Le Fort Sud dénommé successivement le château, le colombier, le pigeonnier, a été bâti en franc alleu par la branche cadette des seigneurs de Chamaret entre 1157 et 1172.
Cet édifice assurait 2 fonctions :
- la défense du site ;
- l'habitat.
En 1255, la tour est inféodée aux Adhémar de Grignan. Le site est de ce fait partagé entre 2 puissances antagonistes : l'évêque de St-Paul-les-3-Châteaux pour le Fort Sud et les Adhémar pour la Tour.
A la fin du XVè siècle, l'évêque perd la propriété du Fort Sud au profit des Adhémar. C'est alors que ceux-ci le transforme en pigeonnier.
A la révolution française, le toit du bâti est supprimé pour faire diisparaître ce témoin de l'Ancien Régime.
Le Fort Sud a été restauré en 1995.
