These are my beetroots plant's that i planted from seeds.

Spiralising on an industrial scale is suddenly all the rage. That's fine by us.

I bought a lot of beets and now I don't know what to do with them

I didn't know what to call this watercolour. So I have called it "Beetroots.jpg".

The beetroot is the taproot portion of the beet plant, usually known as the beet, the table beet, garden beet, red beet, or golden beet. It is one of several of the cultivated varieties of Beta vulgaris grown for their edible taproots.

Other than as a food, beets have use as a food colouring and as a medicinal plant. Many beet products are made from other Beta vulgaris varieties, particularly sugar beet.

When consumed, it releases seratonin into your system and can raise your happiness levels.

Why do think I am such a cheerful soul, even early in the mornings?

Here it is...I would suggest using a ice cream scoop rather than a teaspoon so your pies are all the same shape.

Add the coconut milk a little at a time so the batter is not too runny.

Half my pie filling recipe or really pack in the filling after you refrigerate it.

Have fun. I think I'm going to try another one next weekend. These, over all, were really easy!

 

2 1/4 cups all-purpose flour

1/4 cup Dutch-processed cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup Earth Balance Margarine

½ cup stevia

2 tbsp mixed flax seed mixed with 3 tbsp water

1 teaspoon pure vanilla extract

3/4 cup Earth Balance Coconut milk + 1 tbsp lemon juice (allow sitting 6 minutes)

3 tbsp beetroot juice

 

Preheat oven to 350 degrees F. Line 2 cookie sheets with a silpat or parchment paper. Sift dry ingredient together. In a mixer, whip the margarine with the stevia. Add the flax seed mixture, vanilla, and coconut milk. Slowly add the dry ingredients and mix completely.

Drop by the spoonful onto the parchment. Bake 8 minutes. Cool. Spread filling and sandwich. Makes 6-8 pies.

 

Cinnamon Rice Mellow Filling:

 

2 cups powdered sugar

1/8 cup Earth Balance Coconut Spread

1/8 cup Earth Balance Margarine

½ tsp vanilla

2 tsp cinnamon

7 oz Rice Mellow

 

Beat ingredients together. Makes a ton!
