What do you do with leftover veggie trays? Make a StirFry, of course!

There were quite a bit of leftover vegetables from a recent gathering at my uncle's, as well as some chicken skewers. Rather than let anything go to waste, I made a quick and tasty dish that was also healthy. Good dinner!

Raw Refreshing Vegetable Crudites Plate with Ranch Dip

Had a party last night. These were the things I made. And when I say I, I really mean me, my hubby and kids. I intended to do it all myself, but when it started getting closer to party time and I had more to prepare, I had to delegate tasks to get it all done. :)

- Heart shaped mini pizzas with heart shaped pepperoni

- Veggie platter (radishes, olives, grape tomatoes with ranch dip)

- Passion Pops, made with nilla wafers, carmel, melted chocolate and sprinkles

- Apple Pie pops, made from pie crust and apple pie filling - on a stick

- Weenies in a blankie (with ketchup)

- Cupcakes (vanilla cake/strawberry frosting/hot pink sprinkles)

- Twizzlers licorice

- Champagne

- Bay Breeze punch, made with Coconut rum, pineapple juice, cranberry juice (not in bowl yet)

- Soda & Water

- Spinach Dip in Hawaiian bread bowl(on another table)

-Various candies (m&m's, Hershey's Kisses, Dove chocolate, mmmmmm)

I made this dish- it's a sweet sour Indian gravy eaten with roti/paratha or as a side with curd rice. YUM!!

"Advanced Salad Days"

We were at a friend's house today, giving our daughters their third day of swimming in a row. Does the Earth really require so many consecutive days of 100° weather? I don't think so. Thanks, U.S. government!! Anyway, our friend has a tortoise, and he came out to play. His name is Speedy. He enjoys vegetables and strawberries. He is a nice tortoise. The light was natural....and unforgiving. Thanks for strolling by!!
