Haldi rasam (ritual) is a very old Indian ceremony, preceding the wedding. It generally happens after the mehndi (henna) ceremony, either the day before or the morning of the wedding. This ritual was introduced prior to the beauty salons and the commercial facials and it is a beautifying session for the bride. Once the mehndi and haldi are applied, the bride-to-be is forbidden to leave the house until the wedding ceremony, in case an evil eye is cast on her and the impending wedding.

I have to admit to that, because I'm in charge...

 

Old favourite, 'fritata' with red cabbage, cheese and tomato filling.

 

POTATO:

shredded into short matchsticks using a Moulinex 'Mouli' or finely grated.

 

ONION:

finely sliced red or white onion, 1/2, cut towards the stem in 1/3rds then sliced

 

EGGS

For two: four eggs whisked with a splash of water, Maggi sauce, dried tarragon, finely diced fresh parsley, a dash or two of curry powders of your choice, a good dash of ground turmeric, a bit of garlic powder if you like, salt, and freshly ground black pepper.

 

CABBAGE AND TOMATO:

dice a couple of fine slices of red cabbage into ±1cm pieces;

 

finely dice a small ripe tomato;

 

make a braising liquid of sour (I used leftover liquid from pickles, capers, and chillies, but lemon juice would do just fine), sweet (I used sweet sherry), umame (I used Maggi sauce, but soy would do) and water, to make about a cup;

 

Sprinkle a few (1/2tsp each?) of mustard, fennel, cumin, and caraway seeds in a small skillet, and toast until 'popping'.

 

Add a couple of tablespoons of oil — any, depending on your taste, will do, but I used rice bran, add some finely chopped chilli to your taste, and let the flavours blend.

 

Add the cabbage, and stir fry for a couple of minutes.

 

Add the diced tomato, and let it start to soften.

 

Add the braising liquid, stir to mix thoroughly, and simmer at a slow boil until all the liquid is reduced and you have a thick mixture.

 

TO ASSEMBLE

Melt a small slab of unsalted butter (1/8"?) in a tablespoon of oil — I used macadamia — keep the heat at medium high, and sprinkle the potato around the skillet. Let brown on one side, add the onion, and turn everything. Let the onion become translucent as you brown the other side of the potatoes.

 

Add the egg mixture, lifting the edges as you would an omelette and let the mixture run under the cooked part.

 

When everything is starting to congeal, sprinkle the left side of the egg mixture (if you're right-handed) with some grated cheese, and add the cabbage mixture to that half. Reduce the heat to medium low (to avoid burning the egg mixture but melting the cheese and warming the cabbage mixture) and cover for a few minutes.

 

Flip the right half over the left, and let warm.

 

When you're ready to serve, heat up 2 plates in the microwave (±1 minute at full whack), cut the 'fritata' in two with your spatula, and serve.

this stage was ok but i failed with drizzling the chocolate.

despite being unsuccessful i would make another attempt as it tasted ok and was fun to do. that's always a plus!

hob top ok oven not working replacing after lockdown

i've visited curry's electricals. of the three possible freestanding electric cookers non were in stock and no delivery date could be given. with the way things are the cooker remains on hold for the forseeable future. let's just say it's the least of any of the current problems. it's almost rude on my part to even think of it as a problem more something to look forward to ...

 

ps i'm not recommending any of these cookery adventures. they suit my personal taste. photographing to encourage myself to eat more healthily ...

Turmeric mixed with alcohol and then filtered. Paper totally immersed in turmeric solution to coat entire paper evenly. Exposed in the sun for about 5 hours. Processed with TIDE laundry powder dissolved in water and then filtered. Slightly higher concentration of TIDE gives a more red (instead of orange) color.

Testing 100W 365nm UV lamp for anthotypes. Lately, all we've had are overcast days in "sunny" Sydney :-/

NB Still a mystery why Turmeric anthotypes sometimes retain their yellow colour while other times they turn pink.

Application: paint brush

Exposure time: 100W 365nm UV lamp. 0-160min with lamp sitting ~5cm above anthotype

1/2 sheet = naked exposure and other half under glass (in case the glass blocked UV light at that wavelength).

 

I was making Thai Green curry paste today and it struck me that fresh turmeric would be a good subject for "All things orange" on Shoot Anything Saturday.

So here it is, next to the finished paste

Turmeric ceremony

 

Main article: Gaye Holud

The turmeric ceremonies or gaye holud (Bengali: গায়ে হলুদ gaee holud, lit. "yellowing the body") take place before the wedding ceremony. There is one turmeric ceremony for the bride and one for the groom. For the bride's gaye holud, the groom's family - except the groom himself - go in procession to the bride's home. They carry with them the bride's wedding outfit, wedding decoration including turmeric paste and henna, sweetmeats and gifts. They also take two large fish decorated as a groom and bride. There are local variations on this tradition, such as the number of fish, the party responsible for cooking the fish and time the fish is taken to the groom's family.

The procession traditionally centers on the (younger) female relative and friends of bride, and they are traditionally all in matching clothes, mostly orange in colour. The bride is seated on a dais, and the henna is used to decorate the bride's hands and feet with elaborate abstract designs. The turmeric paste is applied by the bride's friends to her body. This is said to soften the skin, but also colours her with the distinctive yellow hue that gives its name to this ceremony. The sweets are then fed to the bride by all involved, piece by piece. There is, of course, a feast for the guests. The groom's gaye holud comes next, and has the same form as the bridal ceremony.

Chilli, turmeric and more in generous piles in Goa.

Turmeric or ʻōlena

Zingiberaceae (Ginger family)

 

Photo: Developing stages of ʻōlena. Plants are easy to grow in warm areas. All that is needed is a small piece (upper left) from which a new plant emerges to form a large rhizome (lower plant) in 10-12 months.

Polynesians use the rhizomes mostly as traditional medicine or yellow dye.

 

ʻŌlena is one of 24 or 25 canoe plants that were brought by the early Polynesians to the Hawaiian Islands. Another canoe plant, ʻawapuhi or Shampoo ginger (Zingiber zerumbet), is related to ʻōlena.

ʻŌlena can be harvested at any time of the year. However, I generally like to harvest it when the leaves turn completely brown. I find it has a better and stronger taste at that time. When leaves are green the rhizomes seem more watery and less flavorful.

 

The health benefits are reducing inflammation and joint & muscle pain, and increasing cardiovascular, skin, brain cell function and mood balance.

I made an Indian dish popular in Goa. Spicy coconut and lime fish curry, served it with turmeric infused basmati rice and topped it with cilantro.

Turmeric/Curcumin: This is the king of spices when it comes to dealing with cancer diseases, besides it adding a zesty color to our food on the platter. Turmeric contains the powerful polyphenol Curcumin that has been clinically proven to retard the growth of cancer cells causing prostrate cancer, melanoma, breast cancer, brain tumors, pancreatic cancer and leukemia amongst a host of others. Curcumin promotes 'Apoptosis', a programmed cell death/cell suicide that safely eliminates cancer breeding cells without posing a threat to the development of other healthy cells.

According to Dr. Bharat Aggarwal, often called the "Curcumin Guru", take 2 tablespoons a day throughout the day with your meals. This will give you the optimum cancer fighting dose of approximately 400-500 grams of curcumin.

Garlic fried rice is something I so love making. But yesterday morning, I thought of putting a little brightness and a hint of exotic flavor to it. Adding a little amount, about two big nips, of turmeric powder gave a new dimension to my favorite dish. This is what came out. (Simple recipe below)

No anelar temos o Golden Turmeric da H&M com um "Water Decal" e nas restantes unhas o lindo Pearly Golden Coffee - 514 da Kiko, um castanho escuro com glass flecks dourados.

Usei também o indie Pumpkin Juice da Dany Vianna , que foi um presente da querida Daniela Mayumi M. para tornar toda a conjugação de tons mais coesa.

Quick fix in Fomafix 1+5.

 

PS borders.

 

Is this how it will look - in the end? Hopefully not, but who knows in these days... The comfort (?) is that it'll probably be a sub-second process.
