Pan seared swordfish, drizzled with salt, lemon juice, and pesto; topped with a simple basil-lemon butter (butter, lemon juice, minced garlic, coarse sea salt, minced basil); a side of very ripe sliced Seckel pear, blackberry, blueberry, pepinos, and lady finger pumpkin seed; paired with an absolutely incredible (after a long decanting) 2010 Chateau du Berneuilh Bordeaux Superieur; finished with a piece of 85% dark chocolate. #gourmetonapaperplate #gourmet #swordfish #chefmark
