With barbecue season around the corner, keeping a solid coleslaw recipe in your back pocket is crucial. Cool, creamy, and crunchy, it’s the perfect foil for smoky grilled meats, rich sides, and swelteringly hot days. We know it, we love it.
But what you might not know, is that country music icon Dolly Parton has a recipe for the stuff that’s got the internet buzzing. Pulled from her 1989 cookbook Dollywood Presents: Tennessee Mountain Home Cooking, this recipe looks a lot like a classic coleslaw, but she throws in some curveballs (sweet pickle juice and chopped dill pickles!) for a salad that has chefs swearing it’s the best they’ve tasted. Something told me that Dolly probably does know her way around a mayo-based dressing, so I had to try the recipe out for myself.

How to Make Dolly Parton’s Coleslaw
Dolly’s slaw starts the way most do, with a head of green cabbage. I grabbed a medium head that weighed around 2 pounds, which I later found to be a good size for the amount of dressing and seasonings. Mince or shred the cabbage into small pieces (more on that later) and transfer to a bowl large enough to accommodate a potluck-sized amount of slaw. To the same bowl, add one finely minced onion, one grated carrot, half a diced bell pepper, and a tablespoon of minced dill pickle (or relish, if you prefer).
The ingredients for the dressing can be added directly to the bowl with the veggies, but I chose to whisk it together in a separate bowl so they could start dissolving and melding into each other before the big toss. It contains: 1 cup mayonnaise, 1/4 cup sweet pickle juice, 1/4 cup white vinegar, 2 tablespoons sugar, 1 teaspoon salt (I used Diamond Crystal Kosher Salt), and 1/4 teaspoon of black pepper.
Pour the dressing over the veggies and toss well with a pair of tongs until the dressing completely coats the slaw. Cover and chill 15 minutes before serving.

My Honest Review of Dolly Parton’s Coleslaw
I gotta hand it to Dolly, this recipe results in what I would consider the platonic ideal of a classic, mayo-based coleslaw. The dressing is expertly balanced; it’s both sweet and savory, creamy and acidic, rich and bright — quite literally the perfect adornment for shredded raw cabbage. There are hints of pickle-y flavors like celery seed that add a certain je nes sais quoi to the final dish, and the briny pops of chopped dill pickle are a welcome addition. Next time, I’d add even more of them.
This slaw would of course be right at home on a potluck table beside pulled pork and potato salad, but it would also be the perfect topper for a fried chicken sandwich, or beside some beer-battered fish and french fries. It’s flavorful enough to hold its own, but not so overpowering that it would overshadow the dishes it accompanies.

It’s also ripe for customization: next time, I might add some caraway or celery seeds, a handful of chopped herbs, or maybe some minced jalapeño. It’s a great recipe to use as a jumping-off point. But the dressing? I wouldn’t change a thing.

3 Tips for Making Dolly Parton’s Coleslaw
Use a mandoline if you’ve got it. You can’t beat the texture of cabbage that’s been shredded on a mandoline. Light, fluffy, and primed to be coated in dressing, I much prefer this method to hand-chopped or food processor-minced cabbage. It’s also a major time saver, as breaking down a head of cabbage requires some elbow grease.
Salt the cabbage to avoid watery slaw. Though the recipe calls for resting your slaw for 15 minutes before serving, I found that in that time, the cabbage and other vegetables had already lost a good amount of moisture, making the dressing a little more watery than I’d like. Salting your cabbage (for at least 15 minutes) to remove moisture is a great way to combat this. And if you don’t feel like prepping your cabbage beforehand, I’d recommend serving this salad as soon as you’ve tossed it together, for optimum crunch and the creamiest dressing.
Add that other half of the bell pepper (and anything else you like). Using partial portions of whole fresh ingredients is always a little annoying. Like, what am I supposed to do with this extra half of bell pepper? In this case, I’d recommend using the whole thing. This slaw has enough dressing to accommodate at least another cup of fresh ingredients, so feel free to shred another carrot, finely dice a couple sticks of celery, or mandoline that lonely head of the fennel at the bottom of your crisper drawer and add it to the party. The more the merrier! “

i'll attempt this dessert again tomorrow and hopefully improve the presentation

i failed but all was not lost as the end product was a delicious chocolate sauce now decanted into small pots and placed in the freezer to eat as and when. a portion was drizzled on this dessert.
i'll reattempt the fudge another day

I absolutely love the time of year when the fields turn bright yellow with the Canola flowers. The day before yesterday was the first day I had been out when I saw any fields with the crop fully in bloom. I have to admit that I don't like the smell of Canola, but the colour is so spectacular and pretty. In this shot, the sky is beginning to darken, ready to rain a little later.
These two old, wooden barns were part of a CPR Demonstration Farm. I have added a previously posted photo in a comment box below, showing the whole farm.
"The home, the barn, everything seen in this yard once served a rather unique and special purpose. Operating as a fully functioning “demonstration farm”, near Vulcan Alberta, and tied to the Canadian Pacific Railway, it was a show piece of sorts a century ago, promoting the region’s agricultural potential. Prospective settlers would be told where to acquire land and of course similar farm buildings, what crops to grow and how to do it efficiently, what equipment to purchase, what techniques to use and so on.
The CPR had a vested interest, of course, in the success of this endeavour. They’d profit both on the sale of these kit farms and then again, many-fold, on the resultant business brought to the railway through the moving of inbound materials needed by all those new settlers; and outbound agricultural products the area would produce. And the transporting of people in and out, all the stuff needed for new towns that would spring up, and any industry established there, they too all moved by railway. It was win-win for the CPR!" The day before yesterday, 1 July 2017, was a great day, spent with friend, Pam. I picked her up just after 8:00 am and did a long drive in Southern Alberta. We saw our target bird - a Common Nighthawk, and all sorts of other things including plants and old barns. It took a round trip of 414 km to get the Nighthawks, but it was so worth it! Much further than I normally drive. Towards the end of our day, the rain arrived, accompanied by lightning streaks. This couldn't have been timed more perfectly, to wash off a lot of the dust that covered my car after 12 hours of driving hot, dusty roads! So welcome! We have another hot day today and the forecast is for very hot days for at least the next week. So far, the forecast is 33C for Friday, 35C for Saturday and 31C for Sunday.
It was such a thrill to see a Common Nighthawk / Chordeiles minor (a rather strange looking bird), as I had always wanted to see one actually lying on a fence post or wooden railing. People get such amazing photos of them like that, and that is what I was determined to find this summer. Last year, I had driven to this area in Southern Alberta, hoping to find one, but had been out of luck. Though I ended up with the one in the photo I posted yesterday, lying on a hard, metal railing that lacked character, I'm still happy as can be. Not only did friend Pam and I see this one, but there were three other Nighthawks there, too. Two of the others were also on a metal rail, but the fourth was on a fence post - not the best angle, but it was still nice to see a fence post perch. How close we came to missing them. I said I wanted to just check the first part of a small side road first, before continuing on the road we were on - and there they were! I had seen a nighthawk on maybe five different occasions over the years, but most were in flight and one was perched very high up in a tree. For Pam, this was the first time she had ever seen one, and she was so happy to see this lifer.

In the dim half-light, these long-winged birds fly in graceful loops, flashing white patches out past the bend of each wing as they chase insects. I was so tired after driving such a long distance and it was a hot day - the temperature got up to 30C. I so rarely do such a long drive, and I've barely driven all winter and spring. It felt so good to actually get out on a long drive like this, and we saw all sorts of interesting things that we just had to stop and photograph - of course!
Every single time I go out with my camera for a drive, I never forget to be SO thankful to live in a country where I have the freedom and safety to go where I want, and to see such beauty. Thank you, Alberta and Albertans - and Happy 150th Birthday, Canada! Such a young country.

i've been dieting for a few weeks as the trousers i made recently were too tight flic.kr/p/2rk3MFz and i wasn't going up a size!
i'm 5 ft 5ins (1.65 m) and my weight had crept up from a steady 11 stone or less (70kg) to 13 stone (82.5kg) not good. the tight unwearable trousers were the last straw, action was needed
i've contiued with the curries and lamb bhuna but have temporarily cut out rice and potatoes and replaced with mixed beans of all types. the beans are soaked overnight and the following morning cooked in the pressure cooker, prevents gassiness :) quantity of mixed beans enough for a few boxes in the freezer to keep me going, a continuing cycle.
when i return to the potatoes and rice it will be smaller quantities
i've reduced the amount of oil/butter used in my cooking and there's always plenty of salad on the plate
i've now finished all the jams and sauces. they are being replaced with chia jams and sauces, no sugar
the good news is my weight has reduced and the trousers now fit. i've lost a stone and a quarter (8.8kg) thankfully. i'm back on track :)
no cakes, sticky toffee pudding, buttered crumpets, bread etc have been eaten whilst dieting and they are now 'specials'. meat and sushi remain on the menu but reduced quantities. whole milk replaced with skimmed

it was the end of the day at walthamstow market yesterday and the raspberries were 2 large punnets for £1. i love raspberries and bought a few punnets but made sure i cooked them in the evening on the same day. hence a batch with sugar in the slow cooker as time was getting on. more pots, boxes and jars of raspberry sauces now in the freezer/fridge

i cooked the pizza in a cast iron frying pan on the stove following the above recipe. finished it off under the grill of the mini countertop oven when i felt the pizza dough didn't need any more cooking, but wanted to brown off the top of the pizza

i failed but all was not lost as the end product was a delicious chocolate sauce now decanted into small pots and placed in the freezer to eat as and when. i'll reattempt the fudge another day

plenty of room for improvement but at least the chicken is moist. i used far too much oil so the vegetables didn't crisp. i cut the potatoes and parsnips so small that they soaked up the oil. never mind it's all edible and roast is at last now on the menu!
