Label reads:" Mitchell Watervale RHINE RIESLING 1979 The grapes for this wine were grown in our vineyards at Watervale in the Southern end of the Clare Valley. The soil is red loam over limestone and is ideally suited to Rhine Riesling grape. Harvesting in the last week of March gave fruit at 12° Baume, 3.2 pH and 8.0 grams per litre acid. After crushing and draining the juice was chilled, cold settled and earth filtered. The clean juice was then fermented over a period of 5 months at 10°C.
