This recipe is from Cook’s Illustrated July/August 2006 – specifically for Pizza Margherita. I’ve had it clipped for years without trying it, and it turns out to be a very nice thin crust pizza well formulated for a home oven. I made one traditional Margherita, and then a couple of different combinations, one with caramelized onion and salami, and one with salami and black olive.
The recipe is as written from Cook’s Illustrated, and makes enough for 2 12 inch pizzas. I used weight measurements when available. I was able to carefully lift and shape the dough rounds in the air.
Dough:
1 ¼ t. instant yeast
1 c. (8 oz) water, room temperature
1 ¾ c. (8 ¾ oz) AP flour
1 c. (4 oz) cake flour
1 ½ t. salt (they called for table salt, I used Kosher)
2 t. sugar
Topping:
1 28-oz can diced tomatoes (I used a quart of homecanned tomatoes)
½ t. sugar
1 small garlic clove, minced or pressed (optional)
¼ c. chopped fresh basil leaves
8 oz. fresh mozzarella, pressed between kitchen cloth to drain and cut into 1 inch chunks
2 t. extra virgin olive oil.
Adjust oven rack to lowest position, and set pizza stone on oven rack. Preheat to 500.
In liquid measuring cup, whisk yeast into water to dissolve. In a food processor fitted with metal blade, process flours, salt, and sugar until combined, about 5 seconds. With machine running, slowly add liquid through feed tube; continue to process until the dough forms satiny, sticky ball that clears sides of workbowl, 1 ½-2 minutes. (If after a minute the dough is sticky and clings to blade, add 1 to 2 tablespoons AP flour and continue. If too dry and crumbly, add 1 to 2 more tablespoons of water and process until dough forms ball.)
Divide dough in half and shape into smooth, tight balls. Place on a floured counter or baking sheet at least 3 inches apart, and cover with plastic wrap and then a kitchen towel. Leave to double in size, about 1 hour.
For the topping: drain the tomatoes in a fine-mesh sieve for about 30 minutes stirring occasionally to release liquids. Just before shaping pizza rounds, combine tomatoes, sugar, garlic, 1 T. of the chopped fresh basil and ¼ t. salt.
To shape and cook pizzas: When dough balls have doubled in size, dust dough with flour and transfer to a well-floured surface. Press one ball into 8-inch disc. Using flattened palms, gently stretch disk into 12-inch circle, working along outer edge and giving the disc quarter turns. Lightly flour pizza peel; transfer dough to peel. Spread with a thin layer of tomato sauce, leaving ½ inch border. Slide onto stone and bake about 5 minutes until just starting to brown. Remove pizza from oven with peel, close oven door, and top with half of mozzarella. Return the pizza to oven and continue to bake until cheese melts, about 5 minutes. Transfer to cutting board; sprinkle with basil, olive oil, and pinch of salt.
