooth Kristapsons’ smoked salmon. The sourdough toast of the town is a hearty grilled foundation: its dense flavourful mie and wood ash-finished crust is butter-kissed and then drizzled with fruity olive oil. Crowned with a tumble of delicate mâche, it’s the golden semi-molten cores from a trio of exquisitely poached eggs that are the true highlights of this dish.

Habitat: on ground near conifers or hardwoods

Für 2 Portionen:

- 6 Scheiben (ca. 2 cm dick) Schweinefilet

- 1 rote Zwiebel

- 250 g Champignons

- 6 Scheiben Tomate

- 150 g saure Sahne

- 2 EL Currysauce (Fertigprodukt)

- Weißwein

- geriebener Käse

- Salz, Pfeffer

- Pflanzenöl oder Butterschmalz

 

Zubereitung:

Fett in einer Pfanne erhitzen. Filetscheiben salzen und pfeffern und von beiden Seiten scharf anbraten. Auf den Boden einer ofenfesten Form verteilen.

 

Die Zwiebel halbieren, in Streifen schneiden. Weich dünsten, dann über dem Fleisch verteilen.

 

Die Champignons in Scheiben schneiden, braten und ebenfalls über Fleisch und Zwiebeln verteilen.

 

Saure Sahne mit Currysauce und Weißwein verrühren. Eventuell mit Salz und Pfeffer abschmecken und gleichmäßig über das Fleisch gießen.

 

Die Tomatenscheiben über der Sauce verteilen und mit Käse bestreuen.

 

Bei 180 Grad Umluft ca. 20 bis 25 Minuten überbacken.

 

Dazu paßt Pasta, Reis oder auch Baguette.

Pork loin fillet casserole

 

For 2 servings:

- 6 slices pork loin fillet (ca. 2 cm thick)

- 1 red onion

- 250 g button mushrooms

- 6 slices tomato

- 150 g sour cream

- 2 tbs curry sauce (convenience product)

- white wine

- grated cheese

- salt, pepper

- vegetable oil or butter oil

 

Heat fat in a pan, season meat with salt and pepper and fry from both sides.

Place meat slices in a oven-proof dish.

 

Half onion and cut into stripes. Fry as well and layer over the meat.

 

Slice mushrooms, fry and add to the casserole.

 

Mix sour cream, curry sauce and white wine, season with salt and pepper if necessary.

Spread over the meat evenly, then place the tomato slices on top and sprinkle with cheese.

 

Bake at 180 °C convection for about 20 to 25 mins.

 

Serve with pasta, rice or simply baguette.

This is not the 'Clitopilus prunulus'

This is a swiss dish, originally prepared with veal but I used chicken fillets instead.

 

For 3 - 4 servings:

 

250 g chicken fillet

2 shallots

250 g button mushrooms

150 - 200 ml white wine

150 - 200 ml whipping cream

salt

freshly ground pepper

1/2 tsp. tomato paste

1 tbs. butter oil

 

Preparation:

Cut chicken fillet into small stripes, cut shallots into very fine stripes lengthwise. Half or quarter button mushrooms (according to their size).

 

Melt the butter oil in a pan, fry the chicken stripes by and by at medium heat. Add shallot stripes and fry. In the end add mushrooms and stir-fry everything for some minutes.

 

Pour the wine and let boil away. Then pour the cream, bring to a boil and reduce to a sauce of creamy consistency. Flavour with salt, pepper and a bit tomato paste.

 

Serve with basmati rice; as side dish a green salad is nice or - what we had - homemade apple compote.

looks like something i want to give the name "albino turkey tail"

Could be mistaken for Stereum ostrea (False Turkey Tail), but I doubt it.
