5 medium potatoes, cubed
2 plantains, cubed
1 small red onion or 1/2 of a large red onion
1 cup tomato sauce
1 cup water (save some from potato and plantain boiling water)
1 tbsp curry powder
1 tsp cumin
1 tsp turmeric
1 tbsp coconut cream/concentrate
1 red curry cube (1 tbsp paste, make sure either kind is Vegan) and/or red pepper, chili powder, chilies to taste!
Optional: one shredded collard or kale leaf (or contrasting veggie leaf of choice) for garnish. Add last after cooking and let wilt 5 minutes to avoid overcooking.

The galley and lower helm seen through a wide-angle lens. We like the glass facings in the cabinets and the adjustable height helm chair. The hardwood deck in the galley is standard.
