Ingredients 食材用料
250g angel hair pasta 细意大利面
100g button mushrooms 钮扣菇
100g oysters meat 生蚝肉
25g coriander 香菜
1 stalk celery 芹菜
30g butter 黄油
200ml cooking cream (20% fat) 鲜奶油 (20%脂肪)
1 tsp rock salt 山盐
Instructions 步骤
Cut button mushrooms into thin slices.
将钮扣菇切细片。
Mesh oysters meat using mortal and pestle.
用杵和臼将生蚝肉磨成泥。
Coarsely chopped celery and coriander.
将香菜和芹菜大略切碎。
Grind celery and coriander into paste in a grinder by adding 50 ml water.
在搅拌机中加入五十毫升水。加入香菜和芹菜搅拌。
Add a tbsp of rock salt and oil to 1500ml water in a pot.
在锅中加入一千五百毫升水,一大匙盐和一大匙油。
Bring water to broil.
将水煮滚。
Add pasta.

Cook pasta for three minutes. After that, turn off fire and steep for 2 minutes.

Meanwhile melt butter in a pot and heat until it sizzles briskly.
将陶瓷锅烧热,加入黄油。
Put in mushroom.
放入蘑菇。
Sauté over medium heat until mushrooms are browned.

Pour in oyster puree and greens paste. In low heat, cook for a minutes with constant stirring.
加入生蚝泥和菜泥。以小火煮一分钟,需搅拌。
Pour all cooking cream into the soup. Keep stirring and bring it to broil over medium heat. Add salt to taste.
倒入全部鲜奶油。继续搅拌,中火将其煮滚。加盐调味。
Turn off fire. Put in cooked pasta.
关火后加入意大利面。
Mix well and served hot.
拌均匀后即可乘热享用。

Menu: salmon on sauerkraut, mushroom soup, broccoli fritters, and purple carrots
Salmon on Sauerkraut
Ingredients (serves 4): 600g salmon filets, 3-4 cups fresh sauerkraut, 200g creme fraiche, 2 tbsp grainy mustard, nori leaf (finely cut)
Mix sauerkraut with 100g of creme fraiche and heat up. Mix remaining creme fraiche with mustard. Preheat oven to 180C. Cut fish into 4 portions, salt and pepper. Place sauerkraut in a casserole dish. Bed fish on sauerkraut and pour creme fraiche mixture on top. Bake for 30-35min. Garnish with nori leaves and serve.
Mushroom Soup
Ingredients: parsley stems, white wine, bay leave, pimento, soy sauce, black pepper, onion (diced), garlic (minced), carrot (sliced), savoy cabbage (sliced), button mushrooms (sliced), sun-dried button mushrooms, wild mushroom powder, dried musserons (wild garlic mushrooms)
Purple Carrots
Ingredients: ginger (minced), purple carrots (julienned), mirin sauce, soy sauce, coconut oil
Heat coconut oil in saucepan. Add ginger and fry for 3min. Add carrots and stir occasionally until almost tender. Add mirin sauce and finish. Season to taste with soy sauce.

this giant mount of what looks and feels like black velvet is a mystery to me. It grows at the base of trees or stumps. I've found other things like it, but rust brown, instead, and without the velvet texture, seen here:

Besides "Portobello" or spelling variations of "Portabella" or "Portabello," this species is also known as Common mushroom, Button mushroom, White mushroom, Table mushroom, Champignon mushroom, Crimini mushroom, Swiss brown mushroom, Roman brown mushroom, Italian brown, Italian mushroom, and Cultivated mushroom.

I could be wrong about this one but there are not many green mushrooms. I'd have to put some water on it to see if it turns "tacky". as the name implies.
I say this was mislabeled as the Painted Bolete (Suillus spraguei)
edible. fruits under conifers-esp. white pine.

This one is really nagging me. The stalk is unusually narrow and twisted for a bolete.
Although I have been looking at and fascinated by pizza pictures from a cookbook, a gift from my 3rd brother, as a young adult, I have never made any! Back then, the only experience I have was making steamed Chinese buns or baked buns with yeast.
My pizza making experience has the influence of a close Taiwanese friend who introduced fresh yeast to me and later an acquaintance who sold me a set of pots. The later demonstrated baking pizza using a thick base flat pan. Since then, I picked up the courage to make pizza with a recipe. Homemade pizza, baked in an oven though.
We are lucky because we always get just the way we want it, moist and cheesy and ingredients not dried out. The homemade tomato sauce is another plus factor that our pizzas are always appetizing :)
A yummy plate of salad made with butter head lettuce, roasted button mushrooms, romaine lettuce, roasted red and yellow bell peppers, and grated cheese severed with balsamic vinegar and roasted mustard chicken.
As YH was working, a big portion was reserved for him for supper. We tucked in this while watching TV.
