Turned out to be a concert better than I thought it might be.
Barry Manilow announced that he is going to "hit the road" ONE LAST TIME! In Sunrise, Florida during his last tour -- featuring a backing band of 13 musicians and singers, plus all the show-stopping hits. Manilow's storied career includes over 50 Top 40 hits, Grammy, Tony and Emmy Awards, a seven-year run on the Vegas Strip and an induction into the Songwriters Hall of Fame. This recipe which I found in an Audible book called Always Hungry by David Ludwid was absolutely delicious. Great way to avoid the extra starches from the usual potatoes. Truth is this tastes almost no different at all.
Shepherd's Pie with Cauliflower (and whitebean)Topping
This recipe was a huge hit with our pilot participants. The dish’s cauliflower and white bean topping is arguably richer and tastier than the traditional potato topping.
Place the cauliflower in a pot and add water just to cover. Bring to a boil over high heat, reduce the heat to medium, and cook until tender, about 10 minutes.
Drain the cauliflower, return it to the pot, and add the remaining
2 tablespoons oil, Âľ teaspoon salt, ÂĽ teaspoon pepper, and the white beans. Puree with an immersion blender until smooth.
