Right now our 3 year old is making dinner time difficult (what?! Since when do you hate chicken nuggets?). So to make up for our not so frequent date nights, we will have Friday breakfast dates. . . After dropping our son off at preschool we will head to Brigs and enjoy an hour of relative quiet together. The staff is always incredibly friendly, the coffee is hot, and the food is so so so so good. . . They are only open for breakfast and lunch and they don’t take reservations, but with 5 locations in Raleigh, Durham, Wake Forest and 2 in Cary, you have no reason not to give it a try. . . . The Lemon Ricotta Pancakes are my favorite and a recipe I’ve tried in vain to recreate at home. Today is the last day they have them so Hooray for me! 7 tbs butter
1/2 sugar
1 tsp vanilla
1/4 tsp baking powder
3/4 cup flour
dash of salt
2 eggs
1 cup blueberries
Mix butter and sugar. Add vanilla. Slowly add flour, baking powder and salt. Slightly mix. Add eggs one at a time. Stir in blueberries. Spread in a small pan. I used a 6x6 dish.
Topping:
1/2 stick butter
1/2 cup sugar
1/3 cup flour
1/2 tsp cinnamin
1/2 tsp nutmeg
Blend together until it looks like cornmeal. Sprinkle over batter. Bake at 350 for about 40 minutes. You can see the blueberries bubbling in the middle.
Serve with pesto scrambled eggs. Breakfast music was Rory Block "From the Dust"
