A little creation I whipped up last Saturday. I smoked this over Applewood on the Weber grill for about an hour and a half or so and then I grilled the andouille, chopped it and added it to the beans during the last 10 minutes of the cook.
This turned out delicious and disappeared fast at the meal
One day of grilling weather and then right back to snow. I am really starting to question my move from Florida where I could grill year round.
Tonight I made a version of a spicy hot dog chili and cooked it on the weber grill. I then poured this chili over some fritos and then topped it with cubed pepper jack cheese, diced onion, sour cream and a spicy honey garlic sauce.
Someday I may reveal my spicy hot dog chili recipe but today wont be the day, This recipe is only known to me, the Almighty, and my dog. We know she's not talking!
Today was one of those days with thunderstorms blowing through, interspersed with beautiful (and short-lived) bright blue skies. Just as I was sitting down (indoors) to have lunch, I noticed the water pooled on our patio table and the light being just so. I had to grab my camera.
No more than 5 minutes after making this photo, clouds rolled in and it started raining again...

I rubbed these wings with wee willys dry meat marinade and let them set in the refrigerator for a few hours. I then put them on the Weber Grill on indirect heat. Once cooked, I sauced them with Wee Willy's Carolina Gold mustard sauce, after the wings were sauced I Glazed them with Frank's Redhot Stingin Spicy Honey and Garlic sauce. these turned out incredible
Sliced Cajun sausage with green pepper, red pepper, onion and minced garlic. Saturday evening, I made an applewood smoked alfredo sauce to be used on vermicelli pasta.
I added cream. Parmesan cheese and a few other seasonings to this, let it slowly cook down and then added to the pasta. it turned out amazing!

Purchased from Lonsdale Country Market

These had about a minute or two to go before I pulled them off the heat
I added a small amount of the green chile roast pork to the beans before I took them off the grill
1/2 cup dark molasses
â—¦ 1/2 cup pure maple syrup
â—¦ 1/4 cup butter
â—¦ 1/4 cup corn oil
â—¦ 1/2 cup orange juice
â—¦ 1/2 cup good cider vinegar
â—¦ 1 cup good bourbon plus one good drink for the cook
â—¦ 3/4 cup catsup
â—¦ 2 tablespoons fresh minced garlic
â—¦ 2 yellow onions minced
â—¦ 1/4 cup dark brown sugar
â—¦ 2 tablespoons Worcestershire sauce
2 Cans Navy Beans
1 Pound Nerstrand Meats Pepper Bacon (Diced)
Mix all together and let cook on low heat for about 1/2 hour to 1 hour. Taste add red pepper, black pepper and salt to your taste. Let set over night and reheat before serving
This morning I mixed all of the ingredients together (Except the Bacon) and let cool. Once the sauce was cool I dumped in 2 cans of white beans and set in the refrigerator for about 6 hours. After I removed them from the frig I sautéed a pound of bacon and added the drained bacon to the beans. I then took the pan to the grill and let them cook on the grill to reduced and thickened. It turned out wonderful!
Note: Whenever I use bacon in a recipe, I always use pepper bacon from Nerstrand Meats out of Nerstrand Minnesota. I consider this the "Holy Grail" of bacon. I have yet to find a bacon that has topped the quality of this bacon. If you can ever get a package of this bacon, buy it at all costs, you will not be dissapointed
Last night I made dinner for my wife and one of my neighbors. I ended up making a smoked Cajun sausage Alfredo sauce to serve over vermicelli pasta
I snapped this photo just after opening the package and placing the sausages on the grill.
The recipe I used made a large amount of food, so I brought a plate over to my neighbor. His wife and daughter were out of town, and he had stopped over to the house to see what we were grilling in the front yard
This afternoon I am enjoying an Urban Growler De-Lovely Porter and doing some smoking on the Weber Grill
