Hot green vegetable curry with zucchini, peanuts and lime rice

The "Vegetable Curry" for lunch was not really spicy, but quite ok. The espresso later was remarkable good.

Vegetables in this casserole:

- red onions

- garlic

- potatoes

- carrots

- snow peas

- cauliflower

- chickpeas

- pureed fresh tomatoes in the curry

and

a delicious spice mix

 

This was easy to prepare and tasted delicious! The dish can be frozen - provided there are any left-overs.

 

I used more vegetables than required for the recipe and next time (there will be a next time), I am going to make more of this delicious curry - for a little larger serves.

It was chilly and wet outdoors. What better excuse would be needed to make a curry? This one contains charred Brussels sprouts and asparagus, with red capsicum and scallions.

This is simple to make but full of flavour. The large chunky vegetables absorb the delicious spices and rich tomato sauce. Kidney beans add protein, folate, magnesium and the detoxifying trace element molybdenum. And it’s delicious!

The spicy curry was a perfect foil to the rather bland rice and did a world of good to my bad cold. :)

it's been a super busy week, and this was my quick dinner at home late last night. didn't get a chance to do grocery shopping over the weekend, so i just whipped up something quick and simple from whatever i have 'reserved' at home. ;) seaweed and chili pepper flakes atop bed of green tea soba and packed-ready veggie curry in less than 30minutes. :) what did you have for dinner last night? ;)

Before telling you what is broccoli beetroot curry, I would like to explain why did i select beetroot and Broccoli as vegetables for this curry. Beetroot, also known as the table beet, garden beet, cukundar, betavulgaris, red beet or informally simply as beet. Beet root can be eaten as raw or in salad with a dressing of mustard oil or vinegar. Beet root is used to cure anemia due to its richness in Vitamins A, C and iron and calcium. Its used to increase the stamina of the body. Modern research says that drinking 1 glass beetroot juice improves the energy levels, hair growth and healthy skin. Broccoli (Green cauliflower) has a large green flower heads, which is rich in fiber, carotenoids, vitamin A, vitamin C and vitamin K , also popularly known natural medicine for stomach and colon cancers. Beetroot Broccoli Sabji is prepared from the mixture of healthy beetroot and broccoli with the flavor of Indian exotic spices.

Ingredients:

- onion

- bell pepper

- carrot

- potato

- eggplant

- ginger

- garlic

- bay leaves

- cumin seeds

- cinnamon stick

- cumin powder

- coriander powder

- turmeric powder

- red chili powder

- salt

What is avail? It is a classic in Kerala cuisine—a mild vegetarian dish with a bit of various veggies, freshly grated coconut and yogurt dressed up with curry leaves and coconut oil. It wouldn’t be onasadhya (grand meal of the Onam festival) without this delicious mix of vegetables. It’s an excellent recipe to use up those leftovers vegetables in your fridge, not to mention a great way to include a variety of nutrient dense vegetables in your diet to count towards more than one portion of your 5-a-day. Again, I especially love the fact that the preparation couldn’t be any easier, but the result is special and still feeds healthily well.

For 4 servings:

 

- 1 cup basmati rice

- 1 tsp. butter

- 2 cups vegetable stock

 

- 1 shallot

- 1-2 cloves garlic

- 1 red chili pepper

- 4 small carrots

- 0.5 red & 0.5 yellow bell pepper

- 1 medium-sized courgette/zucchini

- ca. 100 g snap peas

- 1 tbs. sesame oil

- 2 tbs. vegetable oil

- 1 tbs. curry powder

- 2 tsp. turmeric

- 1 tsp. ginger powder

- salt

- 1 can coconut milk

 

Melt butter in a pot, let rice become translucent, add stock and bring to the boil.

Put off heat and let rice soak.

 

Cut shallots into rings, chop garlic and chili pepper finely.

Cut all the other vegetables (apart from the snap peas) into bite-sized pieces.

Heat sesame and vegetable oil in a pan or wok, spread curry powder, ginger powder and turmeric into the oil and add the vegetables one after another: First onions, chili and garlic, then carrots, snap peas, peppers and at last the courgettes/zucchini.

Stir-fry everything.

At the end pour the coconut milk and let cook down.

Season with salt and with the other spices if necessary.

 

Serve with the rice.
