Le sumac vinaigrier est une plante indigène malgré son allure très spéciale, voire exotique. Les oiseaux viennent en grand nombre manger les fruits durant l'hiver... On peut récolter ces derniers et en faire de la «limonade du pays» au goût acidulé (qui a donné à la plante son nom commun de vinaigrier). Elles sont aussi un ingrédient du zaatar libanais.
Soon everywhere fell quiet when the squirrels scampered off down the path. We sat, drinking in the delicious sound of the river flow and a breeze rustling branches.
'I think it's time to go home,' said Zaatar.
'What, now?' Cashew pouted. 'But we only just got here. Why does Cori get to stay by the river a bit longer?'
'You know why,' I said. 'Because Cori wanted a little time alone. She hasn't been out on an adventure for months.'
That was true, Cori hadn't been out on an adventure since at least the summer. She sat by the river, enjoying the peace at last, while we prepared to depart.
'Are you coming, Cori?' asked Zaatar.
Just then, as Cori was about to leap into our human companion's backpack, she held up her nose and sniffed the air. Her ears pricked, and then mine did too. There was a faint sound of rustling branches and a stifled giggle from the treetops.
'I think the squirrels have found their next target,' said the blackbird. 'Come back again. You are always welcome down by the river.'
'We would love to return,' said Cori.
Right away, as Cori climbed in the backpack for the voyage home, there was a high shriek of humans. Laughter erupted from the trees.
'You are right, Cashew, that was an excellent prank,' said the squirrels.
Every magical creature rolled around laughing. I peered out the backpack to see squirrels dancing in the branches. They had shaken the raindrops from every tree by the river and soaked all the humans on the path.

I thought it would be nice to end this little adventure with Cori by the riverbank. Cori Wolf came into my life just under a year ago on January 7th. Like all the others, she's been a faithful companion and is always nearby for hugs. Cori was also the first wolf to join my ever growing family.
Since then, we've adopted Zaatar, Thyme, Ash, Borealis, Hawthorn, Blackthorn, Fava Bean, Maisie and Seitan. So now Cori has her own wolf pack to play with. Hopefully there will be another birthday adventure in early January to celebrate.
This is turning out to be so much fun. You wouldn't believe what happened. The wind and rain suddenly stopped, and now everywhere is so clear and fragrant. We saw channels where the rainwater flowed, and a strange spiky fruit we thought was a chestnut. The ground is very slippery though, and these logs are rather wet. It took a long time for us find a spot to rest.
Our human companion thinks there might still be foxgloves around, and mushrooms and wild strawberries too. Let us hope the weather remains like this for the rest of our adventure.

So here's where our adventurers have got to. I didn't expected you to come to the river today,' said Little White Fox.
'Neither did we at first, but our human companion's not well and we thought we'd explore somewhere different,' I said.
'It's a bit wet though,' said Cashew.
'What's it like in Gogerddan?' asked Cori the Wolf.
'Wet too. There's been so much rain all the trees and magical creatures have had their fill. They certainly won't be going thirsty this winter. Though . . . ' the white fox raised his nose and twitched his whiskers. 'The soil cannot soak up any more, so now the rainwater gathers in streams and flows down the hillsides. So it's probably for the best you didn't go to Gogerddan. Humans have been slipping and sliding everywhere.'
'It's been really muddy here too. But our human companion knows where to step,' said Cashew.
'So I've seen,' said Little White Fox.
'Why are you here anyway? Have you come to send us on another quest?' asked Zaatar.
'No, I see you are on an adventure already. This time I've come to warn you,' Little White Fox walked up the branch and twitched his nose upstream. 'The nature spirits here are not like those in Penglais and Gogerddan. They're friendly enough and mean well, but they do like to play their pranks.'
Za 'atar is a blend of herbs, sesame and salt.

Our human companion took this photo of us while out walking last week, but never added the story to our adventure. She says she did it for a special reason. This is our new profile cover picture.

We followed the trail of where we thought the squirrel had gone, but we couldn't spot him anywhere. We searched the undergrowth, scanned all the branches, and even scattered nuts, but the squirrel was nowhere to be seen.
'He must be hiding from us,' said Cori.
'You probably scared him away. You are a big fluffy wolf,' said Cashew with a chuckle.
'You can talk. What do red foxes eat again? And what is it you told Cumin about the fairies when she sat on the mushroom that time in Gogerddan?' said Zaatar.
'I was . . . only joking,' Cashew said.
'I suppose Cashew does have a point. A coyote, two wolves and a fox out on an adventure. The squirrels here are bound to be worried,' I said.
'But we're nature spirits, like they are,' said Cori.
Suddenly a blackbird settled in the branches. It took one glance at us, cocked its head, and then hopped down under a bush.
'It is not you,' said the blackbird. 'The squirrels here like to play pranks. They're mischievous little fluffballs. You should have seen what they did to that dog out walking her human the other day.'
'What did they do?' Cori asked, holding her breath.
'Hilarious it was, really hilarious, though the dog went off on a bark-fest for nearly an hour,' the blackbird chirped.
'But what did they do?' Cori persisted.
'Well . . . ' said the blackbird, fluttering up towards the branch again.
Before the blackbird answered, we heard something tumbling from the treetops. At first it sounded like rain, but then an empty nutshell came down, and then another, until the ground was carpeted with them.
'Hey!' said Zaatar as a nutshell bounced off his nose. 'The squirrels are pelting us with nuts!'
'Sorry!' a squirrel called from the branches. 'We're not aiming at you. We're aiming at those pesky humans over there.'
'What, the two humans we saw earlier?' Cashew said. 'You are not a very good shot, are you?'
Another shower came down. This time of leaves and twigs.
'You are aiming at us!' I said.
We heard the squirrels scampering off in the branches, giggling between themselves.
'So long and thanks for the nuts!' they laughed in the distance.
We all turned and looked at the blackbird, dismayed.
'They did something like that to the dog and the human,' the blackbird said. Then he fluttered off laughing too.

Everywhere looks so pretty today with all the raindrops. They truly do look like gemstones. But it would still be great to lap them up with our hot tongues.
So far we've seen apples and acorns and even a foxglove. Our human companion promises lots more to come.

The weather turned so suddenly these past couple of days. Our human companion worried earlier because it was raining heavily, but as soon as she stepped outside to explore Penglais Woods, the rain slowed. We do not mind the rain too much, because the cool droplets feel nice on our hot tongues. Our human companion likes the sound of rain – especially in the trees, but worries about our fur and her camera.
It was fantastic seeing all those apples on the trees as we walked up the hill. Everywhere smells so fresh after the rainfall, and all the apples are covered in lots of sparkling raindrops. It is very windy though, but we managed to find this cozy sheltered spot just off the path in the woods.

more practice for MM. Za'atar is quite confusing because it means the herb oregano, and a mixture of herbs and spices. Some labels have it as thyme, but Nigel Slater said it was oregano on his TV programme when he visited a grower in Lebanon, and I believe him.
Here on the left, za'atar from Lebanon: oregano, salt and sesame seeds; on the right; za'atar from Egypt: oregano, sumac and sesame seeds. Can be used as seasonings or mixed into olive oil to make a dip for bread.
This is what my Spice book says: "A Middle Eastern condiment made from herbs derived from local versions of thyme, oregano and basil mixed with sesame seeds, sumac and salt. ... Most sources give za'atar the herb as Origanum syriacum, but Ottolenghi and Tamimi describe it as a type of hyssop (Hyssopus officinalis) native to southern Europe... used from the 16th century in gargles and skin washes. Za'atar the mix, by contrast, is sprinkled over chicken, hummus, salads and the thick yoghurt labneh."
Would you believe today is my birthday? I came into my human companions life exactly one year ago. There I was, sitting on a shelf in a big store, then suddenly I was bundled up in a parcel and shipped to a far away land. I didn't know what to make of it, and I really was a little bit scared. I was passed around for what felt like days, before I smelled new scents and a great light filled my eyes.
The next thing I know I'm in a human's arms. She hugged me so close and I felt so safe I didn't want this moment to end.
Soon she introduced me to my new family. There were cats and foxes of all sizes, but no wolves that I could see. It didn't matter too much as the cats and foxes became my new pack. But later other wolves joined us. First Zaatar and Thyme, and then Moonlight, Fern and Fava Bean, then Hawthorn and Blackthorn, and then Borealis, Maisie and Seitan. So we made our own little wolf family.
'Then we all went out on an adventure together, didn't we?' said Thyme.
I nosed-nuzzled Thyme, and Zaatar at my other side. They joined our family a few days later.
We went on an adventure the following week. It was such a fantastic day. We made friends with the magical creatures of the woods. We saw spring and summer and autumn and winter, and now we're looking forward to spring and the first wildflowers again.
'They'll be coming soon,' said Zaatar. 'Remember last year, Cori, when you had that little play in the snowdrops?'
I did remember. It was such a happy moment. The snowdrops were only a month away now. I was looking forward to them immensely.
At this point it started raining. I felt the droplets on my nose and heard the patter in the trees. I looked around wildly for signs of the magical creatures.
'Is anyone here?' I called out.
A squirrel scampered up the path towards the Assembly Rock. He turned and twitched his whiskers at us, clearly wondering what three wolves were doing standing in the woods in the rain.
'Hurry, this way, before the storm comes,' the squirrel said in a rush.
'A storm?' I tasted the air and felt that crackle of ice.
'Yes, and we all have to take shelter, so you must be quick,' the squirrel said. 'The forest has a little pre-birthday surprise for you. But only if you can find it in time.'

We had to have a little rest on this log behind the path. There's fallen leaves everywhere, and we've sniffed out lots of interesting smells. There's foxgloves and herb-robert and wild strawberries and raspberries, and even a squirrel lurking in the trees. Best of all though are those water droplets on the leaves. We love fresh rain smell. The scent is everywhere. Though we did find a shrub that smelled of curry too.

Guess what! Our human companion is trying out a new camera. She wanted to take a photo of us under a little apple tree. I thought she'd pick Juniper and Pistachio, but were thrilled when she chose us instead! We both had lots and lots of cuddles before and after, and we had to keep very still while she took our photo.
She says she likes this new camera, but it does look a bit big. The Coolpix is a lot heavier than her usual camera too. She prefers her trusty Kodak for the weekly nature walks because it is smaller and lighter.
Perhaps when our human companion has made friends with the new camera and got used to the size, she might take it out for a proper test.
By the way, this is supposed to be a secret: our companion has also got a Nikon D7500, but she's not sure what lenses are best for it. She wants to use it for really close up macro shots and astrophotography, and solar photography. Yes, that's right. Our companion is also about to buy a telescope!

Grilled lamb chops, marinated in olive oil, a bit of crushed garlic, juice of ½ lemon, a good dash of Maggi sauce, dried marjoram flakes, finely diced fresh rosemary, salt & freshly ground black pepper.
Accompanied by potato wedges coated with olive oil, salt, pepper, and a good couple of tablespoons of za'atar, roasted in a combi microwave (micro 1, convection 180°C) for 15 minutes covered, 20 minutes uncovered.

Eid Mubarak to all of you
Eid ul-Fitr, often abbreviated to Eid, is a three-day Muslim holiday that marks the end of Ramadan, the Islamic holy month of fasting. Eid is an Arabic word meaning "festivity," while Fiṭr means "original nature," implying the restoration of one's best human composition. The holiday celebrates the conclusion of the thirty days of dawn-to-sunset fasting during the entire month of Ramadan. The first day of Eid, therefore, falls on the first day of the month Shawwal.

Za'atar is my favorite spice mix. Mixed with olive oil and eaten with good bread, it's divine.
Something I just realized is that when I decided to do FILM26 last December/January, it seemed like a stretch for me to shoot film regularly enough to make this happen. Now film has become a regular part of my life, and I think FILM26 is partly responsible for that, so thank you.

These are yummy home made Pizza, Cheese and Zaatar fatayer. I wanted to capture the patterns of the rounded fatayer along with the rectangular trays.

When wandering through the souks of Marrakech I really wanted to get a shot of the famous Moroccan spice mounds. Sadly, when I found some, they turned out to be quite dirty and about a third of the size I thought they were. Very disappointing indeed. Instead, I explored some more and came across these barrels of herbs. Now, I know you might not find this the most interesting of photographs, but I really liked how the light was falling across them.
This shot is pretty much straight out of the camera and one of my favourite travel shots, for some completely unknown reason. I actually wasn't hugely keen on this image until I viewed it in the lightbox myself; it really did make the world of difference.
The most important herbs commonly used are: onions, garlic, basil, parsley, green coriander, marjoram, mint, grey verbena and za’atar. Za'atar is generally prepared using ground dried thyme, oregano, marjoram, or some combination thereof, mixed with toasted sesame seeds, and salt, though other spices such as sumac might also be added.

♨ INGREDIENTS: ♨
****For the dough:****
250g durum wheat flour
1 tsp salt
1 tbsp olive oil
15g brewer's yeast
100ml water
****For the zaatar:****
3 tsp marjoram
1 tsp sumac
1 tsp thyme
1 tsp oreganon
1 tsp sesame seeds
2 tbsp olive oil
♨ DIRECTIONS ♨
Stir together the flour, salt and olive oil.
Dissolve the yeast in some warm water, add to the flour and knead it well.
Gradually add the remaining water to the flour, and work the mixture into a dough.
Knead vigorously for about 15 minutes, until the dough is no longer sticky.
Cover and allow to rise for 1 hour in a warm place.
Meanwhile prepare the Zaatar: toast the sesame seeds in a pan for a couple of minutes, then remove from heat.
Add marjoram, sumac, thyme and oreganon.
Pour in the olive oil and set aside.
Roll the dough out 1 cm thin, and cut into squadres.
Brush with the zaatar and put on a oiled baking pan or on a baking sheet. Bake in preheated 180° C (356 F) oven 15-20 minutes.
Serve with cream cheese, labneh or greek yogurth.
